4-5 chicken breasts, boneless and skinless
1 teaspoon salt
½ teaspoon pepper
3 Tablespoons vegetable oil
⅔ cup apricot preserves
1 Tablespoon fish sauce
1 Tablespoon honey
1 Tablespoon orange juice
1 teaspoon dried rosemary
Chopped parsley, optional garnish

Steps:

  • Preheat the oven to 375 degrees Fahrenheit and prepare a 9x13 inch baking dish by spraying it with cooking spray.
  • Using a mallet or rolling pin, flatten each chicken breast until it is 1 inch thick on all sides.
  • Salt and pepper the chicken breasts and then lay them out evenly in the prepared baking dish. Take care not to overlap them.
  • In a medium mixing bowl, whisk together the vegetable oil, apricot jam, fish sauce, honey, orange juice, and rosemary until combined.
  • Pour the apricot mixture over the chicken and bake in the oven for 30-35 minutes or until the chicken reads 165 degrees Fahrenheit on a meat thermometer and juices run clear. The bake time will vary depending on the size of the chicken breast.
  • Once fully cooked, take the chicken out of the oven and let it rest for 5 minutes.
  • Plate and serve with a chopped parsley garnish, optional.

4 chicken breast fillets
1 (2 ounce) packet French onion soup mix
1/2 cup flour

Steps:

  • Preheat oven to around 180 degrees celsius.
  • Lightly coat fillets with flour.
  • Mix french onion soup mix with apricot nectar.
  • Pour into casserole dish.
  • Place chicken fillets into dish.
  • Turn them over to make sure they're coated with nectar/soup mix.
  • Bake for around 35 - 45 minutes.
  • Serve with rice and steamed veg.
  • Dinner's done!

½ cup white wine
½ cup apricot jam
½ cup packed brown sugar
½ cup Spanish olives, drained and sliced
⅓ cup extra-virgin olive oil
⅓ cup red wine vinegar
⅓ cup drained capers
⅓ bunch fresh cilantro, chopped
5 cloves garlic, minced
1 tablespoon caper brine, or to taste
2 tablespoons extra-virgin olive oil
4 large skinless, boneless chicken breasts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix white wine, apricot jam, jam, brown sugar, olives, 1/3 cup olive oil, red wine vinegar, capers, cilantro, garlic, and caper brine in a large bowl.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Cook chicken breasts until browned, about 1 1/2 minutes per side. Do not overcook.
  • Arrange chicken in a single layer in a baking dish. Pour apricot-olive mixture on top.

This is not for the dieter among us. My husband is an absolutely awesome cook. If you love chicken you will definitely want to try this recipe. Talk about tantilizing the taste buds.. when I tried this dish it was if my taste buds went to heaven.. it's that good !!!

1 kg chicken leg
100 ml cream
425 g apricot nectar
1 1/4 ounces dry onion soup mix (french)
1 teaspoon curry powder
1 teaspoon mixed herbs
2 garlic cloves, crushed
4 cups cooked rice

Steps:

  • Cook the chicken legs while on the bone.
  • Then take the chicken off of the legs and cube it.
  • Put it in a stove top pot (with a lid) and put the apricot nectar and french onion soup in; add all other ingredients except for the rice.
  • Cook on a low to medium heat for about 20 minutes.
  • Once cooked, serve it up on a bed of rice.
  • Soooo yummy.
