CHEDDAR HAM CHOWDER

Cheddar Ham Chowder image

Delicious, very modifiable chowder. Serve this with a salad and rolls or beer bread. Yum! Consider this a basic recipe that can be modified according to specific tastes and needs. Carrots and celery can be added when cooking the potatoes if desired. Bacon would be delicious in this as well.

Time 50m

Yield 6

Number Of Ingredients 12

2 cups water
2 cups peeled and cubed potatoes
½ cup chopped onion
2 cloves garlic, chopped
salt and ground black pepper to taste
¼ cup butter
¼ cup all-purpose flour
2 cups 1% milk
1 (8 ounce) package low-fat cream cheese
1 cup shredded sharp Cheddar cheese
1 (15 ounce) can corn
1 ½ cups cubed fully cooked ham

Steps:

  • Bring water, potatoes, onion, garlic, salt, and pepper to a boil in a large saucepan. Reduce heat, cover with a lid, and simmer until vegetables are just tender, 8 to 10 minutes. Remove saucepan from heat.
  • Melt butter in a separate large saucepan over medium heat. Stir flour into melted butter until smooth. Gradually stir milk into butter-flour mixture; bring to a boil. Reduce heat and simmer, stirring constantly, until thickened, about 2 minutes.
  • Stir cream cheese and Cheddar cheese into milk mixture until melted. Pour potato mixture, including liquid, into milk-cheese mixture; add corn and ham. Cook, stirring occasionally, until soup is heated through, 10 to 15 more minutes.

APPLE, HAM AND CHEDDAR BISCUIT CUPS

Apple, Ham and Cheddar Biscuit Cups image

A tablespoon of butter in the pan, melty melty, then the apple plus brown sugar plus cinnamon. What happens is the sugar caramelizes into the butter, and this almost toffee-like stickiness gets the apple super sweet and browned. And then we add savory. The ham. The chopped rosemary. A pinch of salt. Cook it until the ham gets little sear marks here and there. That combo right there of sweet and savory is the juicy secret to life and love.

Provided by Bev Weidner

Categories     main-dish

Time 40m

Yield 10 servings

Number Of Ingredients 9

1 tablespoon unsalted butter
2 apples (any kind you love!), finely diced
1 tablespoon light brown sugar
1/2 teaspoon ground cinnamon
Kosher salt
1 cup diced ham
2 teaspoons minced fresh rosemary, plus more for garnish (from about 2 sprigs)
Two 6-ounce tubes refrigerated buttermilk biscuit dough (10 biscuits total)
4 ounces extra-sharp Cheddar, grated (about 2 cups)

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a medium skillet over medium heat. Add the apples, sugar, cinnamon and a pinch of salt. Saute until the apples are tender and start to stick when you scoot them around the pan, about 5 minutes. The butter and sugar will caramelize and become slightly sticky. Add the ham and rosemary. Saute until the ham gets some nice sear marks here and there, 3 to 5 minutes.
  • Meanwhile, roll out the biscuits until 3 1/2 inches wide and gently press them into 10 cups of a muffin tin. Spoon the filing evenly into each cup, then top each with the Cheddar. Bake until the cheese is melted and starting to lightly brown and bubble, about 15 minutes.
  • Pop each biscuit out of the tin and transfer to a platter or cutting board. Garnish with rosemary and serve immediately.

CHEDDAR HAM CUPS

Some of the best comfort food around! I will try to get a better picture sooner or later - but by the time I remember to get the camera out they are usually gone!...

CHEDDAR AND HAM QUICHE CUPS

Cheddar and Ham Quiche Cups image

These easy Cheddar and Ham Quiche Cups are made with a puff pastry crust, making these a great quick-and-easy breakfast recipe!

Provided by Julie Evink

Categories     Breakfast

Time 37m

Number Of Ingredients 7

1 sheet puff pastry (thawed (boxes of puff pastry come with 2 sheets))
4 eggs (large)
2/3 cup milk (I used 2% but whole milk is fine)
1/3 cup ham (chopped or cubed (I used smoked ham deli meat))
1/3 cup cheddar cheese (shredded (I used sharp white cheddar and sharp cheddar))
salt and pepper to taste (I used 1/4 tsp table salt, 1/4 tsp seasoned salt, and 1/4 tsp black pepper)
1/4 tsp dried Italian herbs

Steps:

  • Preheat oven to 400 degrees.
  • On a baking mat or lightly floured surface, roll out puff pastry into a 12x12 square. With a sharp knife, cut the pastry into 9 equal squares.
  • Place each puff pastry square into the cups of a non-stick muffin tin (the muffin tin does not need to be greased-the puff pastry has enough butter in it), pressing the dough into the bottom of the muffin cups and up the sides, letting the four corners rest on top of the muffin tin (see picture above for more detail).
  • Sprinkle ham and cheddar cheese evenly in the bottoms of each quiche cup.
  • In a bowl, whisk eggs, milk, and seasonings together. Pour egg mixture into each quiche cup, filling about 2/3 of the way full (the eggs and the puff pastry will rise as it bakes).
  • Bake for about 16-17 minutes, or until eggs are set and puff pastry is puffed and golden brown.
  • Allow to cool a couple of minutes before removing from the muffin tins and serve warm.
  • Enjoy!
  • *For freezer tips, see the tips above in the post.
