Delicious, very modifiable chowder. Serve this with a salad and rolls or beer bread. Yum! Consider this a basic recipe that can be modified according to specific tastes and needs. Carrots and celery can be added when cooking the potatoes if desired. Bacon would be delicious in this as well.

Steps:
- Bring water, potatoes, onion, garlic, salt, and pepper to a boil in a large saucepan. Reduce heat, cover with a lid, and simmer until vegetables are just tender, 8 to 10 minutes. Remove saucepan from heat.
- Melt butter in a separate large saucepan over medium heat. Stir flour into melted butter until smooth. Gradually stir milk into butter-flour mixture; bring to a boil. Reduce heat and simmer, stirring constantly, until thickened, about 2 minutes.
- Stir cream cheese and Cheddar cheese into milk mixture until melted. Pour potato mixture, including liquid, into milk-cheese mixture; add corn and ham. Cook, stirring occasionally, until soup is heated through, 10 to 15 more minutes.

- Preheat oven to 400°F (200°C). Whisk eggs with mustard. In separate bowl, toss ham with cheese, green onion and tomato. Divide evenly between the 24 cups of greased mini muffin tin. Pour egg mixture over top.
- Bake for 15 to 18 minutes or until eggs are set. Cool for 5 minutes. Run a thin knife around edge of each frittata to remove. Serve warm or cool completely.

A tablespoon of butter in the pan, melty melty, then the apple plus brown sugar plus cinnamon. - Preheat the oven to 375 degrees F.
- Melt the butter in a medium skillet over medium heat. Add the apples, sugar, cinnamon and a pinch of salt. Saute until the apples are tender and start to stick when you scoot them around the pan, about 5 minutes. The butter and sugar will caramelize and become slightly sticky. Add the ham and rosemary. Saute until the ham gets some nice sear marks here and there, 3 to 5 minutes.
- Meanwhile, roll out the biscuits until 3 1/2 inches wide and gently press them into 10 cups of a muffin tin. Spoon the filing evenly into each cup, then top each with the Cheddar. Bake until the cheese is melted and starting to lightly brown and bubble, about 15 minutes.
- Pop each biscuit out of the tin and transfer to a platter or cutting board. Garnish with rosemary and serve immediately.

- Preheat oven to 400 degrees.
- On a baking mat or lightly floured surface, roll out puff pastry into a 12x12 square. With a sharp knife, cut the pastry into 9 equal squares.
- Place each puff pastry square into the cups of a non-stick muffin tin (the muffin tin does not need to be greased-the puff pastry has enough butter in it), pressing the dough into the bottom of the muffin cups and up the sides, letting the four corners rest on top of the muffin tin (see picture above for more detail).
- Sprinkle ham and cheddar cheese evenly in the bottoms of each quiche cup.
- In a bowl, whisk eggs, milk, and seasonings together. Pour egg mixture into each quiche cup, filling about 2/3 of the way full (the eggs and the puff pastry will rise as it bakes).
- Bake for about 16-17 minutes, or until eggs are set and puff pastry is puffed and golden brown.
- Allow to cool a couple of minutes before removing from the muffin tins and serve warm.
