BROCCOLI WITH CHEDDAR CHEESE SAUCE

Steps:
- Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
- Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.
- Melt the butter in a medium saucepan over medium heat until foamy. Spoon the flour over the butter and cook, while stirring, until the flour becomes pasty. Pour in the milk while whisking and season with salt and pepper. Bring to a boil, reduce the heat to a medium simmer and cook for 5 to 8 minutes. Slowly add the cheese by handfuls and stir with a wooden spoon until melted and smooth.
PERFECT CHEESE SAUCE
Steps:
- Melt the butter in a medium saucepot over medium heat. Stir in the flour and cook, stirring often, until a thick paste forms and turns golden brown. Stir in the taco seasoning and cook 30 seconds more.
- Gradually whisk in the milk, adding 1 cup at a time. Allow the mixture to come to a simmer before adding the next. It will be extremely thick at first and will thin with each addition. When all the milk is added bring the sauce to a simmer and cook 5 more minutes. Whisk in the cream cheese.
- Remove the sauce from the heat. Add the Cheddar and Parmesan and whisk until smooth. The sauce keeps refrigerated for up to 2 weeks or frozen for 6 months. If using from cold, carefully bring the sauce back to a boil before serving.
LEMON SAUCE I
Wonderful dessert sauce. Serve with gingerbread or cake.

- Pour the milk in a large saucepan, place it over medium heat, and let it warm until you see small bubbles forming along the edge of the pan.
- Meanwhile, in another saucepan over medium heat, melt the butter.
- Sprinkle the flour over the bubbling butter and stir constantly until a thick paste, or roux, forms. It may become quite thick and almost paste-like. This is okay. And if it doesn't become crazy thick, that's okay, too. Expect this to take 1 to 2 minutes.
- Constantly whisking, slowly pour the warm milk into the flour and butter mixture in a steady stream. Continue cooking and whisking almost constantly until the mixture thickens considerably, about 5 minutes. It should be thick but still spreadable and perhaps even pourable.
- Add the cheese and whisk constantly until it completely melts. Season with the cayenne or hot sauce and salt and pepper to taste. If you're the fussy sort, you can strain the sauce through a sieve to remove any lumps before serving. The sauce will thicken even more upon cooling.

- Preheat oven to 350 degrees.
- Cut the cauliflower into large bite-size pieces.
- Cook the cauliflower in a large pot of salted water. The cauliflower should be tender, but firm. The cooking time is approximately 5 to 6 minutes.
- While the cauliflower is cooking, start the cheese sauce.
- Melt two tablespoons of butter in a small saucepan.
- When the butter has melted completely, add the flour and stir to combine.
- Cook the flour for 1 to 2 minutes, stirring occasionally.
- Slowly begin to add milk, whisking constantly. With each addition of milk the sauce should thicken.
- Add the dry yellow mustard and stir to combine.
- Add 4 ounces of cheese. Stir until the cheese is completely melted and the sauce is smooth.
- Place the cooked cauliflower into a large casserole dish.
- Pour the cheese sauce over the cauliflower.
- Sprinkle the remaining 4 ounces of cheese over the cauliflower.
- Bake at 350 degrees for 15 minutes or until the cheese is slightly browned.

- When the milk gets to 85°F, add culture, stir in with an up-and-down motion, cover, and ferment for 1 hour. (Note: It does not have to stay at 85. If it naturally drops in temperature, that is OK.)
- Stir to homogenize the milk, and slowly fold in the diluted rennet. Using an up-and-down motion with your spoon will ensure that the rennet works its way through all the milk, so you can get the highest possible yield.
- Remove from heat source and allow the cheese to set for 1 hour, or until the whey begins to separate from the curd. You should see a layer of mostly clear whey floating on top of the curd, and the curd should be pulling away from the sides of the pot.
- Using the knife, carefully cut the curds into ¼-inch cubes and allow to set for 5 minutes. Do not stir.
- Over the next 30 minutes, slowly heat the curds to 100°F, stirring frequently. As you stir, the curds will shrink.
- Once the curds are at 100°F, maintain the temperature and continue stirring for the next 30 minutes. If the curds get too hot, remove from heat.
- After 30 minutes, stop stirring and allow the curds to settle to the bottom of the pot. This will take about 20 minutes.
- Pour the curds into a colander. Place the colander and curds back into the cheese pot and allow to drain for 15 minutes.
