1 can (11 oz) refrigerated Pillsbury™ Original French Bread
2 tablespoons spicy brown mustard
1/4 lb thinly sliced cooked corned beef or pastrami, finely chopped
1/2 cup refrigerated sauerkraut (from 25-oz jar), squeezed to drain
1/2 cup shredded Swiss cheese (2 oz)
1 teaspoon caraway seed
1/2 cup Thousand Island dressing
12 hamburger dill pickle slices

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • On lightly floured surface, unroll dough. Spread mustard over dough, leaving 1/4-inch border around edges. Sprinkle corned beef, sauerkraut, cheese and caraway seed over mustard. Gently roll up dough, starting with long side. Cut into 12 (1 1/4-inch) slices. On cookie sheet, place slices, cut sides down, 2 inches apart.
  • Bake 17 to 18 minutes or until barely golden brown. Place spirals on serving plate; drizzle with dressing. Top each with pickle slice. Serve warm.

Another great Pillsbury recipe- I just love to serve these as appetizers- so quick and easy- sometimes I add chopped up corned beef or bacon before rolling these babies up. They are so good!

8 oz can refrigerated crescent dinner rolls
1/4 c chopped,drained roasted red bell peppers(from jar)
1/2 c well drained sauerkraut
1/2 c shredded swiss cheese
1/2 c cooked chopped corned beef or bacon , if using
sprinkle of caraway seed , optional
1/4 c melted butter

Steps:

  • 1. Heat oven to 375^. Generously grease cookie sheet (I use parchment paper too). Unroll dough into 2 long rectangles; press perforations to seal. Sprinkle each with roasted peppers to within 1/2 inch of edges. Top with sauerkraut , cheese , meat,if using; press lightly onto dough. Starting at short side of each rectangle, roll up; pinch edges to seal. With serrated knife, cut each roll into 8 slices. Place slices, cut side up , on greased paper on cookie sheet. Brush tops with melted butter and sprinkle with caraway seed,if desired. Bake at 375^ for 13 to 19 minutes or until golden brown. Immediately remove from paper. Serve warm with sour cream or ketchup if desired.

100g strong cheddar , grated
50g lancashire cheese , grated
2 heaped tbsp pickle
1 tsp English mustard powder
320g sheet all-butter puff pastry
1 beaten egg

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Mix the cheeses together. Mix through the pickle and English mustard powder. Unravel the pastry on a lightly floured surface, spread the cheese mixture over and tightly roll into a sausage shape from the longest side. Trim off the ends. Cut into 10 rounds and put on a lined baking sheet (swirl-side up), brush with the egg and bake for 15-20 mins or until golden brown. Leave to cool a little before eating.

6 slices Swiss cheese
5 slices deli corned beef
1/2 cup sauerkraut, rinsed and well drained
1 teaspoon caraway seeds
1/4 cup Thousand Island salad dressing

Steps:

  • Preheat oven to 400°. Unfold puff pastry; layer with cheese, corned beef and sauerkraut to within 1/2-in. of edges. Roll up jelly-roll style. Trim ends and cut crosswise into 16 slices. Place on greased baking sheets, cut side down. Sprinkle with caraway seeds., Bake until golden brown, 18-20 minutes. Serve with salad dressing.

This is a recipe that I got from my mother. My DS's absolutely love this recipe - one pinwheel isn't enough. We always have to make two. This is NOT a low fat recipe.

1 lb ground pork
1/2 cup fine dry breadcrumb (I use gluten-free)
1 egg, slightly beaten
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
1 (1 lb) can sauerkraut, drained, and snipped
1/4 cup onion, chopped
5 slices bacon

Steps:

  • Combine ground pork, crumbs, egg, salt, and worcestershire; mix thoroughly,
  • On waxed paper, pat meat mixture to a 10 x 7 inch rectangle.
  • Combine sauerkraut and onion; spread evenly over meat.
  • Starting with narrow side, roll up meat jelly-roll fashion.
  • Place loaf in shallow baking dish.
  • Arrange bacon slices across top.
  • Bake in moderate oven (350º ) for 40 - 45 minutes.

These Reuben Pinwheels are filled with corned beef, sauerkraut, cream cheese, thousand island dressing, and swiss cheese! Such a quick and easy, crazy delicious appetizer for St. Patrick's Day or any get together throughout the year!

8 ounces cream cheese, room temperature
1/2 cup Thousand Island dressing
1/2 cup packed sauerkraut (rinsed and well drained)
2 cups shredded swiss cheese
12 ounces thinly sliced deli corned beef (16 slices)
8 (9-inch) flour tortillas

Steps:

  • In a medium bowl, mix together the cream cheese, Thousand Island dressing, and sauerkraut until smooth and well blended.
  • Scoop 2 heaping tablespoons of the cream cheese mixture onto one side of a tortilla; spread evenly almost to the edges.
  • Sprinkle with 1/4 cup of the cheese. Lay 2 slices of the corned beef (tearing the slices to make fit, if necessary) on top of the cheese.
  • Roll the tortilla up tightly. Repeat with all other ingredients.
  • Wrap the tortilla rolls in plastic wrap and place in the refrigerator for at least 1 hour.
  • Remove from refrigerator and discard plastic wrap.
  • Cut into rounds about 1 1/2-inches wide. Serve and enjoy!
