PORK ROAST STUFFED WITH HAM AND CHEESE



Pork Roast Stuffed with Ham and Cheese image

Kosher salt and freshly ground black pepper
1 (2 pound) boneless pork loin roast
4 slices deli ham
4 slices Swiss or gruyere cheese
3 tablespoons vegetable oil
2 carrots, chopped
1 onion, chopped
2 teaspoons all-purpose flour
1 cup white wine
1/4 cup chicken stock
2 teaspoons dried thyme
8 ounces small white mushrooms, halved
1/4 cup sour cream
1 tablespoon finely chopped fresh parsley

Steps:

  • Liberally salt and pepper the pork loin on all sides. On a sturdy work surface, slice the pork roast 4 times evenly, about 3/4 of the way down the roast. Wrap each ham slice around each cheese slice and place 1 into each of the 4 cuts. Tie the roast with kitchen string, or secure the roast closed with toothpicks. In a Dutch oven, heat 1 tablespoon oil over medium-high heat. Sear the pork loin quickly so that the roast gets color, but the cheese doesn't melt. Remove the roast and set aside.
  • Add the carrots and onions to the pan and cook until the onions are translucent and the vegetables are softened. Add the flour and stir to mix. Deglaze with the wine, and add the roast back into the pan along with the chicken stock and thyme. Season with salt and pepper. Cover and simmer on low for 1 hour 30 minutes.
  • Remove the roast from the pan once it's cooked and reduce the sauce for 5 minutes. Meanwhile, heat a large saute pan over high heat, add the remaining 1 tablespoon oil and then the mushrooms. Toss to coat in the oil and season with salt and pepper, to taste. Cook the mushrooms until they are golden, then add to the sauce. Whisk in the sour cream to the sauce. Slice the pork roast and serve with sauce poured on top. Garnish with parsley.

1 package (3 oz) cream cheese, softened
4 medium green onions, chopped (1/4 cup)

1 1/2 teaspoons chopped fresh tarragon leaves
1/4 teaspoon ground red pepper (cayenne)
1 boneless pork loin roast (3 to 4 lb), trimmed of fat
1/4 teaspoon salt

Steps:

  • Heat oven to 325°F. Spray rack in roasting pan with cooking spray.
  • In small bowl, stir together spinach, cream cheese, onions, basil, garlic, tarragon and red pepper.
  • Cut pork lengthwise, cutting to but not through other side. Open cut piece; pound to 1/2-inch thickness. Sprinkle pork with salt and pepper. Spoon spinach mixture evenly over pork. Beginning with long side, roll up; tie securely with heavy kitchen string at 2-inch intervals. Place pork on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of pork and does not rest in stuffing.
  • Bake uncovered 1 hour. Increase oven temperature to 375°F. Bake 10 to 25 minutes longer or until browned and thermometer reads 145°F. Cover loosely with foil; let stand at least 3 minutes. Remove string before slicing.

This Italian Stuffed Pork Tenderloin is quite possibly the best pork tenderloin I have ever had. The filling gives the pork so much flavor!

1 pork tenderloin ((about 3 pounds, see notes above))
2 (8 ounce packages) cream cheese
1 cup roasted red peppers
1 cup bacon (cooked, crumbled)
2 (.5 ounce packages) pesto seasoning ((Knorr or McCormick brand can be found by the gravy/dressing mixes))
1 cup Spinach leaves (fresh (to taste))
3 tablespoons olive oil
salt & pepper (to taste)
paprika (to taste)

Steps:

  • If you are using the large tenderloin from Costco, cut it almost in half, then cut the halves almost in half again so that you kind of unfold it a few times and try to pound it out flat to about 1/2" thickness or slightly thinner. (If you are using a smaller pork tenderloin, cut almost in half and pound it flat).
  • Once the tenderloin is flat and has a good surface area, spread the cream cheese all over the top. Lay the roasted red peppers over the cream cheese then sprinkle on the crumbled bacon. Evenly sprinkle on the packages dried pesto seasoning and lay the spinach leaves all over the top.
  • Roll the pork up (like you would if you were making cinnamon rolls) and tie it shut with 3 or 4 pieces of kitchen twine if needed. Next, rub olive oil, paprika, salt and pepper all over the pork and place in a greased baking sheet. Bake at 350-degrees about 60-90 minutes or until pork is cooked through. Once cooked, slice and serve!
  • **This makes quite a lot. After rolling, but before baking, cut it into thirds or fourths. Wrap in plastic wrap and freeze!

1/4 teaspoon lemon-pepper seasoning
2 tablespoons butter, melted

  • In a bowl, combine the flour, lemon-pepper, butter and cream until smooth. Stir in the cheese; set aside. Cut a lengthwise slit down the center of the roast to within 1/2-in. of the bottom. 1/2 cup dry bread crumbs
1/2 cup ricotta cheese
1/2 cup shredded carrot
6 garlic cloves, minced

1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons canola oil

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a large bowl. Add the bread crumbs, ricotta cheese, carrot, garlic and parsley; set aside., Starting about a third in from one side, make a lengthwise slit in the roast to within 1/2 in. of bottom. Turn roast over and make another lengthwise slit, starting from about a third in from the opposite side. Open roast so it lies flat; cover with plastic wrap. Flatten to 3/4-in. thickness. 1 boned center-cut pork loin (about 3 lb.), fat trimmed
6 mustard-green leaves (9 to10 in. long)
2 packages (5.2 oz. each) herb- and garlic-flavor Boursin cheese
1/2 cup grated parmesan cheese
Fresh-ground pepper
1 cup fat-skimmed chicken broth

Steps:

  • Lay loin fat side down. Make a cut lengthwise down the center of the meat and about 2/3 of the way through it. Push meat flat and, starting from the deepest part of the center cut, make a 1-inch horizontal cut toward each side running the length of the meat. Push meat flat again.
  • Trim stem ends from mustard greens, rinse leaves, and dip in boiling water to wilt; drain briefly.
  • Line meat lengthwise with greens, overlapping as needed, extending about 4 inches beyond ends of meat. Spoon Boursin onto leaves down center of roast, then sprinkle evenly with parmesan. Fold extended leaves over cheese flush with ends of meat. Then lap leaves across cheese lengthwise. Gently roll loin back into a log (don't squish out cheese) and tie with cotton string at 2-inch intervals.
  • Set loin cut side down, in a 10- by 15-inch pan and sprinkle generously with pepper
  • Bake in a 375º oven until meat is 150º to 155º in center of thickest part (not in cheese), 50 to 55 minutes. Remove from oven and let stand at least 20 minutes.
  • Transfer roast to a platter and keep warm. Skim and discard fat from pan drippings. Add broth and whisk until smooth. Boil over high heat until reduced to about 1 1/4 cups, about 10 minutes. For a smooth sauce, whirl in a blender.
  • Cut loin into 3/4- to 1-inch slices, remove string, and serve with sauce.

3/4 pound Italian sausage, chopped
1 cup chopped Baldwin apples
2 tablespoons minced shallots
3/4 cup chopped walnuts, toasted
1 tablespoon chopped parsley leaves, plus extra for garnish
Salt and freshly ground black pepper
1 (3-pound) boneless pork loin roast
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 400 degrees F.
  • Brown sausage in a saute pan. Add apples and shallots and cook 3 minutes. Transfer to a mixing bowl, add walnuts and parsley, and season, to taste, with salt and pepper. Let cool before stuffing.
  • Split the pork roast horizontally, forming a pocket; do not cut all the way through. Season roast inside and out with salt and pepper. Pack stuffing in the center and tie roast with enough butcher's twine to hold it together.
  • Heat oil in a large saute pan. Add roast and sear on all sides until well-browned. Transfer to a rack set in a roasting pan and roast until a thermometer inserted in the center registers 145 to 150 degrees F, about 1 hour to 1 hour and 15 minutes.
  • Remove roast to a carving board, cover loosely with foil, and let rest 10 minutes before slicing. Slice roast into 12 pieces. Serve 2 slices per serving, garnished with parsley.

1 tablespoon avocado oil
6 cloves garlic, minced
1 pound fresh spinach

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a shallow roasting pan with oil.

I found this recipe posted by Cathie Lesnick on another site. Excellent for a dinner party. I have easily doubled the recipe for a 6 lb roast. Decadent and delicious! Use the cooking time as a guideline, and keep an eye on the internal temperature of the roast. 160F should be perfect.

4 ounces cream cheese, softened
1/2 cup shredded sharp cheddar cheese
3 green onions, chopped
4 slices sun-dried tomatoes, chopped
1/2 bell pepper, any colour, chopped
1 teaspoon minced fresh garlic
1 teaspoon dried sweet basil leaves
2 teaspoons parsley
1 pinch cayenne pepper
chipotle hot sauce
3 lbs pork roast
1/3 cup chicken broth
1/3 cup dry white wine
3 tablespoons dried chives
2 teaspoons sweet basil
salt and pepper

Steps:

  • Combine stuffing ingredients in food processor and pulse just until blended. Refrigerate for 1 hour.
  • Slice open the roast so it lays out flat. Pound the roast with a mallet to make some room for the stuffing.
  • Generously spread the stuffing mixture on the inside of the pork roast. Roll up the roast and tie securely.
  • Preheat oven to 350°F In a casserole dish, add the chicken broth and white wine. Place the roast in the casserole dish. Season the top of the roast with dried chives, sweet basil, salt and pepper.
  • Roast for approx 1 1/2 hours, basting occasionally with the broth/wine mixture, until pork is no longer pink. Add more broth/wine if necessary.
  • To serve, slice pork roast and serve with any remaining pan juices including any stuffing which may have cooked out of the roast.
