AREPAS DE QUESO (CHEESE AREPAS)
Arepa is a typical Colombian dish from the region Antioquia, my home state. We serve Arepas warm for breakfast, spread with butter and cheese on top, with a good cup of Colombian hot chocolate. These Arepas are an essential part of the Colombian daily diet. You can serve Arepas as a main course or appetizer

Steps:
- Put cornmeal in a large bowl with salt and cheese. Put milk in a small saucepan over medium-low heat until steam rises, then add butter and stir until melted. Remove from heat and stir into cornmeal mixture until a thick batter is formed. Fold in the corn kernels, scallion, cilantro and chile, if using.
- Let batter rest until it thickens into a soft dough, about 15 minutes. Gently form 3-inch to 4-inch balls from mixture and flatten with palm of your hand to a 1/2-inch-thick disk. (You can cover and refrigerate disks for a few hours if you like.)
- Heat oil in a large skillet and cook arepas, working in batches, until golden brown, about 5 minutes, then flip and cook for another 3 minutes on other side. When all arepas are cooked and cool enough to handle, carefully slice them through the middle. If desired, serve with butter or stuff with beans, vegetables or sour cream.

Steps:
- Place the flour and salt into a large bowl, gradually add the water, and mix well by hand.
- Add 4 tablespoons melted butter and a quarter of the cheese, and knead for 15 minutes to obtain a slightly sticky dough. Add more flour (if the dough is too wet) or water (if it's too dry) as necessary until the dough is smooth and slightly tacky.
- On a floured work surface, divide the dough into 4 equal pieces.
- Flatten one with the palm of your hand to form a patty about ¼ inch (5mm thick).
- Heat the rest of the butter in a frying pan or on an electric hotplate.
- Brown the 4 patties over medium heat for 5 minutes, turning them regularly.
- Once the arepas are fried, golden and cooked in the center, very carefully cut them in half (to make two equal circles) without breaking them, and fill with cheese.
- Place the arepas back onto the skillet over a low heat to melt the cheese.
- Serve immediately.

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F.
- Stir together 2 1/2 cups lukewarm water and 1 1/2 teaspoons salt in a large bowl. Gradually add the corn meal into the water, using your fingers to stir and combine, until a soft and moist dough forms.
- Divide the dough into 8 golf ball-size balls and pat each into a patty about 5-inches wide and 1/4-inch-thick.
- Put a cube of mozzarella in the center of each patty. Fold the dough over the cheese, making sure the cheese is completely covered and sealed. Pat it back down until 3-inches wide and 1/2-inch-thick (see Cook's Note).
- Heat the oil in a large skillet over medium-low heat until shimmering. Working in batches, cook the corn patties, until golden brown, about 5 minutes per side (making sure the oil is hot for each batch). Transfer to a cooling rack set on a rimmed baking sheet and bake until the edges are crisp and golden, about 10 minutes.

- In a deep bowl, mix the cornflour with salt, sugar, and nutmeg. Gradually add the water and knead until the water is completely absorbed and the dough no longer sticks to your hand. This takes about 8-10 minutes.
- Take a piece of dough and roll it into a ball. The ball needs to be able to easily sit in your palm. Then press the ball in between your palms to create a disk of about 1 inch/2.5 cm thick. Place it on a plate and repeat the process placing each arepa next to each other.
- Add plenty of oil into the pan (see note 1) and let it heat on medium heat. When the oil is sizzling hot, add one or more arepas without overcrowding them. Using a spoon splash a bit of hot oil on the uncooked part as soon as you add the arepas. Fry them on one side for about 3 minutes until golden brown, flip, and fry the other side for 3 minutes as well. Take them out and place them on a plate covered with paper towels.
- Using the tip of a serrated knife, poke a hole on the side of the arepa and then slice it open. Add a layer of salad green and then aged Gouda cheese.

- To make arepas: Pour water into large bowl. Add arepa corn flour, salt, oil, ½ cup of Jarlsberg cheese, and mix thoroughly to combine. Cover with a towel and let dough rest for five minutes.
- Working with moist hands, remove about 3 tbsps worth of dough and flatten them between your palms. Add 1 tbsp of cheese in the middle, and top with a handful more dough, gently pressing to seal the cheese inside and form a patty about ¼ inch thick. If you’re after those perfectly shaped arepas, place each arepa ball between 2 sheets of wax paper or plastic wrap and flatten them to ¼ inch with a heavy cast iron pan. Repeat until you’re out of dough and cheese, transferring prepared arepas to a large platter.
- Preheat your budare (special arepas pan), griddle or cast iron pan to high heat. Season with oil or butter. Place the arepas in the pan and cook about 5 minutes on each side, until you achieve golden-brown colour and a beautiful char in spots.
- To serve arepas, cut them in half and put your favourite toppings inside. Drizzle with Colombian pico de gallo and aji.

- In a large bowl, mix the masa harina with 6 ounces of the feta and the salt. Slowly add the water while stirring with a wooden spoon. Add 3 tablespoons of the butter and stir until smooth. Turn the dough out onto a work surface and knead for 1 to 2 minutes or until it comes together in a smooth mass.
- Set a cast-iron griddle over moderate heat. Divide the arepa dough into 4 equal pieces and roll each piece into a ball. On a clean work surface, flatten the balls of arepa dough and pat them into 5-inch rounds with smooth edges.
- Spread 1 teaspoon of softened butter on 1 side of an arepa and set it on the griddle, buttered side down. Using a flat spatula, press the arepa into a 6-inch round about 1/3 inch thick; carefully smooth the edges if necessary. Cook the arepa over moderately low heat until browned, about 6 minutes; reduce the heat to low if the arepa browns too quickly. Spread the top of the arepa with 1 teaspoon of butter, flip and cook for 6 minutes longer, or until browned. Transfer the arepa to a plate, sprinkle with cheese and serve. Repeat with the remaining arepas.
