CHEESE AND SUN-DRIED TOMATO CANAPéS



Cheese and Sun-Dried Tomato Canapés image

Bread layered with tomato spread and sprinkled with cheese, bacon and parsley gives you delicious baked appetizers - perfect for a party.

16 slices cocktail rye bread
1/3 cup sun-dried tomato spread
1 cup shredded cheddar cheese (4 ounces)
4 slices bacon, crisply cooked and crumbled
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 375°. Place bread slices (cut bread into shapes using holiday cookie cutters if desired) in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Bake about 5 minutes or until toasted.
  • Spread each slice with tomato spread. Sprinkle with cheese, bacon and parsley. (If making ahead, cover and refrigerate up to 24 hours.) Bake about 5 minutes or until cheese is melted. Serve warm.

Olive & Cheddar Canapes image

A very good "do ahead" recipe, quick, easy and tasty. You can make the olive spread the day before or do it all at once. These freeze well. Just thaw before broiling. I flatten the bead slices with a rolling pin before toasting one side.

4 ounces black olives, chopped
1 cup cheddar cheese, grated
1/4 cup mayonnaise
1/4 teaspoon onion powder
1/4 teaspoon curry
8 slices sandwich bread, crusts removed

Steps:

  • Mix olives, cheese, mayo, onion powder & curry.
  • Arrange bread on an ungreased cookie sheet and toast one side under the broiler. Turn over and spread with the olive mixture (you can now freeze the slices and broil when thawed) and broil for 2 to 3 minutes until bubbly.
  • Cut each slice intp 4 triangles.

1 (14 1/2-ounce) can chili-style diced tomato
1/4 cup firmly packed brown sugar
1 tablespoon cider vinegar
1 tablespoon grated fresh ginger root
1/2 teaspoon cinnamon
8 ounces sharp cheddar cheese or white Cheddar cheese
1 package Keebler® Town House® Bistro multigrain cracker

Steps:

  • 1. In medium saucepan combine undrained tomatoes, brown sugar, vinegar, gingerroot and cinnamon. Cook and stir until mixture comes to boil and sugar dissolves. Reduce heat. Simmer, uncovered, until mixture reduces to 1 cup. Remove from heat. Cool.2. Place cheese on serving plate. Spoon tomato mixture over cheese. Serve with crackers. (Or, thinly slice cheese. Top each cracker with cheese slice and some of tomato mixture.)
