- Preheat the oven to 375 degrees F (190 degrees C).
- Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
- Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
- Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
- Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
- Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.
- Bake in the preheated oven until heated through, about 20 minutes.

CHICKEN ENCHILADAS WITH TOMATILLO SAUCE
Light and fresh chicken enchiladas filled with tender, smoky chicken and cheddar cheese in a tangy tomatillo sauce.

Steps:
- Heat the oil in a medium saucepan over medium heat. Add the onions and garlic and cook, stirring occasionally, until softened, about 5 minutes. Add the tomatillos, jalapeños, sugar, salt, cumin and ⅓ cup water; bring to a simmer, then reduce the heat to medium-low and simmer until tomatillos are softened, about 8 minutes. Transfer the mixture to a blender and purée until completely smooth. Set aside.
- Place the chicken tenderloins in a medium bowl and sprinkle with the cumin, smoked paprika and salt. Toss with tongs until the chicken is evenly coated with the spice blend.
- Heat the oil in a large nonstick sauté pan until shimmering but not smoking. Add the chicken and cook until just done, about 2 minutes per side; transfer to a plate to cool. Do not rinse the pan. Add the onions and reduce the heat to medium. Cook, stirring occasionally, until soft, about 5 minutes. Remove the pan from the heat.
- Once the chicken is cool enough to handle, shred it into bite-sized pieces. (All tenderloins have a tough tendon running through them; just remove it.) Add the shredded chicken to the pan with the onions, along with the chopped cilantro and shredded cheese.
- Preheat oven to 400 degrees.
- Spread ¾ cup of the tomatillo sauce on the bottom of a 9 x 13-inch baking dish.
- Pour the oil into a small bowl or ramekin. Using a pastry brush (or your hands), brush both sides of each tortilla with oil, then stack them on a plate and microwave until hot and steamy, 1½ - 2 minutes. This makes them pliable.
- Spoon about ⅓ cup of the filling down the center of each tortilla. Roll each tortilla tightly and place side by side in the baking dish, seam side down.
- Pour the remaining chili sauce over the top, and use the back of a spoon to spread evenly over each tortilla. Sprinkle the cheese down the center of the enchiladas. Bake until hot and bubbling, 15-20 minutes. Sprinkle the smoked paprika down the center of the enchiladas and serve immediately with sour cream, lettuce, avocado and lime wedges. (The nutritional information below does not include the sour cream, romaine lettuce or avocado used to top the enchiladas.)
- Note: If you touch the seeds of the jalapeño pepper, just be sure to wash your hands well and avoid touching your eyes.
- Freezer-Friendly Instructions: The cooked enchiladas can be frozen for up to 3 months. When ready to serve, defrost them in the refrigerator for 24 hours and then reheat, covered in foil, in a 325°F oven until hot.

- Reduce heat to medium-low, cover, and simmer until tomatillos are soft, about 15 minutes.
- Transfer mixture to blender; add 2 cups onions, green chilies, and spinach; puree.
- Season sauce with salt and pepper.
- Return sauce to skillet.
- Preheat oven to 450 degrees F.
- Lightly oil 13x9x2-inch glass baking dish.
- Heat about 1/4 inch deep vegetable oil in a second skillet and fry 1 tortilla briefly, remove to a paper towel to drain and then coat with sauce.
- Place coated tortilla on plate.
- Top with 2 tablespoons cheese, 1 tablespoon remaining onions, and 1 tablespoon sauce.
- Roll up tortilla.
- Place seam side down in prepared dish.
- Repeat with remaining tortillas, sauce, cheese, and onions.
- Pour remaining sauce over enchiladas.
- Sprinkle with remaining cheese.
- Bake until cheese melts and the edges of the enchiladas begin to brown, about 15 minutes.

- For sauce: Cook spinach according to package instructions.
- Drain well.
- Set aside. Melt butter in heavy medium skillet over medium heat. Add flour and stir mixture 2 minutes; do not brown.
- Gradually whisk in whipping cream and milk.
- Simmer until thickened, about 5 minutes.
- Stir in spinach, cilantro, green onion, chilies, cumin, coriander and red pepper.
- Puree in batches in processor until almost smooth.
- Season with salt and pepper.
- (Can be prepared 1 day ahead.
- Cover and refrigerate. Bring to room temperature before using.) For enchiladas: Heat oil in heavy small skillet over medium-high heat. Using tongs, briefly dip each tortilla in oil to soften, about 15 seconds per side. Transfer to paper towels and drain.
- Combine cheeses in large bowl; set aside 1 1/2 cups for topping.
- Combine onion and cilantro in small bowl.
- Place 1/4 cup cheese mixture in center of 1 tortilla.
- Spoon 2 teaspoons onion mixture over.

- First prepare the salsa verde for the enchiladas. Bring 4 cups of water to boil in a sauce pot. Carefully place tomatillos in boiling water for about 8 minutes or until they change color to a green olive color. Set aside to cool off. Once cool, place tomatillos in a blender with onions and salt and blend to a sauce. Pour sauce in shallow dish.
- Next, take 6 tortillas at a time and wrap them in paper towels. Heat up in microwave for 1 minute. Once hot, take each one by one and rub with olive oil on both sides. Then, soak the tortilla in the salsa. Finally, take about 2 spoonfuls of cheese (or shredded chicken for chicken enchiladas) and roll the enchilada. Repeat for the rest of the tortillas. It's best to work in batches of 6 or less, so heat 6 or less tortillas at a time and form the enchiladas, then work on the next batch.
- Once done with all of the enchiladas, pour an left over salsa on top of them. Pour cream and put some more shredded cheese on the top as well.
- Now. place the baking dish in the preheated oven at 350 F for about 12 minutes.
