MINI CHEESECAKE JARS

Mini Cheesecake Jars image

Single-serving cheesecakes made in glass jars are adorable and easy mini alternatives to their full-size cousins. They bake in just half an hour and can be cooked a few days ahead of time.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Yield Makes 6

Number Of Ingredients 9

8 ounces cream cheese, room temperature
1/2 cup sugar
3 large eggs, room temperature
4 ounces sour cream (1/2 cup)
1 tablespoon fresh lemon juice
Salt
1/2 cup plus 1 tablespoon fruit preserves or jam
1/2 cup finely ground graham crackers (from 4 crackers)
1 1/2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 325 degrees. Make the cheesecakes: Beat cream cheese with a mixer on medium speed until smooth. Add sugar. Beat on medium speed for 3 minutes more. Reduce speed to low. Add eggs, 1 at a time, beating well after each addition. Raise speed to medium. Add sour cream, lemon juice, and 1/4 teaspoon salt. Beat for 3 minutes.
  • Divide batter among six 6-ounce jars, filling each two-thirds full. Transfer jars to a deep baking dish; add enough boiling water to dish to reach halfway up the sides of the jars. Cover dish with foil; cut 8 slits into top to vent. Bake until set in the center, about 25 minutes. Let cool. Refrigerate overnight to set.
  • Meanwhile, make the graham topping: Stir together graham-cracker crumbs and butter. Bake on a parchment-lined baking sheet for 10 minutes. Let cool.
  • Top each cheesecake with 1 tablespoon plus 1 1/2 teaspoons preserves. Divide graham topping among jars (about 1 heaping tablespoon each).

CHEESE SOUP MIX IN A JAR

Cheese Soup Mix in a Jar image

I found this recipe online (www.allfreecrafts.com) & used it for Christmas 2006. I made a test batch before gift-giving, and this is my tweaked version of the original recipe- my version includes more cheese and is less thick. Note: I found the cheese powder at the local bulk foods store.

Provided by AmyMCGS

Categories     Lunch/Snacks

Time 10m

Yield 8 serving(s)

Number Of Ingredients 10

2 cups powdered coffee creamer
3/4 cup powdered cheese sauce mix
1 tablespoon dried parsley flakes
1 tablespoon chicken bouillon granule
1 tablespoon dried onion flakes
2 cups instant potato flakes (approximate amount)
1 cup diced cooked ham
1 (10 ounce) box cooked chopped broccoli
crouton
shredded cheese

Steps:

  • Layer ingredients in a 1 quart canning jar in the order given. Use enough potato flakes to fill the jar- may not need the full amount (I didn't).
  • For gift-giving, attach a card that reads: Bring 6 cups of water to a boil in a large pan. Add contents of jar, stir well, remove from heat, and let sit five minutes. Optional: May stir in one cup diced, cooked ham or broccoli.
  • NOTE: I found that this soup got very thick as it cooled, so I've cut down on the original amount of potato flakes and increased the water. If you find that it's too thick, add another cup of boiling water.

  • Have your jars ready to go and lined up. This recipe yields about 6 8 ounce jars or 10 6 ounce jars.
  • Melt the butter in the microwave in a medium heat-proof bowl or use the stove. Stir in the graham cracker crumbs. The mixture will resemble wet sand. Spoon a generous spoonful into each jar, about 2 Tablespoons into the 8 ounce jars and 1 and 1/2 Tablespoons into the 6 ounce jars. If there’s any crust leftover, sprinkle into the jars to use up or discard. Set jars aside.
  • Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the cold heavy cream into stiff peaks on medium-high speed, about 3-4 minutes. Set aside.
