Easy Vegan Cheese Sauce image

Easy vegan cheese sauce, ready in 3 minutes! A super simple and nut-free plant-based recipe which requires only a handful of ingredients. This vegan queso is perfect for pizza, nachos, Mac and Cheese, burgers, pasta bake, toast, and more savory recipes. The sauce doesn't contain cashews!

3/4 cup coconut milk (canned (*see notes ))
3 tbsp nutritional yeast flakes
2 tbsp tapioca flour (OR arrowroot flour/starch (*see notes))
1/2 tsp sea salt ((or to taste))
1/2 tsp onion powder ((optional))
1/4 tsp garlic powder ((optional))
Pinch of smoked paprika ((optional))

Steps:

  • Put all ingredients into a saucepan and stir with a whisk. Once everything is combined, turn on the heat and bring the mixture to a boil while stirring constantly.
  • Let simmer on low to medium heat for about one minute until the sauce is stretchy.
  • Enjoy this vegan cheese sauce with nachos, on pizza, over pasta, and many other savory dishes! Please read the recipe notes below.

My boyfriend and I eat dairy-free; he has no choice in the matter because of a severe casein allergy. This creamy cheese sauce is not only dairy-free, but extremely yummy and a great base recipe. You can do just about anything with it! Add a dash of cumin for that smoky Cheddar taste for mac and cheese, add more garlic, butter, and parsley for Alfredo, or add a can of tomatoes and green chiles to make that staple queso dip! It bakes well, too. Try chicken spaghetti with this creamy cheese sauce!

¼ cup all-purpose flour
¼ teaspoon garlic powder
¼ teaspoon onion powder
⅛ teaspoon ground yellow mustard
salt to taste
1 cup soy milk
1 ½ tablespoons vegan margarine (such as Earth Balance®)

Steps:

  • Mix nutritional yeast, flour, garlic powder, onion powder, ground mustard, and salt together in a bowl. Pour in soy milk; whisk until smooth.
  • Melt margarine in a saucepan over medium heat. Pour in soy milk mixture; cook, whisking constantly, until thickened into a sauce, about 5 minutes. Simmer until flavors combine, 1 to 2 minutes more.

This recipe was shared with us back in 2006 by a reader. They recommended this sauce for making macaroni & cheese or cheesy potatoes. We have made some minor modifications the recipe and instructions to help adapt the recipe as needed and to ensure more seamless results.

¼ cup raw cashews (see the Nut Options below)
2 cups water, divided
¼ cup diced tomatoes (can use canned)
¼ cup nutritional yeast flakes, or to taste
2 tablespoons non-GMO cornstarch or arrowroot starch
½ tablespoon lemon juice, or to taste
1 to 1½ teaspoons sea salt, to taste
¼ teaspoon garlic powder
½ teaspoon onion powder

Steps:

  • Grind the cashews in a spice grinder or small food processor until powdered.
  • Pour the cashew powder into your blender. Add the 1 cup water, tomatoes, nutritional yeast, starch, lemon juice, 1 teaspoon salt, onion powder, and garlic powder. Puree until smooth. Add the remaining 1 cup water and briefly blend to combine.
  • Pour the mixture through a fine mesh sieve into a saucepan (to remove any large or small nut bits). Place the pan over medium heat, and cook, stirring constantly, until the sauce thickens, about 5 minutes. Taste test and add more salt, if needed.
  • Leftovers can be stored in an airtight container in the refrigerator for up to three days. The sauce will thicken as it chills, but you can whisk in more water to thin it.

  • If you use canned white beans, drain and wash them. Then, place the beans with the rest of the ingredients into a blender jar.
  • Blend everything until smooth.
  • Taste, adjust with more salt, pepper, lemon juice or nutritional yeast if needed, then pour over your vegetables, pasta or whatever else you want to make it with.
  • Keep the rest of the cheese sauce in an air-tight container in the fridge for up to 4 days.

This dairy free lasagna is based off of traditional Italian lasagna and is just as rich and flavorful. However, it is made without cheese, without milk, and without butter.

1/4 cup olive oil
1/2 cup flour
4 cups water or dairy free milk, heated
Nutmeg to taste
Salt to taste
1 box lasagna noodles or five sheets homemade noodles
Water for boiling
2 tablespoons olive oil
1 small onion, diced
1 carrot, finely chopped
1 celery stick, finely chopped
1 pound ground beef (450 grams)
10.5 ounces tomato puree (300 grams)
1/2 cup red wine
Chicken stock as needed
Salt to taste

Steps:

  • Drizzle oil in a sauce pan and heat. When ready, sauté chopped onions, carrots, and celery for about 5 minutes.
  • Add ground beef. Stir and cook until well browned.
  • Deglaze with red wine. Once the wine is completely evaportated add the tomato puree.
  • Stir and let cook for two hours with the pot parcially uncovered. Mix from time to time and add stock as needed.
  • Cook lasagna noodles as directed on the box until al dente. Stir regularly to make sure the noodles don't stuck together.
  • Heat oil in a sause pan. Wisk in flour a little at a time. Stir for about 2 minutes.
  • Wisk in milk and bring to a boil.
  • Lower heat. Add nutmeg and salt to taste and stir for 2 or 3 more minutes.
  • Pour a thin layer of bechamel sauce on the bottom of a baking pan. Spoon bolognese sause on top of it and cover that with lasagna noodles. Repeat until you have five layers.
  • Bake in a preheated at 340° F or 170° C for 40 minutes.

  • Place the saucepan back on the heat and stir for about 2 minutes over medium-low heat. Make sure to stir a lot to prevent the mixture from sticking to the bottom. If you want a thinner sauce, skip the last 2 minutes of stirring over the heat and if you wanted it thicker, stir for a little bit longer.
