1 ½ tablespoons shredded reduced-fat Cheddar cheese
1 tablespoon shredded Parmesan cheese
1 tablespoon drained and rinsed canned black beans
½ tablespoon chopped fresh cilantro
2 (6 inch) whole-wheat tortillas
½ teaspoon butter, melted
1 tablespoon prepared guacamole
1 tablespoon chopped red bell peppers

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix salsa, Cheddar cheese, Parmesan cheese, black beans, and cilantro together in a bowl. Spoon salsa mixture on the center of 1 tortilla and spread evenly. Place remaining tortilla on top of filling. Arrange quesadilla on a baking sheet and brush top tortilla with butter.
  • Bake in the preheated oven until top begins to brown and cheese is melted, 9 to 12 minutes. Slice quesadilla with a pizza cutter; garnish with guacamole and red bell pepper.

2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
1/4 cup sour cream

Steps:

  • Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
  • Spray 1 side of 1 tortilla with cooking spray; place sprayed side down on work surface. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.
  • Cook in 10-inch nonstick skillet over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

8 10-inch flour tortillas
1/4 cup butter
1 (3 ounce) package cream cheese
1/4 cup finely chopped green onion
1 medium tomatoes, finely chopped
1 dash salt
3 cups shredded colby-monterey jack cheese
1 (4 ounce) can diced jalapenos (optional)
sour cream (optional)
guacamole (optional)
salsa, on the side (optional)

Steps:

  • Lightly spread one side of each tortilla with butter; place four tortillas buttered side down on large skillet or griddle (may have to cook in batches).
  • Whip cream cheese until fluffy; stir in onions, tomato and salt.
  • Spread on tortillas in skillet to within 1/2-inch of edge; sprinkle on Colby Jack cheese and jalapeno.
  • Top with remaining tortillas, buttered side up.
  • Cook on medium heat until bottom is lightly browned, about 2 minutes.

1 cup diced peeled pitted mango
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 jalapeño chili, seeded, chopped
8 5- to 6-inch-diameter corn tortillas
2 cups (packed) grated hot pepper Monterey Jack cheese (about 8 ounces)
3/4 cup crumbled feta cheese (about 3 ounces)
1 cup drained golden hominy (from 15-ounce can)
3 tablespoons (or more) vegetable oil

Steps:

  • Stir first 5 ingredients in medium bowl to blend. Season salsa with salt and pepper.
  • Cook tortillas over gas flame until blackened in spots, about 30 seconds per side. Transfer to work surface. Sprinkle 4 tortillas with both cheeses and hominy, dividing equally; top with remaining 4 tortillas. Heat 1 1/2 tablespoons oil in each of 2 heavy large skillets over medium heat. Place 2 quesadillas in each skillet. Cook until bottoms are crisp and brown, pressing occasionally with spatula, about 2 minutes. Turn quesadillas over. 3 tablespoons paprika
½ tablespoon ground cumin
1 tablespoon ancho chile powder
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon dried coriander
1 pinch ground cinnamon
1 pinch ground cloves
1 lb ground pork
1 tablespoon white vinegar
3 cloves garlic, minced
2 tablespoons olive oil
6 corn tortillas, preferably fresh
8 oz shredded cheese, such as mozzarella, queso Oaxaca, or cheddar
pickle, for serving
4 early girl tomatoes, quartered
8 habanada peppers, steam removed
10 cloves garlic
olive oil, for drizzling
kosher salt, to taste
1 lemon, juiced

Steps:

  • If making the chorizo, in the bowl of a stand mixer, combine the paprika, cumin, ancho chile powder, chili powder, oregano, coriander, cinnamon, cloves, ground pork, vinegar, and garlic. Mix until well combined.
  • Heat the olive oil in a large pan over medium-high heat. When the oil is shimmering, add the chorizo and cook until the fat has rendered and the chorizo is crisp. Remove from the pan using a slotted spoon and discard the excess fat.
  • Sprinkle the cheese over the tortillas, then top with the chorizo.
  • Return the tortillas to the pan and cook until the cheese is melted and the tortilla is crisp, 3-4 minutes per side.
  • Meanwhile, make the salsa: Coat the tomatoes, peppers, and garlic with olive oil and salt, then spread on a baking sheet. Roast under the broiler for 5-10 minutes, until charred in spots.
  • Transfer the roasted vegetables to a blender and purée until smooth. Stir in the lemon juice and season with more salt to taste.
  • Serve the taco-quesadillas with salsa and pickles.

Twelve 5-inch corn tortillas
1/2 pound Cheddar, Monterey Jack or Colby cheese, thinly sliced
4 tablespoons (1/2 stick) unsalted butter
1 pound vine-ripened tomatoes (about 2 tomatoes)
1/4 small red onion
2 to 3 tablespoons chopped fresh cilantro
Hot sauce such as chipotle or Mexican green chili sauce to taste (about 1/2 teaspoon)
Kosher salt
1 Hass avocado, halved, seeded, and sliced

Steps:

  • Lay 6 tortillas on a work surface. Divide the cheese among the tortillas. (Its best to leave about an inch border on the edge of the tortilla uncovered to allow for the spread of the melting cheese.) Top with remaining tortillas and press gently to seal. Melt 1 tablespoon butter in a small skillet. Carefully place a quesadilla in the skillet and fry, turning once, until golden and little bubbles appear on both sides, about 4 to 5 minutes total. Repeat with the remaining quesadillas, wiping out the pan between batches if the butter burns, and adding more butter, as needed.
  • While the quesadillas cook make the salsa: Halve the tomatoes and grate them on the largest holes of a box grater into a bowl, discarding the skins. Grate the onion into the tomato, and stir in the cilantro, hot sauce, and salt, to taste.
  • Cut each quesadilla into 4 wedges with a pizza wheel or knife and serve with the salsa and avocado.

1 cup grated (or Mexican blend) sharp cheddar cheese
4 tablespoons butter
for garnish sour cream

Steps:

  • Lay the tortillas flat on a cookie sheet. Sprinkle some of the cheese on 1 half of each tortilla. Try not to get it too close to the edge. Fold the tortillas in half over the cheese to make a half-moon. Warm a skillet over low heat and add 1 tablespoon of the butter. Add the tortilla to the skillet and cook until it is lightly brown, about 2 minutes. Using a spatula, gently lift the edge so you can check. When 1 side is brown, turn the tortilla over and cook the other side until brown and the cheese is all gooey. Use a spatula to transfer to individual plates or a large platter. Repeat with remaining butter and tortillas. Top them with the sour cream, salsa and guacamole.

  • In a pan heat some oil. As the oil gets hot, add chopped Onions. Cook on medium high for 1-minute. Then add Chopped Bell pepper and sliced Jalapeños. Sautè for another 30-seconds.
  • In the same pan add Garlic powder, Smoked Paprika, Ground Cumin, Dried Oregano, Salt, and Pepper. Toss well to combine. Cook on medium high for 30-seconds. Quickly pour some water so that the spices do not burn but cook completely. You filling should be absolutely dry. So do not add too much water.   • Once your filling is ready turn off the heat. Bring your filling to one side of the pan. Add Shredded cheese. Mix well to combine.
