As a comfy side dish, cheese grits have fantastic potential but sometimes need a flavor boost. For add-ins, try red pepper flakes, fresh rosemary or crushed garlic. -Paula Hughes, Birmingham, Alabama

Number Of Ingredients 7

2 cups 2% milk
1 cup chicken or vegetable broth
1 cup water
1 teaspoon salt
1 cup uncooked old-fashioned grits
2 to 3 cups shredded sharp cheddar or Monterey Jack cheese
Pepper and additional salt to taste

Steps:

  • Combine milk, broth and water in a large saucepan; bring to a boil. Add salt. Whisk in grits; reduce heat to low. Cook, stirring frequently, until creamy, 15-20 minutes., Stir in cheese until melted. Season with pepper and additional salt to taste.

Former First Lady Rosalynn Carter shared this recipe while her husband was President of the USA and I've been making this since then. It is still a big favorite in our family. Great for breakfast and awesome side dish with shrimp, ham, chops, chicken...you name it! *Note - There used to be a processed soft cheese that came in a tube with this flavor. I can no longer find it in my area. I have used Kraft Bacon Cheese Spread but again can no longer find it. I have cooked up 1/4-1/2 bacon, crumbled it and added to a Cold Pack Cheese Spread with success.

Number Of Ingredients 6

1 cup grits
1/2 cup butter, softened
6 ounces bacon cheese spread
3 eggs, beaten
2/3 cup milk
1/2 cup sharp cheddar cheese, grated

Steps:

  • Preheat oven to 325 degrees F.
  • Cook grits according to package.
  • Add butter, bacon cheese to the hot cooked grits. Stir to blend well. Set aside.
  • In bowl combine eggs, beat well. Add milk and beat some more.
  • Stir eggs into the cooled grits. Blending well.
  • Spray 2 qt casserole dish with non-stick spray and pour grits into the dish.
  • Top with grated cheddar cheese.
  • Bake 30-45 minutes until cheese it melted and bubbly, golden brown.
  • Garnish with crisp fresh fried bacon (if desired).
