CHILI MAC AND CHEESE

2 cups (8 ounces) macaroni
2 tablespoons vegetable oil
1 small red onion, chopped
3 cloves garlic, minced
1/2 red bell pepper, chopped
8 ounces lean ground beef
2 teaspoons chili powder
1 1/2 teaspoons cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
One 15-ounce can kidney beans, undrained
One 14.5-ounce can diced tomatoes, undrained
2 tablespoons tomato paste
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
4 ounces cream cheese
2 cups shredded sharp Cheddar, plus extra for garnish
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
3 green onions, chopped
Corn chips, such as Tostitos Scoops, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil. Add some salt and then the macaroni. Cook to al dente according to the package directions. Drain and hold until the cheese sauce is ready.
  • Heat the oil in a medium pot over medium heat. Add the red onions and cook, covered, until soft, a couple of minutes. Add the garlic and bell peppers and cook an additional 2 to 5 minutes, being careful not to burn the garlic. Add the ground beef and sprinkle with salt and pepper; cook until browned, stirring to break up the beef into small pieces. Add the chili powder, cumin, paprika and oregano, and cook until the spices are fragrant. Add the beans and their liquid, the tomatoes and their juices, and the tomato paste; simmer for 5 to 10 minutes.
  • In a separate saucepot, melt the butter over low heat. Add the flour and cook, whisking, for 1 minute. Whisk in the milk, raise the heat to high, and bring the mixture to a boil; cook, whisking, until thickened. Removing from the heat and whisk in the cream cheese, Cheddar, mustard, Worcestershire and some salt and pepper. Pour the pasta into the cheese sauce and stir to combine.
  • Mix the chili into the macaroni and cheese. Transfer to a serving bowl and top with additional Cheddar and the green onions. Serve with corn chips.

1 tablespoon olive oil (or spray)
8 bun length hot dogs
2 cups Chili (Click for our fave recipe!)
2 1/2 cups shredded Mexican Blend Cheese (divided)
1/2 cup yellow onion (chopped (optional))
1/2 cup freshly chopped cilantro (optional)
ketchup and mustard to taste

Steps:

  • Preheat oven to 375
  • Place olive oil in a large non-stick skillet or griddle over medium-high heat.
  • Place hot dog buns, inside side down, on skillet just long enough to toast the buns.
  • Place hot dog buns on a baking sheet with high sides or casserole dish. Sprinkle onions, cilantro, and desired amount of ketchup and mustard into each bun. Sprinkle with 1/2 cup cheese.
  • Place a hot dog into each bun.
  • Top the hot dogs and buns generously with chili and then top with the remaining 2 cups cheese.
  • Cover with foil and bake for 30 minutes.
  • To make them even toastier, you can remove foil and broil for another 3-4 minutes, being careful not to burn the buns.
  • Allow to cool at least 5 minutes before serving.

1/4 cup water (60 milliliters)
1 small yellow or white flesh potato, peeled and cut into chunks
1 small sweet potato, peeled and cut into chunks

1/3 cup raw cashews
3 tablespoons extra-virgin olive oil
4 sliced pickled jalapeños
1 tablespoon apple cider vinegar or jalapeño pickling liquid

Steps:

  • For the beans: Heat the oil in a large skillet over medium heat. Add in the onion, season with salt and pepper and cook until lightly golden and soft, about 5 minutes. Stir in the garlic and cook for 30 seconds. Add in the beans, tomato paste, chili powder, smoked paprika, cumin and cayenne and cook for 4 to 5 minutes, or until the beans start to pop. Stir in the water, season with more salt and pepper and turn the heat down to low to keep warm.
  • Meanwhile, for the cheese sauce: Place the potatoes and sweet potatoes into a large pot of cold water. Season well with salt and bring to a boil over high heat. When the water reaches a boil, add in the cashews and cook until the potatoes and cashews are tender, about 10 minutes. Reserve about 1/2 cup of the cooking liquid then drain the potatoes and cashews and transfer to a high-powered blender. Add the oil, pickled jalapeños, vinegar or pickling liquid, 2 tablespoons nutritional yeast and 2 teaspoons of tomato paste. Season with the garlic powder, onion powder, chili powder, cayenne pepper and salt. Add 1/4 cup of reserved cooking liquid and blend until smooth, adding more water, nutritional yeast, tomato paste and/or salt, if needed. Transfer the cheese sauce to a small pan to keep warm over low heat while you cook the hot dogs.
  • For the hot dogs: Cook the hot dogs in a pan over medium-high or on the grill over medium until lightly charred.
  • Serve in the buns topped with beans, a good drizzle of the cheese sauce and a sprinkling of green onions, cilantro and pickled jalapeños, if using.

8 hot dogs
8 crescent rolls ((one 8-count can))
8 slices American cheese
30 ounces chili ((two 15-ounce cans))
2 tablespoons salted butter
½ teaspoon garlic salt, (or garlic powder)
fresh parsley, (for garnish)

Steps:

  • Preheat the oven to 375°F.
  • Remove the crescent rolls from the packaging, roll out, and separate into individual triangles.
  • Place one slice of American cheese followed by one hot dog onto the widest end of the crescent roll.
  • Roll the cheese and hot dog into the crescent roll and set aside.
  • Arrange the wrapped crescent dogs in a 9x13 glass baking dish. You may only be able to fit 7 dogs if you wish to keep them in one line as we did. Leave ½-inch or so between each dog to allow room for the dough to puff.
  • Spread the chili in the available space around the crescent dogs. You may not use both full cans of chili and can heat any leftovers and serve alongside the baked chili cheese dogs.
  • Melt the butter in a small dish and stir in garlic salt/powder. Use a pastry brush to brush the butter mixture over the tops of the exposed crescent rolls.
  • Bake for approximately 30 minutes or until crescents appear browned on both the top and the bottom.
  • Sprinkle the baked chili cheese dogs with a bit of chopped parsley and serve immediately.

2 cans chili (with or without beans)
2 cups shredded cheddar cheese, divided
1 tsp hot sauce (to taste)

Steps:

  • In a medium saucepan, mix the cream cheese and chili, stirring often. Heat slowly to a simmer.
  • Once the mixture is simmering, stir in the hot sauce and 1 cup of cheese. Stir until cheese is melted.
  • Pour into an 8x8 baking dish.
  • Sprinkle with the remaining cup of cheese.
  • Place under the broiler until cheese is melted and a little toasty. (If you do not have a broiler, another option is to sprinkle the top with cheese and cover it with foil, letting it sit for 5 minutes or until cheese melts.
  • Serve hot with corn chips or chunks of bread.
