2 packages (8 ounces each) cream cheese, softened
1/2 cup butter, softened
2 tablespoons minced chives
2 tablespoons minced fresh parsley
4-1/2 teaspoons dried marjoram
1 tablespoon dried basil
1-1/2 teaspoons dried thyme
1 garlic clove, minced
1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt
40 slices snack rye bread
1 small seedless cucumber, cut into 40 very thin slices
1 medium green pepper, finely chopped
1 jar (2 ounces) red caviar

Steps:

  • In a large bowl, combine the first 10 ingredients. Cover and refrigerate for at least 1 hour. , Just before serving, spread 1 tablespoon on each bread slice. Top with a cucumber slice, 1/2 teaspoon green pepper and about 1/4 teaspoon caviar.,

Freshly ground black pepper
4 salt-roasted whole almonds, roughly chopped
8 fresh rosemary leaves

Steps:

  • Place the apricots on a serving plate.
  • Top each one with a little 1/4 teaspoon scoop of goat cheese and smoosh it down a bit. Grind some pepper over the whole plate.
  • Using the goat cheese as the glue to which your remaining items will stick, sprinkle each bit of goat cheese with one-eighth of the almonds (a good pinch on each one is about right) and then gently press on two rosemary leaves.

100g ricotta cheese
25g Cashel Blue cheese , chopped
2 spring onions , whites only, very finely chopped
1 cucumber , thickly sliced (about 14 inches)
16 small black grapes
4 toasted pecan halves, cut into slivers
½ 80g tub pomegranate seeds
a few fresh thyme leaves

Steps:

  • Beat the ricotta with the blue cheese and onion until really smooth. Arrange the cucumber slices on a large platter. Top each cucumber slice with some of the cheese mixture - you can pipe it on if you want a professional finish.
  • Top half with a grape and sliver of pecan, and the remainder with pomegranate seeds and thyme. Keep chilled until ready to serve. Will keep in the fridge for up to one day.

1/4 pound Västerbotten cheese (available at Scandinavian markets and some specialty foods shops) or sharp Cheddar, sliced thin and cut into twelve 1 1/2-inch rounds
thirty-six 1 1/2-inch-long julienne strips of red bell pepper
about 2 tablespoons Swedish sweet mustard (available at Scandinavian markets and some specialty foods shops) or other sweet mustard
12 drained bottled cocktail onions

Steps:

  • Spread the bread with the butter and with a 2-inch scalloped cutter cut into 12 rounds. Arrange the salami, the cheese, and the bell pepper decoratively on the bread, spoon small dollops of the mustard onto the canapés, and press the onions into the mustard.
  • The canapés may be made 30 minutes in advance and kept covered and chilled. Arrange the canapés on a platter.
