Whisk butter, whole milk and sharp cheddar together with ground cornmeal for Alton Brown's creamy Cheese Grits recipe from Good Eats on Food Network.

2 cups whole milk
2 cups water
1 1/2 teaspoons kosher salt
1 cup coarse ground cornmeal
1/2 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
4 ounces sharp Cheddar, shredded

Steps:

  • Place the milk, water, and salt into a large, heavy-bottomed pot over medium-high heat and bring to a boil. Once the milk mixture comes to a boil, gradually add the cornmeal while continually whisking. Once all of the cornmeal has been incorporated, decrease the heat to low and cover. Remove lid and whisk frequently, every 3 to 4 minutes, to prevent grits from sticking or forming lumps; make sure to get into corners of pot when whisking. Cook for 20 to 25 minutes or until mixture is creamy.
  • Remove from the heat, add the pepper and butter, and whisk to combine. Once the butter is melted, gradually whisk in the cheese a little at a time. Serve immediately.

2 cups whole milk
1 1/2 cups quick-cooking grits (not instant)
3 cups grated sharp white cheddar cheese (about 12 ounces)
3 tablespoons unsalted butter
salt, to taste
hot pepper sauce, to taste (such as Tabasco) (optional)

Steps:

  • In a large saucepan over medium heat, add the water and milk. When bubbles just begin to break the surface, slowly add the grits, whisking constantly. Cook, stirring frequently and scraping the bottom of the pan, until thickened and cooked, about 7 minutes.
  • Add the cheese and butter and stir just until melted. Remove from the heat. Add salt to taste and hot pepper sauce, if desired. Serve immediately.

4 cups water
1 cup quick-cooking grits
4 ounces shredded Gouda cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook the sausage in a large skillet over medium-high heat, stirring until the sausage is crumbly and lightly browned. Drain off the grease and place the sausage in a bowl. Meanwhile, bring the water to a boil in a large saucepan over high heat. Stir in the grits, and reduce heat to medium-low. Cook and stir constantly for 5 minutes until the grits are tender, or follow package directions.
  • Stir together the sausage, cheese, butter, hot pepper sauce, and eggs. Fold in the grits until combined, then spread into an ungreased, small casserole dish. Bake in the preheated oven until golden brown on top, 30 to 40 minutes.

1 large garlic clove, minced

2 medium tomatoes, seeded and finely chopped

2 ounces sharp white-cheddar cheese, grated (3/4 cup)

Steps:

  • Bring water to a boil in a medium pot. Whisking constantly, slowly add grits to water and cook until mixture starts to thicken, about 1 minute. Reduce heat to medium-low, and simmer gently, stirring occasionally, until grits are smooth, thick, and fall easily from the spoon, about 25 minutes.
  • Add cheese, salt, and cayenne, and stir just until cheese melts. Serve immediately, or cover and keep grits warm over low heat, stirring occasionally, for up to 1 hour (you may need to adjust the consistency with additional water just before serving).

  • Preheat oven to 350°. In a small bowl, beat cream cheese, 2 tablespoons butter, Parmesan cheese and garlic., In a 6-qt. stockpot, prepare grits according to package directions. Reduce heat to low; add remaining butter. Fold in cream cheese mixture; stir in eggs. Stir in 3/4 cup cheddar cheese, Velveeta cheese and seasonings until cheeses are melted., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, 25 minutes or until set.   • Bring 4 cups of water to a boil in a heavy 4-quart saucepan. Add the salt, then slowly add the grits in a thin, steady stream, stirring constantly with a wooden spoon. Reduce the heat to low and simmer, stirring occasionally, until the grits thicken, about 5 to 7 minutes.
  • Add the half-and-half and butter to the grits and stir. The mixture will seem thin but it will thicken as it cooks. Bring to a simmer, stirring occasionally. Cover the pot, reduce the heat to low, and cook, stirring occasionally for 45 minutes, until very smooth and creamy. Off the heat, stir in the Cheddar, scallions, and pepper. Season to taste and serve hot with a sprinkle of grated cheese and scallions.
