Fritters:
3 eggs
8 ounces sour cream
1/2 cup Swiss cheese, shredded
3 cups pepper jack cheese, shredded
2 cups sharp cheddar cheese, shredded
2 cups Parmesan cheese, shredded
2 1/2 cups all purpose flour
3/4 teaspoon salt
2 teaspoons cayenne pepper
3 cloves garlic, minced
2 tablespoons garlic powder
2 tablespoons parsley, minced
1/2 cup green onions, minced
Fat for frying
Sauce:
3 tablespoons honey
3 tablespoons Dijon mustard
3 tablespoons spicy mustard
3 tablespoons white sugar
1 tablespoon hot sauce

Steps:

  • Combine all ingredients except fat in a bowl. Refrigerate for 1 hour so mixture hardens. Preheat oil in deep fryer to 350°F. Roll cheese mixture into bite-sized balls. Fry 1 1/2 minutes or until golden brown. Remove from fryer and place on serving plate with paper towels to absorb grease. Dipping Sauce: Mix all ingredients.

1 cup drained cottage cheese
1 egg
¼ cup half-and-half
1 cup all-purpose flour
1 ¾ teaspoons baking powder
¼ teaspoon salt
2 tablespoons white sugar
1 teaspoon ground nutmeg
4 cups vegetable oil for frying
3 tablespoons confectioners' sugar

Steps:

  • In a medium bowl, beat the cottage cheese and egg together. Stir in the half-and-half, flour, baking powder, salt, sugar and nutmeg. Mix until just combined.
  • Fill a deep pot to the 2-inch mark with oil. Heat to 375 degrees F (190 degrees C). Drop batter by rounded tablespoons into the hot oil. Fry until golden brown on all sides, about 3 to 4 minutes. Drain on paper towels and sprinkle with confectioners' sugar. Serve hot!

This is a recipe from the Rachel Ray show. She served it over waffle fries (which I tried and they were excellent), but I think that the sauce would also be great over any vegetable or maybe even chicken. This makes a lot of sauce, but it is easily halved.

3 cups chicken stock
2 tablespoons spicy brown mustard (I used Hellman's honey mustard)
2 cups cheddar cheese, shredded

Steps:

  • Melt the butter in a medium-size saucepot. Add flour, cook 1-2 minutes over moderate heat, then whisk in the chicken stock and mustard.
  • When the stock comes to a bubble and starts to thicken, stir in the cheese with a wooden spoon.
  • Remove from the heat and serve.

1 1/2 cup(s) shredded mozzarella cheese
1/2 teaspoon(s) salt

2 cup(s) panko bread crumbs
3 large eggs
3/4 cup(s) all purpose flour
- vegetable oil, for frying
1 tablespoon(s) fresh thyme, chopped
BALSAMIC DIPPING SAUCE
6 tablespoon(s) balsamic vinegar
2 tablespoon(s) lemon juice
2 tablespoon(s) dijon mustard
1 tablespoon(s) honey
1/2 cup(s) extra virgin olive oil
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper

Steps:

  • For the Fritters: In a small bowl combine the ricotta, mozzarella, salt, and pepper. In another bowl pour the panko. In a third bowl lightly beat the eggs. Put the flour in a fourth bowl. Line a tray with parchment paper.
  • Scoop a 1 1/2 tablespoon ball of the cheese mixture into the flour and roll to coat. Transfer the ball to the eggs and roll to coat. Transfer the cheese ball to the panko and again roll to coat. Transfer the ball to the parchment-lined tray. Continue with the remaining cheese mixture. If it is warm in your house, you may want to chill them in the refrigerator for 15 to 30 minutes prior to frying.
  • Meanwhile heat 3 inches of vegetable oil in a large skillet to 350 degrees F. Fry fritters in batches, being careful not to overcrowd the pan, until golden, about 1 to 2 minutes. Remove with a slotted spoon to paper towel to drain. Sprinkle with thyme. Serve warm with Balsamic Dipping Sauce.
  • For the Balsamic Dipping Sauce: Combine the vinegar, lemon juice, mustard, and honey in a blender. Blend until combined. Add the oil in a steady stream while the machine is running. Season with the salt and pepper. Serve in a small bowl alongside the fritters.

¼ cup baking soda
1 egg, whisked
coarse salt
¼ cup butter
¼ cup flour
2 cups milk
1 ½ tablespoons French's Honey Mustard
2 cups shredded cheddar cheese
2 teaspoons apple cider vinegar
1 ½ teaspoons salt
1 teaspoon pepper

Steps:

  • Preheat oven to 425ºF (218 C)
  • Roll pizza dough into balls slightly smaller than the size of a golf ball.
  • Bring a pot of water to a simmer, then stir in the baking soda. Add dough balls and cook for 30 seconds. Remove from the water and place them on a parchment-lined sheet tray.
  • Brush each dough ball with egg wash and sprinkle with a bit of coarse salt. Place tray in oven and bake for 10-12 minutes, until pretzels turn a deep brown color.
  • Melt the butter in a saucepan over low heat. Whisk in the flour and cook for 1 minute. Pour in the milk while whisking. Cook for 2-3 minutes, stirring occasionally, until the milk begins to thicken slightly. Add in the French's Honey Mustard, cheese, apple cider vinegar, salt, and pepper. Whisk until cheese melts and the sauce is smooth. Let the cheese sauce bubble for a few more minutes to thicken up slightly. Serve immediately with the pretzel bites!
