1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
1-1/2 cups shredded sharp cheddar cheese, divided
1 can (6 ounces) french-fried onions, divided
2 packages (16 ounces each) frozen broccoli florets, thawed

Steps:

  • Preheat oven to 325°. In a large saucepan, combine soup, sour cream, 1 cup cheese and 1-1/4 cups onions; heat through over medium heat, stirring until blended, 4-5 minutes. Stir in broccoli. Transfer to a greased 2-qt. baking dish., Bake, uncovered, until bubbly, 25-30 minutes. Sprinkle with the remaining cheese and onions. Bake until cheese is melted, 10-15 minutes.

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

3 cups cooked shredded chicken
2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste
2 ½ cups shredded Cheddar cheese
1 ½ cups bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine chicken, broccoli, condensed soup, sour cream, and pepper in a bowl. Mix in 1 cup Cheddar cheese. Pour into a 2-quart casserole dish and top with remaining Cheddar cheese.
  • Combine bread crumbs and butter in a bowl. Sprinkle over casserole.
  • Bake in the preheated oven until bubbly and cheese is melted, 30 to 35 minutes.

2 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon salt

1 package (8 ounces) cream cheese, softened
2 bunches broccoli, cut into florets (about 9 cups)
2 cups shredded cheddar cheese
TOPPING:
1 cup crushed cheese crackers
1/4 cup shredded Parmesan cheese
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large saucepan, combine 3 cups cream, butter and seasonings; bring to a boil. Mix cornstarch and remaining cream until smooth; gradually stir into cream mixture. Return to a boil, stirring constantly; cook and stir 2 minutes or until thickened. Stir in cream cheese until melted. Stir in broccoli., Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with cheddar cheese. Bake, covered, 30 minutes., In a small bowl, mix topping ingredients; sprinkle over casserole. My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese

1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.

1 bag (32 oz, frozen broccoli pieces, thawed and drained)
1 brick (16 oz, velveeta cheese, cut into 1/2" cubes)
1 sleeve (about 31, buttery crackers, crushed)
1/4 cup butter (melted)

Steps:

  • Preheat oven to 350 and grease a 2-1/2 quart casserole dish.
  • Cut Velveeta Cheese into cubes.
  • Add broccoli, velveeta and half of the cracker crumbs to the dish and mix well.
  • Combine remaining cracker crumbs and butter and mix until you have a sand-like texture.
  • Sprinkle on top of broccoli and cheese mixture.
  • Bake for 45 minutes or until bubbly around the edges and heated through. Serve immediately.

1/4 cup sour cream

1 cup finely chopped onion
3/4 cup butter
12 eggs
2 cups heavy whipping cream
2 cups shredded cheddar cheese, divided
2 teaspoons salt
1 teaspoon pepper

Steps:

  • In large skillet, melt butter over medium heat.
  • Saute broccoli and onion for 5 minutes, or until crisp tender.
  • In a bowl, add eggs, cream, and 1 3/4 cups of the cheddar cheese, and mix well.
  • Add broccoli, salt, and pepper to the egg mixture.
  • Pour into a greased 3 quart casserole dish; set casserole inside of a larger dish, and pour 1 inch of water into the larger dish to make a water bath.
  • Bake at 350 degrees for 45 to 50 minutes or until a knife inserted in the center comes out clean.
  • Sprinkle with remaining cheese, and allow casserole to sit for 10 minutes before serving.
