Do not use delayed-bake feature. Adjusting Dough Consistency: After mixing for a few minutes, the ingredients should turn into a smooth ball around the kneading blade. If the dough appears too stiff or too soft, add more liquid or flour in 1 teaspoon increments, until the proper consistency is reached. Do not add more than 3 to 4 teaspoons liquid or flour. The machine can not compensate for wide variations and may not bake the larger amount of dough thoroughly.

This Bread Machine Cheese Bread recipe creates an extremely soft, fluffy bread with a chewy texture and cheesy top. This recipe yields a delicious 1.5 pound loaf that can be baked in the bread machine, a loaf pan, or on a baking sheet to create an artisan style loaf. Use cheese bread for toast, dipping into soups, and to make sandwiches.

- Add all ingredients in the order listed to the bread maker pan, reserving 1/4 cup of cheese for the top. *Check your brand's manual for the correct order to add ingredients if you are not using a Cuisinart bread machine. If it differs, add them in the order that your manual states.
- Select the basic/white bread setting. Choose the 1.5 lb loaf size and your preferred crust color. If baking in the oven, choose the dough setting. Press start and allow machine to run through the cycle, then follow steps below for your preferred method for baking.
- Baking in Machine: At the end of the last kneading cycle, remove the kneading paddle. This is optional and can also be done once the bread cools. When the bread completes it's last rise, gently brush the sides with an egg wash and top with the remaining cheese. Once the bake cycle is complete, remove the pan from the bread maker immediately. Let cool for at least 10 minutes, then carefully remove the bread from the pan. Cool completely before slicing.
- Baking in Oven: Once the dough cycle is complete, remove from the dough from the bread pan. Punch down a few times and form into your desired shape. Set on a parchment-lined baking sheet and cover with a towel. Let rise in a warm place until doubled in size, about 45 minutes. Gently brush the top and sides with an egg wash and top with the remaining cheese. Bake at 350°F for 30-35 minutes, until it reaches an internal temperature of 190°F. Remove from the oven and let cool completely on a wire rack before slicing.

- Put all ingredients except for the sliced jalapenos and shredded cheese into the bread machine in the order recommended by the manufacturer. Usually, this means adding the wet ingredients, then the flour (spread out), with the dry ingredients on top.
- Set the bread machine to the "white" loaf setting.
- Select the light crust setting.
- Select the 1.5 lb loaf size.
- Turn on the bread machine.
- When the machine beeps during the kneading cycle, it's time to add your cheese and jalapenos! (Reserve a small amount of the shredded cheddar and sliced jalapenos to add to the top of the loaf later). This is a great time to check the consistency of the dough. Please see the notes above for more information, but basically, you don't want the dough to be too wet or too dry. I usually add a light dusting of flour at this point, but you may not have to.
- Keep an eye on your dough during the proofing cycle. This recipe is very active and alive compared to many bread machine recipes. You will likely need to punch the dough down once or twice during this period. Do not twist or mess with the dough too much. Simply punch it down lightly to release the trapped gasses.
- Remove the paddle(s) if applicable.
- When the baking cycle begins, add the reserved sliced jalapenos and shredded cheese to the top of the loaf.
- When the bread machine beeps, it's done! Carefully remove the loaf pan using an oven mitt, by twisting and lifting upwards. Remove the loaf and allow it to cool on a cooling rack.
- Once cooled, slice the bread using a bread knife, and enjoy with fresh cultured butter, or make a grilled cheese!
