JACK'S MEATBALL SLIDERS

4 or 5 cloves garlic, chopped (not too small; larger chunks, about 1/4 inch)
1/2 teaspoon red pepper flakes
2 tablespoons extra-virgin olive oil
1 28-ounce can crushed tomatoes
1/2 teaspoon kosher salt
1 pound ground beef
1 pound ground sausage (preferably spicy pork)
1/2 cup finely chopped onion
1/4 cup minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh parsley, plus more for garnish
1 large egg
1/2 cup grated parmesan, plus more for garnish
1 cup panko breadcrumbs
12 ounces ricotta cheese
2 teaspoons kosher salt
Olive oil
33 slider-size potato buns, toasted

Steps:

  • Make the sauce: In a large saucepan over medium heat, saute the garlic and red pepper flakes in the oil 1 minute, stirring. (Do not brown the garlic.) Stir in the tomatoes and salt. Bring the sauce to a boil, reduce the heat to low and simmer, stirring occasionally, 15 minutes.
  • Meanwhile, make the meatballs: Preheat the oven to 450 degrees F. In a large bowl, mix the beef, sausage, onion, garlic, thyme, parsley, egg, parmesan, breadcrumbs, ricotta and salt with your hands. Form 1 1/2-inch balls out of the meat mixture. Heat a large ovenproof skillet (preferably cast iron) with a bit of olive oil. Working in batches, add the meatballs and brown on all sides, about 4 minutes. Return all the meatballs to the skillet and place in the oven to finish cooking, 10 minutes.
  • Toss the meatballs with 3 cups of the prepared sauce. Place on the toasted slider buns and sprinkle with parmesan and parsley.

1 package Cheddar Jack & Bacon Kraft Fresh Take cheese (6 oz.)
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon minced garlic
1/2 cup Kraft Honey Hickory Smoke barbecue sauce
12 Hawaiian rolls

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with foil. Spray with nonstick spray.
  • Mix the ground chicken, cheese and breadcrumbs, salt, pepper, and garlic together. Shape into 24 meatballs.
  • Place on a foil lined pan. Bake for 20 minutes.
  • Place meatballs in a small bowl and coat with barbecue sauce. Serve immediately or place in a crock pot on low until you are ready. Serve on Hawaiian rolls.

1 pound ground beef
½ cup dry bread crumbs
¼ cup finely minced onion
1 egg, beaten
1 teaspoon Worcestershire sauce
1 teaspoon Montreal steak seasoning
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (8 ounce) package sharp Cheddar cheese, cut into 8 cubes
4 slices bacon, cut in half
2 tablespoons barbecue sauce (such as Sweet Baby Ray's®)

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Place a cooking rack on top of a baking sheet.
  • Combine ground beef, bread crumbs, onion, egg, Worcestershire sauce, steak seasoning, salt, and pepper in a bowl; mix until combined. Shape mixture into 8 meatballs, forming each one around a cube of Cheddar cheese. Wrap each meatball with 1/2 slice of bacon and place seam-side down on the cooking rack, leaving 1 to 2 inches between each one.
  • Bake in the preheated oven for 20 minutes. Reduce heat to 375 degrees F (190 degrees C) and continue baking until meatballs are browned, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
  • Remove from oven and drizzle meatballs with barbecue sauce.

8 ounces 93% lean ground beef
½ cup panko bread crumbs
¾ cup barbeque sauce (such as Sweet Baby Ray's®), divided
1 tablespoon steak sauce
10 slices pepper Jack cheese
10 slider buns
10 slices cooked bacon
¼ cup slivered onion
¼ cup roasted red pepper, cut into strips

Steps:

  • Attach the meat grinder attachment to an electric stand mixer (such as KitchenAid®). Run enough bacon through the meat grinder to make 8 ounces ground bacon.
  • Combine ground bacon, beef, bread crumbs, 1/4 cup barbeque sauce, and steak sauce in a bowl. Mix until well combined and shape into 2-inch round balls. Set meatballs on a baking sheet.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake meatballs until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), about 25 minutes.
  • Place a slice of cheese on top each meatball. Toast slider buns if desired. Place a meatball between each slider bun. Top with cooked bacon slices, onion, remaining barbeque sauce, and roasted red bell peppers.

12 frozen bread dough dinner rolls
1 egg
1 teaspoon water
1 tablespoon sesame seeds
KABOBS:
3/4 cup seasoned bread crumbs
6 bacon strips, cooked and crumbled
2 eggs, lightly beaten
1-1/2 teaspoons Worcestershire sauce
1/2 teaspoon garlic salt
1-1/2 pounds ground sirloin
1 medium sweet red pepper or green pepper, cut into 1-inch pieces
1 small red onion, cut into 1-inch pieces
6 slices process American cheese, cut into quarters

Steps:

  • Thaw dough according to package directions. Cut each roll in half; reshape portions into balls. Place 2 in. apart on lightly greased baking sheets. Cover with clean kitchen towels; let rise in a warm place until almost doubled, about 30 minutes. , Uncover dough; gently press to flatten slightly. Whisk egg and water; brush over tops. Sprinkle with sesame seeds. Bake at 400° for 8-10 minutes or until golden brown. Remove to wire racks., In a large bowl, combine the first five kabob ingredients. Crumble beef over mixture and mix well. Shape into 24 patties. On 24 metal or soaked wooden skewers, alternately thread patties, red pepper and onion, inserting patties sideways., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill kabobs, covered, over medium-high heat for 4-5 minutes on each side or until patties are no longer pink. Remove from the grill; immediately top patties with cheese. Cut buns in half; assemble sliders.

2 cups shredded Cheddar cheese, divided
1 pound ground beef
1 small onion, chopped
½ (14 ounce) can diced tomatoes with garlic and onion

1 ½ teaspoons Worcestershire sauce
¼ teaspoon salt
¼ teaspoon ground black pepper
12 bacon strips, cooked and crumbled
½ cup butter
2 tablespoons brown sugar
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place rolls, without separating them, on a flat work surface. Cut in half horizontally. Arrange bottom half in the prepared pan. Sprinkle 1 cup Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted, 3 to 5 minutes.
  • Cook and stir beef and onion in a skillet until beef is browned, 5 to 8 minutes. Drain grease. Stir in tomatoes, 1 1/2 teaspoons Dijon mustard, 1 1/2 teaspoons Worcestershire sauce, salt, and pepper. Cook until fully combined, 1 to 2 minutes.
