These tiny cheddar biscuits are a delicious snack for cocktail parties. Beware - once you start, it's difficult to stop noshing on them!

1 pound butter, softened
1 pound sharp Cheddar cheese, shredded
1 cup chopped pecans, toasted
1 teaspoon cayenne pepper
1 teaspoon salt
4 ½ cups all-purpose flour

Steps:

  • In a large bowl, mix together the butter, Cheddar cheese, pecans, cayenne pepper and salt until well blended. Gradually mix in flour, using your hands to work in the last bit. The result will be a stiff dough much like shortbread. Form the dough into logs about 1 inch thick, and 10 inches long. Wrap each log in waxed paper, and refrigerate until firm, at least 3 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Unwrap the chilled logs of dough, and slice into 1/4 inch thick rounds using a sharp knife. Place slices about 1 inch apart onto cookie sheets lined with parchment paper.
  • Bake for exactly 12 minutes in the preheated oven, until firm and slightly browned at the edges. Allow wafers to cool for 1 minute before removing from the pan.

1 cup butter or margarine, softened
1 1/2 teaspoons garlic salt
1/2 teaspoon chipotle chile powder
3 cups shredded extra-sharp Cheddar cheese (from two 8-oz bags)

Steps:

  • In large bowl, beat all ingredients except cheese with electric mixer on medium speed until dough forms. Add cheese; beat on low speed until dough forms a ball. Shape dough into 2 (6x2-inch) logs. Wrap in plastic wrap; refrigerate at least 2 hours or up to 24 hours.
  • Heat oven to 350°F. Unwrap dough; cut into 1/4-inch slices with sharp knife. On ungreased cookie sheets, place slices 1 inch apart.
  • Bake 22 to 25 minutes or until crisp around edges. Immediately remove from cookie sheets to cooling racks. Cool completely.

Cut out these Cheese Wafers from a cheddar dough. These savory Cheese Wafers make tasty nibbles on their own or with your favorite dip or spread.

1/3 cup butter or margarine, softened
1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese, at room temperature
1 tsp. LEA & PERRINS Worcestershire Sauce
1 cup flour
1/8 tsp. ground red pepper (cayenne)

Steps:

  • Heat oven to 375°F.
  • Beat butter, cheese and Worcestershire sauce in large bowl with electric mixer on medium speed until well blended. Add flour and pepper; mix well.
  • Roll dough to 1/8-inch thickness on lightly floured surface; cut into a variety of shapes with small cookie cutters. Place on ungreased baking sheets.
  • Bake 10 to 12 min. or until edges are lightly browned. Cool completely on wire racks. Store leftover wafers in airtight container at room temperature.

8 ounces sharp cheddar cheese, grated
1 teaspoon cayenne pepper
1/2 teaspoon salt
2 cups Rice Krispies

Steps:

  • Preheat oven to 350.
  • Cut butter into flour.
  • Add cheese and seasonings.
  • Fold in cereal.
  • Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.
  • Bake for 10-15 minutes.
  • Don't let them get too brown!

1 lb sharp cheddar cheese, finely grated
1 cup finely chopped pecans
1 cup chopped dates
1/2 teaspoon ground red pepper
4 1/4 cups all-purpose flour

Steps:

  • In a large bowl, combine butter, cheese, pecans, dates and red pepper.
  • Beat at medium speed with an electric mixer until well combined.
  • Gradually add flour, beating until just combined.
  • Wrap dough in plastic wrap, and refrigerate for 2 hours.
  • Preheat oven to 350 degrees F.
  • Line baking sheets with parchment paper.
  • Roll dough into 1-inch balls.
  • Place balls 3 inches apart on prepared baking sheets.
  • Using a flat-bottomed glass dipped in sugar, flatten balls to 1/4-inch thickness.

½ cup butter, softened
1 ½ cups all-purpose flour
½ pound shredded Cheddar cheese
1 teaspoon salt
1 pinch crushed red pepper flakes
1 dash hot pepper sauce
¾ cup chopped pecans

Steps:

  • In a medium size mixing bowl, blend together butter or margarine and flour. Mix in the Cheddar cheese, salt, red pepper, hot pepper sauce, and pecans. Form the dough into a roll, wrap in parchment paper, and refrigerate over night.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice dough into very thin wafers. Bake for 15 to 20 minutes, or until crisp.

These buttery little bites of cheese heaven are so easy to make and only require 7 ingredients.

8 ounces extra-sharp cheddar cheese
1/2 cup salted butter, (softened)
1 cup all-purpose flour
1/2 teaspoon ground cayenne pepper
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1 cup crisp rice cereal

Steps:

  • Preheat oven to 350 degrees
  • Grate the cheese on the fine side of a cheese grater.
  • Combine cheese, butter, flour, cayenne pepper, Worcestershire sauce, and salt in a large bowl. Mix together with a wooden spoon. You may have to use your hands to get it mixed together well.Note: You can use an electric mixer for this step, but mix the Rice Krispies in by hand.
  • Once all the flour has been incorporated, add the cereal and gently mix it in.
  • Shape mixture into 1-inch balls. Place them spread out on 2 ungreased baking sheets. Flatten each ball some with a fork.
  • Bake for 15 minutes. Cool on pan.
