2 cups breadcrumbs, plus 1 cup
16 ounces crabmeat
8 ounces Monterey Jack cheese, shredded
8 ounces cream cheese, at room temperature
3 large eggs
1/2 cup mayonaise
1 medium onion, finely diced
1 red bell pepper, finely diced
1/4 cup parsley, chopped
2 jalapeño peppers, finely diced
1 tablespoon Old Bay seasoning
1 1/2 teaspoons salt
Black pepper, freshly ground
Vegetable oil for frying

Steps:

  • In a large mixing bowl, combine all ingredients (except 1 cup of reserved breadcrumbs). Scoop and form into bite sized balls. Roll balls in reserved breadcrumbs. Place on a large platter and chill for a half of an hour. Heat 1″ of oil in a large frying pan until a deep fry thermometer registers at 350ºF. Fry the crab bites until golden brown. Drain on paper towels and place on a cookie sheet in a 200ºF oven to keep them warm while you fry the rest of them up. Serve with cocktail sauce, tartar sauce and lemon wedges.

1 jar (8 ounces) sharp cheddar cheese spread
1 package (8 ounces) imitation crabmeat, chopped
1/2 cup butter, melted
1 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder
6 English muffins, split

Steps:

  • In a small bowl, combine the cheese spread, crab, butter, Worcestershire sauce and garlic powder. Spread over muffin halves. , Place in two ungreased 15x10x1-in. baking pans. Bake at 400° for 10-12 minutes or until golden brown. Cut each muffin half into quarters. Serve warm.

1 lb crabmeat
1/2 lb butter, softened
2 (4 ounce) jars Kraft Old English cheese spread
1 tablespoon mayonnaise
1/2 teaspoon garlic salt
1 teaspoon seasoning salt
12 English muffins

Steps:

  • Soften butter and cheese spread at room temperature.
  • Mix together well in mixer with seasonings.
  • Fold in crab meat and spread on English muffin halves.
  • Cut with a sharp knife into four sections and freeze (they cut easier if they're slightly frozen first).
  • Flash freeze individually on a cookie sheet until frozen.
  • Package in freezer bags and store in the freezer.
  • Preheat oven to 400ºF degrees.
  • Heat in oven 10 to 15 minutes until hot and bubbly.

1/2 cup well-drained crabmeat
2 green onions, chopped
2 teaspoons dried tarragon

1 (17 1/3 ounce) package frozen puff pastry, thawed for 30 minutes
1 large egg
1 tablespoon milk

Steps:

  • Preheat oven to 400°.
  • In a bowl, mix the cream cheese, crab, onions, and tarragon; blend well.
  • Season to taste with salt and pepper.
  • Place pastry sheets on a lightly floured cutting board; roll out to a 14x10 inch rectangle.
  • Cut out 22 circles from each pastry sheet, using a 2-inch cutter.
  • In a small cup, beat egg and milk with a fork until blended.
  • Spoon 1 teaspoon crab mixture onto center of each pastry circle.

1/3 cup cream cheese, softened
1/4 cup crabmeat, minced
2 tablespoons green onions, white and green parts, sliced
15 individual miniature phyllo sheets, thawed

Steps:

  • Preheat oven to 375 degrees F.

1 (5 ounce) can water chestnuts, drained and sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
