BAKED MANICOTTI WITH PROSCIUTTO

Baked Manicotti With Prosciutto image

This recipe is from America's Test Kitchen on PBS. Their introduction: "The test kitchen prefers part-skim ricotta for manicotti, but whole or fat-free ricotta can also be used. We also prefer Barilla no-boil noodles for their delicate texture resembling fresh pasta. Note that Pasta Defino and Ronzoni brands contain only 12 no-boil noodles per package; the recipe requires 16 noodles."

Time 1h45m

Yield 16 manicotti, 6-8 serving(s)

Number Of Ingredients 16

2 (28 ounce) cans diced tomatoes (in juice)
2 tablespoons extra virgin olive oil
3 medium garlic cloves, minced or pressed through garlic press
1/4-1/2 teaspoon hot red pepper flakes
1/2 teaspoon table salt
2 tablespoons chopped fresh basil
3 cups ricotta cheese (see note above)
4 ounces grated parmesan cheese (about 2 cups)
8 ounces shredded mozzarella cheese (about 2 cups)
2 large eggs, lightly beaten
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil
16 no-boil lasagna noodles (see note above)
16 slices thinly sliced prosciutto

Steps:

  • Preheat oven to 375 degrees.
  • Sauce: Coarsely chop tomatoes in a blender or food processor to make 1/4 inch chunks. You may have to do this in several batches to make the pieces relatively uniform.
  • In a large saucepan, heat the oil, garlic, and pepper flakes in large saucepan over medium heat until garlic is just barely starting to brown (1-2 minutes). Add tomatoes and salt; cook until sauce thickens slightly (about 15 minutes). Add basil and salt.
  • Filling: Combine ricotta, 1 cup parmesan, mozzarella, eggs, salt, pepper, and herbs. Set aside.
  • Assembly: Cook noodles until just pliable. Place in single layer on clean kitchen towels. Pour about 1 1/2 cups of sauce in the bottom of 9" x 13" baking dish; spread evenly. Place 1 slice of prosciutto on each noodle. Spread 1/4 cup cheese mixture onto bottom 3/4 of each noodle on top of prosciutto, leaving top 1/4 of noodle uncovered. Starting from the end with cheese, roll into the noodle into a tube shape and arrange in baking dish seam side down. Top evenly with remaining sauce, covering each noodle completely.
  • Cover the dish with aluminum foil. Bake on the middle rack until the sauce bubbles (about 40 minutes).
  • Remove manicotti from the oven and adjust the oven rack to the highest position. It should be about 6 inches from the heating element. Sprinkle remaining 1 cup parmesan cheese evenly over the manicotti. Do not replace the foil. Broil until cheese starts to brown. Cool 15-20 minutes before serving to allow the manicotti to set.
  • This recipe can be prepared through step 5, covered with a sheet of parchment paper, wrapped in aluminum foil, and refrigerated for up to 3 days or frozen for up to 1 month. (If frozen, thaw the manicotti in the refrigerator for 1 to 2 days.) To bake, remove the parchment, replace the aluminum foil, and increase baking time to 1 to 1 1/4 hours.

Yield Serves 8

Number Of Ingredients 24

Marinara Sauce
2 pounds tomatoes, peeled, seeded
2 tablespoons olive oil
3 large garlic cloves, chopped
1 6-ounce can tomato paste
5 fresh basil leaves, cut julienne
1 teaspoon salt
Filling
1 1/2 cups whole milk ricotta cheese
1 cup freshly grated Romano cheese
2 eggs, beaten to blend
1/4 pound prosciutto, coarsely chopped
2 tablespoons minced fresh Italian parsley
16 Manicotti Crepes
6 ounces mozzarella cheese, cut into 1/4x1/4x3-inch strips
5 fresh basil leaves
Additional freshly grated Romano
Manicotti Crepes
Store extra in the freezer for another use.
Makes about 26
3 eggs
1 cup water
1 1/2 cups unbleached all purpose flour
Olive oil

Steps:

  • For sauce:
  • Chop tomatoes in processor. Heat oil in heavy medium saucepan over medium heat. Add garlic and cook until soft (do not brown), about 1 1/2 minutes. Stir in tomato paste, then tomatoes, basil and salt. Simmer until sauce thickens, stirring occasionally, about 30 minutes. Set aside.
  • For filling:
  • Beat ricotta in medium bowl until smooth and creamy. Mix in 1 cup Romano cheese, eggs, prosciutto and minced fresh parsley.
  • For Crepes:
  • Mix eggs and water in blender. Add flour and blend batter until smooth. Let stand 30 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.)
  • Heat crepe pan or heavy small skillet over medium-high heat. Brush pan lightly with olive oil. Remove pan from heat. Stir batter and ladle 2 tablespoons into corner of pan, tilting so batter just coats bottom. Return excess batter to bowl. Cook crepe until bottom is set (do not brown), about 5 seconds. Loosen edges with knife. Turn crepe and cook until second side is set (do not brown), about 5 seconds. Repeat with remaining batter, stirring occasionally. (Can be prepared ahead. Layer crepes between sheets of waxed paper and cool completely. Wrap tightly and refrigerate 3 days or freeze 1 month. Bring to room temperature before using.)
  • For Assembly:
  • Preheat oven to 350°F. Spoon 2 1/2 tablespoons filling down center of crepe. Place 1 mozzarella strip atop filling. Fold both sides of crepe over filling. Arrange seam side down in large baking dish. Repeat with remaining filling and crepes. (Can be prepared ahead. Cover crepes and sauce separately and refrigerate 1 day or freeze up to 2 weeks. Bring crepes to room temperature before baking. Rewarm sauce over low heat, stirring occasionally.)
  • Stir whole basil leaves into sauce. Pour sauce over crepes. Sprinkle lightly with additional Romano cheese. Cover tightly with foil. Bake until heated through, about 35 minutes.

  • Thaw out the spinach. Put the thawed spinach into a mesh strainer, flatten it out so you squeeze as much of the water out of the spinach as possible. Sprinkle with a pinch or two of kosher salt and remix (it is important to get some of the water out of the spinach, so the cheese filling doesn't become soggy).
  • Cook the manicotti shells in well-salted water. I like to stop them a bit before they are al dente, so they will not tear or shred when being handled.
  • Now mix up the cheese filling. To season the cheese up, mix the ricotta cheese in a large mixing bowl with the eggs, the Pecorino-Romano, two cups of the shredded mozzarella, the garlic powder, parsley, oregano, pepper, and finally the spinach. Don't add salt here, the filling will pick up plenty of saltiness from the prosciutto. Mix well by hand until uniformly mixed.
  • Next, prep the prosciutto-cheese roll ups. Spoon a generous 1/3 cup of the cheese filling unto each slice of prosciutto and roll up the prosciutto width wise. Don't be scared to roll the prosciutto somewhat tightly, the cheese will come out towards the edges of the prosciutto but it will keep together well enough to not fall off apart.
