- Mix steak sauce and jalapeno liquid. Chop jalapenos; set aside. Cook onions in large skillet 5 min. or until browned, stirring frequently. Remove from skillet; cover to keep warm.
- Add meat to skillet in batches; cook 2 min. or until evenly browned, stirring occasionally. Return all meat to skillet with onions and steak sauce mixture; cook 2 min. or until meat is done, stirring occasionally. Remove from heat; top with cheese. Cover skillet. Let stand 3 min. or until cheese is melted.
- Spread beans, mayo and mustard onto insides of bolillos; fill with meat and jalapeños.

SAUCY HAM N CHEESE BAKES
When I was growing up, my mom would make these sandwiches, several at a time and freeze them...then on summer vacation we had something quick to pop in the oven...we loved them as kids and now my kids love them as well...even the big one that resides here...lol! Be careful as they stay pretty hot once unwrapped from the foil...but they sure are a yummy treat...mom used to make some with olives and some with dill relish...I like the dill ones best! Enjoy!

- Preheat oven to 350 degree F. In a medium bowl; combine the first 5 ingredients. Set aside.
- Mix the mayonnaise and chili sauce. Add to the ham mixture; stir to blend well.
- Spoon into each hot dog bun, wrap each in foil and place on baking sheet. Bake for 15 - 20 minutes. I usually bake till the cheese is good and melted. ( usually the full 20 minutes) They will be very hot so, take care in eating.

Since this recipe calls for a wider than usual selection of cheese that may exist in a normal household, it's recommended that you purchase a cheese slice assortment. Wouldn't recommend this for kids unless your child likes real cheese, which in my personal experience, is not usually the case.

- Take a frying pan, add the diced onions and olive oil.
- Set burner to medium-high.
- Add in Worcestershire sauce, liquid smoke before onions start to sizzle.
- Add in garlic powder and black pepper once onions begin to sizzle.
- Stir frequently.
- Fry until evenly browned.
- Set aside onions.
- Take white bread, lay all cheese slices in an order of your choosing, add onions on top, put on top slice of bread.

- Cut apples into pieces, removing the core.
- Cut prune plums into pieces, removing the pit.
- Chop onions.
- Put these ingredients into a large stockpot and add just enough water to prevent any scorching on bottom of pot. I used 2 cups water.
- Bring to a boil, then simmer until ingredients are soft.
- Use an immersion blender or potato masher to begin crushing the apples and plums.
- Once soft and cooked, press this through a sieve. Press hard to remove as much as possible. Press into a large cooking pot.
- Set aside the pulpy skins.
- To the sauce, add the vinegar, seasoning, sugar and Worcestershire sauce. Stir well.
- Bring to a boil, then reduce to a simmer. Let this mixture thicken (will take a couple of hours).
- Once thick, ladle into canning jars. Leave 1/2 inch headroom, add seal and ring.
- Water bath can the jars for 10 minutes (up to 1000 ft elevation). Above 1000 ft, boil jars for 15 minutes.
- Using canning tongs, remove jars and set on a thick towel on the counter. Leave alone for 24 hours.
- After the 24 hours, check each jar that it has sealed. Unsealed jars can be water bath canned again or placed in fridge to use within 3 weeks.

- Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add onions and sauté until slightly softened, about 5 minutes. Stir in vinegar, sugar and caraway seeds. Reduce heat to medium-low and sauté until onions are deep brown and very tender, about 20 minutes longer. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm over low heat before using.)
- Preheat broiler. Brush 11x7-inch metal baking pan with oil. Place sausages in pan. Broil until sausages are brown and crisp, about 6 minutes per side. Transfer sausages to work surface and cut lengthwise in half.
- Arrange 3 sausage halves on each of 2 bread slices. Spread 2 teaspoons mustard over sausages on each. Top sausages with caramelized onions, dividing equally. Top with Gruyère or Emmenthal cheese slices, dividing equally. Cover with remaining 2 bread slices. Spread half of butter over upper bread slices.
- Heat large nonstick skillet over medium-low heat. Carefully invert sandwiches, buttered side down, into skillet. Cover and cook until bottoms are brown, about 5 minutes. Spread remaining butter over upper bread slices. Turn sandwiches, cover and cook until bottoms are brown, about 4 minutes longer.

- Coat a medium-size nonstick skillet with nonstick cooking spray and place over medium heat.
- Add onion, sugar and salt to skillet; cover.
- Cook for 10 minutes, stirring occasionally, or until lightly browned; remove from heat.
