A super simple and super elegant supper dish. Not many people know how well prawns and mushrooms go together but unexpectedly they do. Great to share over a bottle of white wine with plenty of crusty white bread. Feel free to throw in some fresh herbs if you have them to hand, also you can add a little chicken stock if you prefer a wetter risotto or want to reduce the butter

300 g approx king prawns, defrosted (medium size shrimp)
50 g butter
2 -4 large garlic cloves, crushed
1 package of ready cooked mushroom rice, the microwave in 2 minutes kind
salt and pepper

Steps:

  • Melt the butter in a frying pan and add the king prawns and garlic.
  • Cook on a medium heat for 3 minutes or until the prawns are heated through and making sure the garlic doesn't burn. Add salt and pepper to taste.
  • Now crumble in the pack of microwave mushroom rice and heat through adding more butter if the mixture seems dry.
  • Delicious!

Easy Garlic Shrimp Risotto image

An easy to make and delicious risotto recipe thats simple, packed with flavor, and loaded with shrimp.

1 1/2 tbsp olive oil (divided)
1 lb medium raw shrimp
1/2 teaspoon smoked paprika
1/2 tsp Italian seasoning
Kosher salt and ground black pepper (to taste)
1 yellow onion (diced)
3-4 garlic cloves (minced)
1 cup arborio rice
4-5 cups low-sodium fish broth (hot)
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley

Steps:

  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add the shrimp in a single layer and sprinkle with the seasonings. Cook undisturbed for 2 minutes, then flip and continue to cook until pink and fully opaque, around 1-2 minutes more. Set aside on a plate.
  • Heat the remaining oil in the same skillet. Sautee the onion and garlic for 3-4 minutes over medium heat.
  • Add the rice and cook, stirring constantly, for 1 minutes.
  • Pour over two cupfuls of broth. Cook over medium heat, stirring frequently, until most of the liquid has beed absorbed.
  • Once the liquid is reduced, repeat the cooking process, by adding a cup of broth at a time.
  • Once all the broth has been used, the rice should be plump and creamy. Remove from heat and stir in the parmesan and parsley.
  • Serve the risotto topped with cooked shrimp.

Easy and delicious. I had this recipe for years, lost it, and just recently found it on the internet. It's the best tasting shrimp I've ever had.

2 lbs uncooked deveined large shrimp
1/2 cup butter
1/2 teaspoon salt
3 crushed garlic cloves
1/4 cup chopped fresh parsley
2 teaspoons lemon juice

Steps:

  • Preheat oven to 400 degrees. Remove shells from shrimp if they are still on. Pat dry shrimp on paper towels, if they're at all wet, the sauce will be runny.
  • Place butter in a large glass baking dish and place in the oven for 5 minutes. Take it out and add salt, garlic, and 1 tbsp of the parsley. Stir it up and then place shrimp on top of this butter mixture in a single layer. Bake this for another 5 minutes, uncovered.
  • Remove the dish from oven, turn over each shrimp, sprinkle with the lemon juice and the remaining parsley. Return it to the oven and bake it for an additional 8 minutes.
