My Scouse image

My husband's family come from Liverpool and this recipe is an amalgamation of the Scouse recipes belonging to his Nana, his mum, and his dad. Since I've been using the slow cooker, it has achieved the ultimate accolade; it's as good as Nana's. It is traditionally made with the 'scrag end' but I tend to go for lean stir-fry lamb instead. It is important to use King Edwards if you can find them because they fall and go all mushy during the cooking process.

low-fat cooking spray
1/2 lb lamb, cut very small
4 large king edward potatoes, sliced
3 carrots, sliced
1 small turnip, diced
salt and pepper
1/3 pint lamb stock

Steps:

  • Pre-heat the oven to 150.
  • Heat up some low-fat cooking spray on the hob and stir-fry the lamb until it is browned on both sides. Transfer to a lidded casserole dish.
  • Use this juice from the lamb to stir-fry the carrots and turnip until just starting to soften. Add to the casserole dish.
  • Pour in the stock. Cover and cook in the oven for an hour.
  • Towards the end of the cooking time, par-boil the potatoes for about 5 - 10 minutes. Add to the casserole dish with salt and a generous amount of pepper and cook at 150 for a further 30 minutes.
  • Remove from the oven and stir. The potatoes should have gone all mushy and sludge-like.
  • At this point, if you're impatient, you could eat the scouse as it is.
  • But it's much better if you transfer it from the casserole into a slow cooker and leave it on medium for about 4 - 6 hours. The flavour will intensify and the lamb will be coming apart,.
  • Serve with crusty bread.

According to my (late - great) Mother, "The secret to a good pan of Scouse is to let it stew to doll rags". (Whatever that means!) Although this recipe states Beef Stock Cubes, my mother always used 'Gravy Salt'... She used to 'bulk' this out by adding more potatoes. When we kids were small and there wasn't much money; she made this with 1/4lb of mince and 5lb of potatoes. As a small child I STILL found it yummy!!

1 tablespoon oil
1 onion, chopped
1/2 kg carrot, sliced
1/2 kg minced beef
1 kg potato, cut into small pieces
beef bouillon cube (to personal taste)

Steps:

  • In a large saucepan heat oil over medium heat.
  • Fry carrot & onion in heated oil until onion is soft & translucent.
  • Add mince & stir gently until browned, taking care not to break mince up too much.
  • Barely cover with water and add stock cubes.
  • Add potatoes and more water if necessary to barely cover.
  • Simmer for as long as possible, stirring regularly and adding more water if necessary.
  • Serve with bread and butter.

A Brilliant and easy accompaniment to a Fragrant Tagine, Stew or Curry. It's a cheat's recipe as you can pre-mix all the dry ingredients together & store in a jar ready for use at the drop of a hat. Just add hot water or hot stock and voila, a wonderful fruity, spiced couscous! It can be used cold for picnic & buffet salads - cold cuts of meat, such as diced cooked chicken breast can be added too. Also a great veggie main course - just add chargrilled vegetables and mix through - serve with flatbreads, pitta bread & harissa dressing for an extra kick!

250 g couscous
1 1/2 tablespoons olive oil or 4 ounces melted butter
4 teaspoons ras el hanout spice mix or 1 teaspoon ground cumin
1 teaspoon ground coriander, Cilantro
1 teaspoon ground paprika
1 teaspoon ground turmeric
1 tablespoon pine nuts, lightly toasted under a grill
6 -8 soft dried apricots, chopped finely
2 tablespoons golden sultana raisins
1 tablespoon dried onion flakes
1 tablespoon garlic granules, NOT salt
300 ml hot vegetable stock, made with salt free cube if possible such as Marigold Swiss Vegetable
1 ounce butter (to garnish)
2 tablespoons chopped fresh coriander, cilantro

Steps:

  • Mix all the dry ingredients together.
  • (The amounts can be doubled or even quadrupled for long term storage of up to 6 -9 months.).
  • When you are ready to prepare the couscous, measure out the correct serving of dry ingredients into a large bowl, preferably the one you will be serving it from. The dry & wet combination is given above in the ingredients.
  • Add the olive oil or butter & mix thoroughly.
  • Add the boiling stock and mix thoroughly - place a clean tea towel over the top of the bowl and leave for 5 minutes.
  • Fluff up the couscous after 5 minutes & add more liquid if needed.
  • Add a knob of butter or a teaspoon of live oil - mix & sprinkle with freshly chopped coriander - cilantro before serving.
  • You could also add more nuts or fruit as a garnish if you wish.
  • This is a basic recipe - all kinds of dried fruit and nuts can be used such as: almonds, cashew nuts, dried cherries or cranberries, dried banana or coconut. It will depend on what you will be serving it with!
