Spicy Mexican Cream Cheese Dip image

A budget-friendly Mexican cream cheese dip that serves many. No mayo. No sour cream. Serve with tortilla chips or crackers.

cooking spray
2 (16 ounce) packages frozen corn
2 (8 ounce) packages cream cheese, softened
2 cups shredded Mexican-blend cheese
2 (4 ounce) cans diced jalapeno peppers
6 slices bacon, or more to taste
2 cups shredded Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine corn, cream cheese, Mexican-blend cheese, and jalapeno peppers in a bowl; mix until thoroughly combined. Transfer to the prepared baking dish.
  • Bake in the preheated oven for 20 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Remove dip from the oven. Top with chopped bacon and shredded Parmesan cheese. Return to the oven and bake until cheese has melted, about 10 more minutes.

½ pound ground beef
½ pound ground pork sausage
2 pounds processed cheese food, cubed
1 (10 ounce) can diced tomatoes with green chile peppers, with liquid

Steps:

  • Place ground beef and ground pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
  • In a medium saucepan over low heat, melt processed cheese food. Stir in diced tomatoes with green chile peppers while processed cheese food is melting.
  • Drain ground beef and ground sausage. Mix into the processed cheese food mixture. Transfer to a medium dish and serve warm.

4 ounces cream cheese, room temperature
1 garlic clove, minced
1 teaspoon Worcestershire sauce
1 tablespoon prepared horseradish
2 teaspoons paprika
1/2 teaspoon cayenne pepper
8 ounces sharp cheddar cheese, coarsely grated
4 ounces Monterey Jack cheese, coarsely grated

Steps:

  • Beat together mayonnaise, cream cheese, garlic, Worcestershire sauce, horseradish, paprika, and cayenne with a mixer on medium speed until smooth, about 2 minutes.
  • Stir in cheeses until well combined. Refrigerate until cold, at least 1 hour and up to 3 days.

1 (16 ounce) bag cheddar cheese, shredded
2 teaspoons salt
2 1/2 teaspoons black pepper
1 tablespoon garlic powder
1 jalapeno pepper
1/4 cup milk
2 teaspoons paprika

Steps:

  • Chop pepper into very small pieces, set aside.
  • Turn stove on medium heat.
  • Put cheese, milk, and chopped jalapeño in a pan and be sure to watch it until the cheese melts.
  • When you're sure the cheese has melted, turn stove completely off.
  • Place cheese concoction in a large bowl.
  • Add rest of ingredients to bowl; stir.
  • If your cheese seems to have thickened, heat it on stove for maybe 3 minutes on low stirring occasionally.
  • Serve IMMEDIATELY so the cheese won't thicken on your party goers.

1/3 cup 100% pure fruit peach jelly or preserves (we use Smucker's Simply Fruit)
1 tablespoon Sweet and Spicy Pepper Relish, plus more to serve on the side, if desired
optional for garnish: finely chopped fresh parsley

Steps:

  • Place block of cream cheese on small serving platter.
  • Spoon peach jelly over top of the cream cheese, allowing a little to drip down the sides.
  • Spoon 1 tablespoon Pepper Relish on top of peach jelly. Offer additional Pepper Relish to the side, if desired. (See note.)

1 (12-ounce) can stewed tomatoes with juice
4 to 6 cloves garlic
3 whole fresh jalapenos
1 whole medium white onion
2 to 3 tablespoons chopped fresh cilantro
4 to 6 fresh Roma tomatoes
Kosher salt
Fresh ground pepper
1/2 lime, juiced
1 1/2 pounds ground beef
1 large chopped onion
1 or 2 chopped jalapenos
1 tablespoon freshly chopped garlic
Salt and pepper
2 pounds velveta cheese, cubed
1 can cream of mushroom soup
1/4 cup whole milk
Tortilla chips

Steps:

  • Puree stewed tomato juice only, garlic and 2 jalapenos in a blender or processor. Finely chop the onion, 1 jalapeno, 2 to 3 tablespoons of cilantro and 4 to 6 Roma tomatoes. Roughly chop the stewed tomatoes. Mix all these ingredients in a large bowl. Season with kosher salt, fresh ground pepper and lime juice.;
  • Cook the ground beef, onion, jalapenos, garlic and dash of salt and pepper. Drain excess fat in a small bowl. Add the beef mixture to slow cooker and put on medium setting. Keep hot. Add cubes of cheese, cream of mushroom soup and milk and stir. Next add 2 cups of the salsa mixture to the cheese mixture. Can be kept warm for 1/2 hour or longer. Serve with chips.

1 ½ cups sour cream
1-2 tablespoons granulated sugar
½ teaspoon garlic powder
½ teaspoon crushed red pepper

Steps:

  • Set out a large food processor. Cut the cheddar and gouda cheese blocks into chunks, then place in the food processor. Lock the lid into place and pulse to break the cheese chunks into fine crumbs.
  • Add in the sour cream, 1 tablespoon of sugar, garlic powder, and crushed red pepper. Purée until the cheese dip is completely smooth. Taste, then add another tablespoon of sugar if desired.
  • Scoop the smoked cheese dip into a bowl and serve with bread, crackers, or cut vegetables. Or refrigerate until ready to serve.

  • Slowly add the milk to the flour/butter paste in a steady stream, whisking constantly. Continue cooking, whisking constantly until the mixture thickens, about 5 minutes. It should be thick but still pourable. Add the cheese, whisking constantly until it is melted. Add the hot sauce and cayenne. Taste, then add salt and pepper to taste.   • The sauce will thicken upon cooling. Store leftovers covered tightly in the refrigerator for up to 5 days. Heat over stovetop or in the microwave before serving again.
