CHEATING SCALLOPED POTATOES

I know puritans will scream "You can't do this, It's not right etc. etc." but if you are in a hurry and want delicious scalloped potatoes take this shortcut. If you wish you can put some cheddar cheese on top for the last 15 minutes and add a few extra mushrooms.

1 (10 1/2 ounce) can condensed cream of mushroom soup
1 1/2 cups milk
salt and pepper
5 cups potatoes, thinly sliced, divided
2 cups onions, sliced, divided
1/4 cup butter, melted, divided
1/4 cup all-purpose flour

Steps:

  • In a bowl mix the cream of mushroom soup, milk, salt and pepper; set aside.
  • Grease a 13"x9"x2" oven proof dish.
  • Put 1/3 of the potatoes, 1/3 of the onions, 1/3 melted butter, 1/3 flour and a 1/3 of the soup mixture in the greased dish (take a minute to arrange them evenly).
  • Repeat with two more layers, ending with the soup mixture.
  • Bake uncovered at 350 degrees Fahrenheit for 1 and 1/2 hours or until potatoes are done and golden.

5 ounces egg noodles
1 lb deli roast beef, 1/2-inch thick
2 tablespoons unsalted butter
1/2 cup onion, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup mushroom, sliced
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup water
8 ounces sour cream

Steps:

  • Cook noodles according to package directions.
  • Drain noodles.
  • Cut beef into 1/2" cubes.
  • Melt butter in a skillet. Saute onions until tender.
  • Add beef, salt, pepper, and mushrooms. Saute for one minute.
  • Stir in cream of mushroom soup and water. Simmer for 10 minutes.
  • Add sour cream and mix well.
  • Serve over noodles.

2 cups chicken broth
8 ounces sliced mushrooms, with 12 perfect slices reserved (to garnish, fresh, from the grocery store)
1 (10 3/4 ounce) can condensed cream of chicken soup (undiluted)
2 (10 3/4 ounce) cans condensed cream of mushroom soup (undiluted)
1 cup heavy cream
8 ounces any good swiss cheese or 8 ounces monterey jack cheese
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine chicken broth and the package of mushrooms (remember to reserve those 12 perfect slices for the garnish) in a blender. Zoop them up.
  • Add the can of Cream of Chicken soup to the blender. Zoop it all up.
  • Spray the inside of a 4-quart slow cooker with Pam.
  • Add the contents of the blender to the crock-pot.
  • Add the cans of Cream of Mushroom soup to the crock-pot. Stir. Add the heavy cream, shredded cheese, and ground black pepper. Stir again.
  • Cook on LOW for 4 to 5 hours.
  • Ladle into bowls. Sprinkle with parsley and float several mushroom slices on top as a garnish.

16 ounces milk
1 lb frozen meatballs
16 ounces egg noodles, cooked

Steps:

  • In a medium sized saucepan, mix soup with milk.
  • (I use a whisk to get all lumps out.) Once that is creamy, add the frozen meatballs.
  • Cover and cook on low/medium until meatballs are heated through, scraping bottom of pot regularly to avoid burning.
  • Serve over cooked egg noodles.

Ive been wanting to make cream of mushroom soup for some time now . So today I gave it a try and got told it was a keeper ! I use pretty much the same base for all my cream soups so this was no different really but tasted good on a cold day . Hope anyone who tries this enjoys it . I used poratabello mushrooms cause they are big and have a good meaty taste but you can use any mushroom of your choice .

1 can(s) reg or low sodium chicken broth or stock
1/2 teaspoon(s) worcestershire sauce
1 pinch(es) rosemary, dried
1 can(s) carrots, cubed
1 stick(s) celery diced
1 teaspoon(s) dried onion or fresh onion
1/4 cup(s) milk to rinse out alfredo jar and add to pot

Steps:

  • In crock pot , put alfredo sauce , rinse jar out w/ 1/4 c milk, add to pot, stir to blend, add pinch of rosemary, chicken stock or broth , add 1/2 tsp worchestersshire sauce , stire to blend , take 1 lg portabello mushroom , cut to your choice , add to pot, stir to blend . put on low and cook at least 2-4 hrs til mushrooms are tender and done .
