6 slices bread
butter, to spread on bread
250 g ham
1 egg
300 ml milk
salt and pepper
1 cup of grated cheese

Steps:

  • Make sandwiches of bread, butter and ham.
  • Cut sandwiches into triangles and cut off crusts.
  • Arrange triangles in a oven-proof dish.
  • Beat egg and milk together; season with salt and pepper.
  • Pour over sandwiches and sprinkle with grated cheese.
  • Bake in a moderate oven, 180 degrees c for 30 minutes.

400 g gruyere
1 loaf French bread
6 large eggs
1 liter milk
1/4 teaspoon paprika
1/4 teaspoon nutmeg
30 g butter

Steps:

  • Cut cheese into small thin slices.
  • thinly slice the bread.
  • butter a souffle dish(or similar ovenproof dish).
  • fill with alternate layers of bread and cheese.
  • Bring milk to boil, beat eggs and take milk off the heat.
  • Pour beaten egg slowly into milk, stirring constantly.
  • season with salt,pepper and nutmeg and pour over bread and cheese
  • leave to soak for 10 mins, occasionally loosening edges with a spatula.
  • dot surface with knobs of butter and cook in a hot oven 450F for 40 mins.

1 tablespoon extra-virgin olive oil
2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
  • Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.
