Steps:
- Process first 3 ingredients in food processor until blended. Stir in chiles.
- Shape into 4-inch oval on sheet of waxed paper to resemble pinecone. Insert nuts in rows to completely cover cream cheese mixture. Transfer to serving plate.
- Refrigerate 2 hours. Let stand at room temperature 15 min. before serving to soften slightly.

- Stir cream cheese, goat cheese, parsley, tarragon, thyme, garlic, cayenne pepper, salt, and black pepper together in a bowl until smooth and well-mixed.
- Turn cheese mixture out onto a serving platter and form into a tapered oval shape to resemble a pine cone.
- Starting at the tapered end, press almonds into the cheese cone so that the tip of the almond is facing out and down, and cheese cone is completely covered with almonds and resembles a pine cone. Place rosemary sprigs at the top to resemble pine needles.

- Add two crackers and a few cubes of dill havarti cheese
- Layer in a skewer of olives and cornichons (skewers are my go-to for adding height variation)
- Place two thin slices of your favorite cheddar and a couple of folded salami slices (what I like to call salami flowers).
- Garnish with a sprig of rosemary (don't eat it raw, but do smell it as you go for another bite!)

- In a large bowl, beat the cream cheese, cheese sauce and blue cheese until smooth. Stir in the onions, pimientos and Worcestershire sauce. THE HEAVYSET CHEESE BALL
Steps:
- Preheat oven to 300 degrees F.
- Place and spread all the almonds on a cookie sheet or in a shallow pan, pushing the almonds around until they turn color, about 20 minutes.
- Mix together the cream cheese and the mayonnaise. Add the bacon, salt and pepper, dill, and onion. Chill overnight.
- On a serving platter, make 2 pine cone shapes with the cheese. Begin to press the almonds at a slight angle into the cheese, starting at the narrow end of the pine cone shape.
- Do this in rows, continuing to overlap rows until all the cheese is covered. Garnish with fake sprigs, or real ones, or with rosemary.
- Serve at room temperature and spread on crackers.

Steps:
- Mix cream cheese, shredded cheese, and Dijon mustard in a blender or food processor until well blended.
- Stir in green chilies.
- Place in freezer for 20 minutes so that it is easier to handle and shape.
- Remove from freezer and place on wax paper.
- Shape into what resembles a pinecone.
- Stick the almonds into the cheese ball in rows that completely cover the cheese ball.
- Cover and refrigerate for at least 2 hours.
- Let the cheese ball stand at room temperature for 15 minutes before serving.
- Serve with crackers.

- Mix cream cheese and mayo together until smooth and well mixed.
- Add bacon, green onions, dill and white pepper - mix well and chill.
- Form cream cheese mixture into the shape pine cone top. Set aside.
- On a cookie sheet, add almonds in a single layer. Bake them at 300 degrees, stirring often, for 15 minutes or until slightly brown. Cool almonds and decorate the cream cheese by placing rows of the almonds from top to bottom. Add a small piece of parsley at the top of the pine cone. Serve with crackers.
CHEESE PINE CONES
Originally this was printed on a Hellman's label and I've had it for years and years. It's a fancy way to spreading the holiday cheese! Easy and I've spread the leftovers (minus the nuts) on bread and grilled it in the toaster oven for a different breakfast treat. Very good.

- Combine the sugar and pine cones and pack into a quart jar, then allow to macerate (age) in a cool dark place for at least 2 months.
- During the first few weeks of maceration, open the jar occasionally to release carbon dioxide as the mixture will ferment vigorously. Shake it occasionally to help it on it's journey.
- After the maceration is complete, scrape the sugar slush and pine cones into a pot, bring to a boil, then strain and bottle.
- The syrup is stable at room temperature since the fermentation lowers the pH, but will keep the best flavor in the fridge. It can also be water bath processed.

- Rinse the pine cones to remove any debris. Bring a few cups of water to a boil and blanch the pine cones for 1-2 minutes, remove and reserve.
- In a 1 gallon pot with high sides about 8-10 inches in diameter, combine the cider, bouquet of warm spices, pinch of salt, and pine cones, bring to a boil, turn down the heat, and set a timer for 1 hour while you do something else.
- After an hour, check on the reduction and gauge how much time it will take to reduce down to about 1.5 cups or so, at which point you should baby it, watching it carefully to make sure the consistency is to your liking.
- Continue reducing at a brisk simmer until the bubbles start to increase in size and threaten to creep up the sides of the pan. Referring to the video will be helpful here.
