4 (5 -6 ounce) cod fish fillets, skinned
6 ounces mature cheddar cheese, grated
2 teaspoons coarse grain mustard
4 tablespoons single cream
2 tablespoons fresh chives
6 small tomatoes
2 tablespoons fresh chives

Steps:

  • Preheat the oven to 350°F Season the fish with salt and pepper. Put into an oven proof dish.
  • Mix the cheese with the mustard, cream and chives. Spread evenly over each cod fillet.
  • Bake for 20 minutes until the fish is cooked and the top is golden.
  • Make the tomato and chive salad by slicing the tomatoes and arranging on four plates. Sprinkle with chives and season with salt and pepper.
  • Serve the fish on the salad. Accompany with new potatoes if you like.

2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly spray a baking pan with cooking spray.
  • Prepare Idahoan Signature™ Russets Mashed Potatoes according to package directions. Keep warm.
  • Mix bread crumbs, Parmesan cheese, garlic powder, salt, pepper, and parsley together in a bowl. Sprinkle each piece of cod with the bread crumb mixture.

1/4 cup breadcrumbs
1 tablespoon parmesan cheese

Steps:

  • Preheat oven to 350°F and lightly grease a baking sheet.

1 cup cracker crumbs

Steps:

  • Preheat oven to 400 degrees. Sprinkle the cod fillets on both sides with salt and pepper. Stir together the mustard and cumin and rub the mixture all over the cod. Coat the fillets in the cracker crumbs and place on a baking sheet. Bake until the fish is cooked through, about 15 minutes.
