Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Number Of Ingredients 7

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

Pistachio-Goat Cheese Bites image

These are delicious little nibbles. I love their simplicity--they are quick to put together and can easily be made on the spur of the moment for an impromptu gathering, but can also be prepared up to a day ahead. The recipe is adapted from one published in "In Style" magazine. Prep time includes 15 minutes refrigeration time.

1/4 cup shelled salted pistachios (I used double this amount)
6 ounces goat cheese, softened
2 ounces cream cheese, at room temperature

Steps:

  • Toast nuts in small skillet over medium heat until fragrant, about 3 minutes; chop finely.
  • Combine goat cheese and cream cheese in a medium bowl. Drop mixture by heaping teaspoons onto a parchment-lined baking sheet; refrigerate 15 minutes.
  • Roll into balls, then roll in chopped nuts.
  • Refrigerate, tightly covered, up to 1 day.

This recipe was from Family Circle Magazine Dec. 2009. It was considered to be a healthy recipe choice for those having parties with lots of food and drink. I made them for a meeting and they were a hit. I think you have to serve them with other things because despite being healthy they are a bit rich. I like them as a great alternative to the usual cheese ball. The nuts give it crunch and the two cheeses with the three fruits was very unique. This is not for someone who doesn't like cheese though. Perfect for the holidays, New Year's parties or anytime you need a no cook appetizer. Enjoy! ChefDLH

1/2 cup shredded reduced-calorie cheddar cheese, at room temperature
4 ounces light cream cheese
4 drops hot pepper sauce (such as Tabasco)
1/2 cup dried apple, chopped
1/3 cup dried apricot, chopped
1/4 cup dried pineapple, chopped (such as Sunsweet Philippine Pineapple)
1/4 cup finely chopped walnuts

Steps:

  • chop up the fruits and the nuts.
  • Beat together cheddar cheese, cream cheese and hot pepper sauce in a small bowl until blended, about 1 minute.
  • Stir in dried apple, apricot and pineapple with a wooden spoon. Using a tablespoon, form mixture into balls, then roll between palms. Coat balls in chopped nuts. Makes 18 (recipe can be doubled).

2 (10 ounce) packages refrigerated biscuits
1 (3 1/2 ounce) package pepperoni, chopped
1 tomatoes, chopped
1 onion, chopped
1 cup shredded swiss cheese or 1 cup monterey jack and cheddar cheese blend
1/2 cup mayonnaise
1 teaspoon italian seasoning

Steps:

  • Cut biscuits in half and press into greased mini-muffin cups.
  • Mix together all remaining ingredients.
  • Top biscuits with 1 tablespoon of filling mixture.
  • Bake at 350 degrees for 20-25 minutes.
