- Heat the olive oil in a large pot over medium heat; cook and stir the onion, garlic, and ginger in the hot oil until fragrant, about 5 minutes. Add the chicken wings; cook and stir together for 1 minute. Stir the fish sauce into the pot, cover, and cook another 2 minutes.
- Pour the chicken broth into the pot. Add the sweet rice and stir. Bring the mixture to a boil; cover and cook for 10 minutes, stirring occasionally to assure the rice is not sticking to the bottom of the pot. Season with salt and pepper. Garnish with the green onion, and serve with lemon slices and additional fish sauce, if desired.

- Preheat oven to 325 degrees F (165 degrees C).
- Heat the olive oil in a Dutch oven over medium heat. Sear the chicken until golden, then set aside. Stir in the onion, garlic, and red pepper flakes; cook until the onions have softened, about 4 minutes. Add the rice, and season with salt, pepper, and saffron. Cook rice until golden, stirring constantly, about 10 minutes. Stir in the tomatoes, green chiles, and chicken broth. Place chicken thighs on top, then bring to a boil, cover, and place in the preheated oven.
- Bake for 1 hour in the preheated oven, then sprinkle the peas, pimentos, and olives on top. Pour in the water, but do not stir. Recover and continue baking until the chicken is fully cooked, about 20 minutes.

- In a paella pan or wide, shallow pan with a tight-fitting lid, heat the Achiote Oil over medium-high heat until the oil is rippling. Season the chicken with salt and pepper and add as many pieces skin side down to the pan as fit without touching. Cook, turning as necessary, until well browned on all sides, about 10 minutes. Remove the pieces as they are done and set aside. Adjust the heat under the pan, especially after you start removing chicken, so the chicken browns without the oil darkening.
- When all the chicken is removed from the pan, add the Sofrito and alcaparrado. Season, to taste, with salt and pepper. Raise the heat to high and boil until most of the water is evaporated from the Sofrito. Add the cumin and cloves.
- Stir in the rice until coated with oil. Return the chicken to the pan, pour in enough broth to cover the rice by the width of 2 fingers (about 1-inch), and bring to a boil. Cook over high heat until the level of liquid reaches the rice. Stir gently and reduce the heat to low. Cover the pan and cook until the liquid is absorbed, the chicken is cooked through, and the rice is tender but firm, about 20 minutes. Fluff the rice with a fork. The arroz con pollo can be brought to the table right in the pan or transferred to a large serving platter. Either way, garnish with the red pepper before serving.
- Heat the oil and annatto seeds in a small skillet over medium heat just until the seeds give off a lively, steady sizzle. Don't overheat the mixture or the seeds will turn black and the oil will turn a nasty green. Once they're sizzling, remove the pan from the heat and let stand until the sizzling stops. Strain and reserve in a jar with a tight-fitting lid at room temperature for up to 4 days.
- Chop the onion and Cubanelle or Italian peppers in the work bowl of a food processor until coarsely chopped. With the motor running, add the remaining ingredients 1 at a time and process until smooth. The sofrito will keep in the refrigerator for up to 3 days. It also freezes beautifully.
ARROZ CALDO (FILIPINO CHICKEN PORRIDGE)
Arroz Caldo is a delicious Filipino chicken porridge made by cooking rice in chicken stock until it's thick and creamy. Redolent of ginger, and served with a sunny array of condiments such as Calamansi, boiled eggs, and crisp garlic, this classic comfort food is the perfect way to brighten up a dreary day, while warming you up from the inside out.

- Remove the skin from the chicken and then mince up the skin.
- Add the chicken skin and oil to a heavy bottomed pot (such as a dutch oven), and fry over medium-low heat until the skin is golden brown and crisp. Transfer to a paper towel-lined plate to drain and set aside.
- Add the minced garlic and fry until the garlic is light brown, and not sizzling any more. Transfer to a paper towel-lined plate to drain and set aside.
- Add the onions and ginger to the pot and fry until the onions have started to become tender (but not browned).
- Add the rice to the pot and fry for about 30 seconds, to coat every grain with oil.
- Add the chicken stock, fish sauce, salt, and white pepper along with the chicken thighs.
- Bring the mixture to a boil and skim off any scum or fat that floats to the top.
- Turn down the heat to maintain a gentle simmer and cook the chicken until it's fall-apart tender (about 30 minutes). Be sure to stir this a few times to keep the rice from burning to the bottom of the pot.
- When the chicken is tender, remove it from the pot, and shred the meat using two forks. Keep the shredded chicken covered until the porridge is done.
- The Arroz Caldo should be starting to get thick at this point, so be sure to stir it more frequently to keep it from burning. When it is your desired consistency, the porridge is done. I usually let cook for another 20-30 minutes. This is a good time to prepare all your condiments.
- When the porridge has thickened to your liking, taste it, and add more salt if needed.
- Return the chicken to the pot and stir it in to reheat.
- Serve the Arroz Caldo garnished with scallions, boiled egg, fried garlic, chicken cracklins, Calamansi, and additional fish sauce.

My neighbour gave me this recipe as we were renovating the kitchen and I didn't have an oven for 6 months. I cooked everything outside on the BBQ and luckily I had a Wok burner connected to the BBQ. This dish is very easy and very yummy. I think Arroz con Pollo means 'Rice with Chicken' in Spanish. Enjoy we did :)

- Brown cubed chicken in some oil with the chopped garlic and onions.
- Add the chopped capsicum's sauté for a minute.
- Add the bay leaves, tomatoes and chicken stock.
- When the stock starts to boil stir in the rice and turmeric.

- Sprinkle chicken with salt and pepper.
- In large oven proof skillet, heat oil over medium heat.
- Add chicken, brown on all sides, turning as needed for about 20 minutes.
- Remove chicken.
- Add onion, green pepper, tomatoes, garlic and rice.
- Saute 5 minutes, stirring frequently, until lightly browned.
- Stir in broth, bay leaf, oregano, cayenne pepper and saffron.
- Bring to a boil.
- If skillet isn't oven proof or large enough, transfer to a 13 X 9 X 2 baking dish.
- Arrange chicken on top.
- Cover with lid or aluminum foil.
- Bake in 375 oven for 25 minutes or until chicken and rice are both tender.

- In a large heavy oven-ready pot or dutch oven with a lid, heat olive oil over medium high heat. Brown chicken in batches. Don’t overcrowd the pot or the chicken won’t brown nicely. Sauté the chicken pieces for about 3 minutes skin side down and a minute or two on the other side. Set browned chicken aside on a plate as you go.
- When all the chicken is browned, pour off all but 2 tablespoons of fat from the pot. Lower the heat to medium. Add onion, garlic and bell pepper. Cook, stirring from time to time, until the vegetables soften, about 5 minutes. Add the wine and simmer for 30 seconds, stirring to release any browned bits stuck to the bottom of the pot. Add tomatoes and their liquid, broth, bay leaf, oregano and remaining teaspoon of salt. To get full flavor from the saffron, either crush it in a mortar and pestle before adding it or hold your hands over pot and rub the saffron threads between your fingers or the palms of your hands and let them fall into the pot. (your hands will be yellow but it will come off with soap and water). Add the rice. Stir everything together. Bring the pot to a boil. Lower it to a simmer. Cover and simmer the rice for 4 minutes.
