1 (9 inch) pie crusts
4 eggs
1/3 cup heavy cream
12 ounces cheddar cheese, grated (I recommend Cabot Preferred Stock)
6 scallions, thinly sliced
1/4 cup toasted chopped walnuts or 1/4 cup pecans

Steps:

  • Preheat oven to 350.
  • Bake pie crust for 10 minutes.
  • Mix eggs, cream, cheese & scallions in a large bowl and pour into the prepared pie crust.
  • Bake for 10 minutes.
  • Sprinkle the toasted nuts on top of the pie and bake for an additional 20 minutes.
  • Let cool and enjoy.

2 1/2 cups all-purpose flour
Salt
2 sticks cold unsalted butter, cut into small pieces
1/4 to 1/2 cup ice water
1 cup shredded sharp white cheddar cheese

Steps:

  • Pulse flour and 1 teaspoon salt in a food processor until combined. Add butter, and pulse until mixture resembles coarse meal, about 10 seconds. Drizzle 1/4 cup water evenly over mixture. Pulse until mixture just begins to hold together (dough should not be wet or sticky). If dough is too dry, add more water, 1 tablespoon at a time, and pulse. Add cheese; pulse until combined.
  • Shape dough into 2 disks, and wrap each in plastic wrap. Refrigerate until chilled, about 30 minutes or up to overnight. Dough can be frozen up to 1 month; thaw before using.

I found this recipe in a very old Farm Journal Best Ever Pies Cookbook in 1980. This is perfect with Apple Pie or Pear Pie Filling.

2 cups flour
1 1/4 cups shredded cheddar cheese
1/2 teaspoon salt
2/3 cup Crisco
2 tablespoons sugar
5 -6 tablespoons ice water

Steps:

  • Combine flour, cheese and salt in large bowl.
  • Cut in shortening until coarse crumbs form.
  • Sprinkle water into mixture a tablespoon at a time. Press dough with one hand adding water until a ball forms.
  • Let chill 1 hour.
  • This recipe will make 1 (2 crust) 8 or 9 inch pie. Bake according to pie directions.
  • This also works well in food processor.

A hearty pie with a mustard and fennel crust, this makes a stunning veggie centrepiece for everyday or entertaining

140g unsalted butter , plus extra for greasing
375g plain flour
¼ tsp mustard powder
1 tsp fennel seeds
2 large King Edward potatoes , cut into small cubes
2 tbsp unsalted butter
4 large banana shallots , sliced
7 spring onions , finely sliced
3 medium eggs
150ml double cream
1 tsp thyme leaves
200g strong cheddar , grated
1 egg yolk , beaten
1-2 tsp milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. First, make the filling. Boil the potatoes in a large pan of salted water for 10-15 mins until a knife is easily inserted but the potatoes still hold their shape.
  • Melt the butter in a medium saucepan over a low heat. Slowly sweat the shallots and spring onions with a pinch of salt until softened, stirring occasionally, about 10-12 mins. Meanwhile, whisk together the eggs, cream, thyme, cheese and some seasoning. Set aside.
  • To make the pastry, melt the butter with 100ml water in a small saucepan and bring to a simmer. Tip the rest of the pastry ingredients and 1 / 2 tsp salt into a large bowl. Make a well in the centre and pour in the butter. Stir with a wooden spoon, then bring together with your hands, kneading lightly for a few mins.
  • Grease a large 20-26cm pie dish. On a lightly dusted work surface, roll out two-thirds of the pastry big enough to fill the base and sides of your dish. Use the remaining pastry to roll out a lid.
  • Add the potato and shallot mixture to the beaten egg filling, and spoon into your pastry case. Cover with the pastry lid and crimp the edges decoratively.
  • Finally, beat the egg yolk with the milk and glaze the pie. Poke a couple of small steam holes in the top, chill for 10 mins, then bake in the oven for 40-45 mins.

1/4 cup Unsalted butter
6 Cooking onions (sliced)
1 tsp Kosher salt
1 tsp Black pepper
3/4 cup Beer (Pale Ale or IPA)
1 lb Gruyere cheese (grated)
0.5 lb Cheddar cheese (grated)
2 Eggs
5 tbsp Sour cream
1 tsp Worcestershire sauce
1 tbsp Dijon mustard
3 cups All purpose flour
1 tbsp Dried mustard powder
3/4 tsp Kosher salt
1 cup Unsalted butter
1/3 cup Milk
1 Egg (beaten with 1 tablespoon of milk)

Steps:

  • Melt butter in a large saucepan over low heat. Add sliced onion, salt, and pepper and stir to coat. Cook for 5 minutes, stirring frequently.
  • Pour in the beer, stir well, and raise the heat to medium and cook, stirring until the onions are soft, around 8 minutes. Set aside to cool or cover and chill in the refrigerator.
  • In a mixing bowl, stir together the cooled onions, cheeses, eggs, sour cream, Worcestershire sauce and mustard until combined. Set aside filling to make pastry dough.
  • Preheat oven to 375 F. Line a springform pan or casserole dish with parchment paper and set aside.
  • In a large bowl, whisk together the flour, mustard powder, and kosher salt. Make a well in the centre of the flour and set aside.
  • Place a large saucepan over medium heat. Gently bring the milk and butter to a gentle simmer. Pour the hot liquid into the flour well. Use a rubber spatula to mix together until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead until smooth, about 2-3 minutes.
  • Divide dough in two. While the dough is still hot, roll each piece between two pieces of parchment paper or plastic wrap to the size of the base of your pan. Place one of the rounds of dough into the prepared pan. Starting at the centre of the dough press outward, gently working the dough outward and up the sides of the pan.
  • Scrape the filling into the crust and position the second crust over the filling, trimming the excess away and pinching the seams where the bottom and top crusts meet together.
  • Brush the top crust with the egg wash and use a sharp knife to cut three vent holes. Place your pie crust on a cookie sheet and bake for 60 to 70 minutes. The Onion and Cheese Pie is done baking once the exterior is a glossy brown and filling bubbles.
  • Allow the pie to cool until warm or room temperature before slicing. Garnish with chopped parsley and serve with a fresh salad.

Broccoli Cheddar Pot Pies with Puff Pastry image

These single serve pot pies are made a hearty broccoli and potato mixture topped with puff pastry.

1 sheet (8.5 ounces) puff pastry (see note #1)
8 ounces Yukon gold potato
1 teaspoon plus 1/4 teaspoon salt (divided)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 and 1/4 cups cashew milk (see note #2)
3 ounces shredded sharp cheddar cheese
12 ounces steamed broccoli florets

Steps:

  • Thaw puff pastry according to package instructions. Preheat the oven to 400 degrees F.
  • Meanwhile, dice the potato into 1/2 inch pieces. Place in a medium stock pot and cover with one inch cold water and 1 teaspoon of salt. Bring to a boil over high heat, boiling until potatoes are fork tender. This will take 10-12 minutes. Drain the water from the potatoes.
  • While the potatoes are boiling, start making the sauce in a large pan. Heat the pan over medium-high heat. Once hot, add butter and let it melt. Sprinkle in the all-purpose flour. Use a silicon whisk to gently stir the flour and butter together. Continue stirring until the flour is cooked and golden, about 1-2 minutes.
  • Slowly pour in the milk, whisking consistently to prevent lumps from forming. Once the milk is added, sprinkle in remaining 1/4 teaspoon salt. Let the sauce come to a rapid simmer over medium-high heat. Once simmering, stir in the cheddar cheese.
  • Simmer, stirring occasionally, until the sauce is thick enough to the coat the back of a spoon without falling off.
  • Mix together the potatoes and broccoli, making sure to drain off any excess liquid. Season to taste with salt and pepper. Divide between four 8 ounce ramekins (see note #3). Divide the sauce between the ramekins.
  • Cut out ramekin-sized circles from the thawed puff pastry. You can do this by using a large biscuit cutter or by using the ramekin as a stencil. Place puff pastry on top of each ramekin.
  • Bake at 400 for 15 minutes, or until the puff pastry is golden. Let cool for 5 minutes before serving. Enjoy!

1 1/2 sticks (3/4 cup) cold unsalted butter, cut into 1/2-inch cubes
1/2 teaspoon fine sea salt
8 to 10 tablespoons ice water
For filling and glaze
1 medium boiling potato (5 oz)
2 cups finely chopped onion (1 large)
2 tablespoons unsalted butter
3 large eggs
1/4 cup heavy cream
1 teaspoon finely chopped fresh thyme or 1/2 cup finely chopped fresh parsley
1/4 teaspoon fine sea salt
1/4 teaspoon black pepper
9 oz good-quality white Cheddar, coarsely grated (2 1/2 cups)

a pastry or bench scraper; a 9-inch tart pan or pie plate

Steps:

  • Make dough:
  • Blend together flour, butter, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until most of mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
  • Drizzle evenly with 8 tablespoons (1/2 cup) ice water and gently stir with a fork (or pulse in processor) until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water, 1 tablespoon at a time, stirring (or pulsing) until incorporated, then test again. (Do not overwork mixture, or pastry will be tough.)
  • Turn out mixture onto a work surface and divide into 6 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute butter. Gather dough together with scraper and press into 2 balls, one slightly bigger than the other, then flatten into disks. Chill each disk, wrapped in plastic wrap, until firm, at least 1 hour.
  • Make filling and glaze while dough chills:
  • Peel potato and cut into 1/4-inch dice (3/4 cup). Steam potato in a steamer set over boiling water, covered, until just cooked through, about 3 minutes. Transfer to a plate to cool.
  • Cook onion in butter in a 10-inch heavy skillet over moderately low heat, stirring, until softened, 8 to 10 minutes. Transfer to plate to cool.
  • Whisk together 2 eggs, cream, thyme, salt, and pepper in a large bowl until combined well. Stir in potato, onion, and cheese.
  • Whisk remaining egg in a small bowl and reserve for egg glaze.
  • Assemble and bake pie:
  • Put oven rack in middle position and put a large baking sheet on it, then preheat oven to 425°F.
  • Roll out larger piece of dough into a 13-inch round on a lightly floured surface with a lightly floured rolling pin and fit into tart pan. Spoon filling evenly into pie shell and brush some of egg glaze on rim of shell.
  • Roll out smaller piece of dough into a 12-inch round in same manner, then cover pie with it. Trim edges of pie, leaving a 1/2-inch overhang, then press edges together and crimp decoratively.
  • Brush top of pie lightly with some of remaining egg glaze. Cut several steam vents in top crust with a small sharp knife.
  • Bake pie on hot baking sheet until golden brown, 35 to 40 minutes. Cool on a rack at least 15 minutes. Serve warm or at room temperature.

CAULIFLOWER, LEEK & CHEDDAR PIE WITH MUSTARD & THYME PASTRY

500g plain flour, plus extra for dusting
250g cold butter, cubed
1½ tbsp English mustard
1 tbsp thyme leaves
1 egg, beaten to glaze
1 small to medium cauliflower
1 tbsp olive oil
2 medium leeks, sliced
2 eggs
1 tsp English mustard
400g mature cheddar, grated

Steps:

  • For the pastry, put the flour in a food processor with the butter, mustard and thyme leaves, and pulse until the mixture resembles breadcrumbs. Add 4-6 tbsp cold water and pulse again until it forms a ball. Wrap and chill for 30 mins.
  • For the filling, break the cauliflower into small bite-sized florets (keep the leaves for stock or roast until crisp and serve alongside the pie), and chop the stalk into 2cm pieces. Steam in a steamer or steamer basket set over a pan of simmering water for 8-10 mins until the stalk pieces are just tender, but not cooked through. Remove from the steamer and leave to cool and steam-dry on a plate.
  • Heat the oil in a frying pan over a low heat and fry the leeks with a pinch of salt for 10 mins until softened. Add a splash of water if they start to turn lightly golden and cook until the water has evaporated. Remove from the heat.
  • Cut off a third of the pastry and set aside. Roll out the rest on a floured work surface to a round large enough to line a 25cm wide and 7cm deep pie dish (enamel pie dishes work well for this). Line the dish and set aside.
  • Whisk the eggs in a large bowl with some seasoning. Reserve a little of the beaten egg in a small bowl, then fold the cheese, cauliflower and leeks into the remaining egg. Tip the filling into the pie dish and spread out evenly. Roll out the remaining pastry and use to cover the pie, using some of the reserved egg to seal it to the edge. Crimp the edge and trim any excess, then chill for 20 mins.
  • Heat the oven to 200C/180C fan/gas 6. Brush the top of the pie with the remaining beaten egg and bake for 45 mins until golden and crisp on top. Stand for 10 minutes before serving with roast potatoes.

I used a food processor for this tender, flaky pastry dough as it makes it so much easier to achieve the gorgeous 'breadcrumb' texture as you add the ice water. If you use the dough for a savory recipe, I'd cut down the sugar a bit, but not omit it entirely. The most important thing to remember is to use frozen butter and ice cold water.

½ cup butter, cut into 12 cubes, frozen
1 tablespoon sugar
1 teaspoon salt

Steps:

  • Place blade insert into bowl of food processor. Add 1 cup flour. Sprinkle frozen butter cubes over flour. Add remaining 1 cup flour, sugar, and salt. Cover. Pulse in short bursts on and off until butter is broken into small pieces and looks crumbly, about 1 minute. Drizzle in ice water. Pulse with longer pulses, on and off, until mixture turns pale yellow and looks like crumbs, about 10 to 12 seconds. Scrape down sides with spatula. Pulse once or twice more.
  • Transfer mixture onto a work surface. Bring pieces together to form a tight round ball of dough. Flatten slightly and wrap in plastic wrap. Refrigerate at least 1 hour or overnight before rolling out.
