CRAB CRESCENT TRIANGLES

When friends who love crab were planning a party, I created this recipe just for them. These comforting baked bundles wrap up a cheesy seafood filling in convenient crescent roll dough. -Noelle Myers, Grand Forks, North Dakota

1 package (8 ounces) cream cheese, softened
2 teaspoons mayonnaise
1-1/2 teaspoons Dijon mustard
1-1/2 cups shredded Colby-Monterey Jack cheese
3/4 cup shredded carrot (about 1 medium)
1/4 cup finely chopped celery
2 green onions, chopped
1 garlic clove, minced
1 can (6 ounces) lump crabmeat, drained
2 tubes (8 ounces each) refrigerated seamless crescent dough sheet

Steps:

  • Preheat oven to 375°. In a large bowl, beat cream cheese, mayonnaise and mustard until blended. Stir in cheese, carrot, celery, green onions and garlic. Gently fold in crab., Unroll crescent dough and roll into a 12-1/2x10-in. rectangle. Cut each sheet into twenty 2-1/2-in. squares., Spoon a heaping teaspoonful of cream cheese mixture diagonally over half of each square to within 1/2 in. of edges. Fold 1 corner of dough over filling to the opposite corner, forming a triangle. Pinch seams to seal; press edges with a fork. Place on ungreased baking sheets. Bake until golden brown, 8-10 minutes.

4 oz tomato-basil feta cheese, finely crumbled (1 cup)
2 tablespoons finely chopped green onions (2 medium)
1 egg, well beaten
1 can (8 oz.) refrigerated crescent dinner rolls or 1 can (8 oz.) refrigerated seamless dough sheet
1 tablespoon grated parmesan cheese

Steps:

  • 1. Preheat oven to 375°F. In small bowl, mix feta cheese, green onions and 3 tablespoons of the beaten egg.
  • 2. If using crescent rolls: Unroll dough; separate into 4 rectangles. Press perforations to seal. If using dough sheet: Unroll dough; cut into 4 rectangles. Press each rectangle into 7 1/2 x 5-inch rectangle. Cut rectangle into 3 rows by 2 rows to make 6 squares (one slice lengthwise, two slices across).
  • 3. Top each dough square with slightly rounded measuring teaspoon feta cheese mixture. Fold dough over filling, forming triangle; press edges to seal. On ungreased cookie sheets, place triangles 2 inches apart. Repeat with remaining 3 dough rectangles and feta cheese mixture. Brush tops with remaining beaten egg. Sprinkle lightly with parmesan cheese.
  • 4. Bake 9 to 11 minutes or until golden brown. Serve warm.

1-1/2 cups finely diced fully cooked ham
1 cup shredded Swiss cheese
1 package (3 ounces) sliced pepperoni, chopped
8 slices provolone cheese
1 jar (12 ounces) roasted sweet red peppers, drained and cut into strips
4 large eggs
1/4 cup grated Parmesan cheese
1 tablespoon Italian salad dressing mix

Steps:

  • Preheat oven to 350°. Unroll one tube of crescent dough into one long rectangle; press onto bottom and 3/4 in. up sides of a greased 13x9-in. baking dish. Seal seams and perforations. Top with half of the ham; layer with Swiss cheese, pepperoni, provolone cheese and remaining ham. Top with red peppers., In a small bowl, whisk eggs, Parmesan cheese and salad dressing mix; reserve 1/4 cup. Pour remaining egg mixture over peppers. , On a lightly floured surface, roll out remaining crescent dough into a 13x9-in. rectangle; seal seams and perforations. Place over filling; pinch edges to seal. , Bake, covered, for 30 minutes. Uncover; brush with reserved egg mixture. Bake until crust is golden brown, 20-25 minutes longer. 1/3 cup ricotta cheese or 1/3 cup 2% fat cottage cheese
1 egg, beaten
1 green onion, finely chopped
1/4 teaspoon pepper, fresh ground
1 (397 g) package puff pastry, frozen, thawed
1 egg, beaten, for glazing pastry

Steps:

  • Preheat oven to 425°F degrees.
  • Lightly grease a baking sheet.
  • In a medium bowl, combine cheeses, egg, green onion and pepper; set aside.
  • On a lightly floured surface, roll out half the puff pastry to a 10 inch square. With a sharp knife, cut pastry into 9 even squares, repeat with other half of puff pastry.
  • Working with one square at a time, place a spoonful of the cheese mixture in the middle of each pastry square; brush edges very lightly with water, then fold one corner over to meet the opposite corner, forming a triangle.
  • Press edges together to seal, then crimp firmly shut with the tines of a fork.
  • Place triangles on baking sheet; brush the tops with the second beaten egg.
  • Bake for 13 to 15 minutes or until the tops are golden and the bottoms are nicely browned.
