Number Of Ingredients 22

Meatballs
1 pound spicy Italian sausage, casings removed
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan cheese
1/2 cup bread crumbs
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
Soup
2 tablespoons extra-virgin olive oil
1 sweet onion, diced
3 carrots, peeled and diced
4 stalks celery, diced
3 garlic cloves, minced
6 cups chicken broth
1 bay leaf
1 cup short pasta, such as ditalini
One 14-ounce can white beans
1 bunch kale, deveined and sliced
1/2 cup grated Parmesan cheese, plus more for garnish
Kosher salt and freshly ground black pepper
Pesto, for serving

Steps:

  • MAKE THE MEATBALLS: In a medium bowl, mix together the sausage, parsley, Parmesan, bread crumbs, salt and pepper. 2. Using a tablespoon, form the mixture into bite-size balls, about 1 inch in diameter. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until well browned on all sides, about 5 minutes. Transfer to a paper-towel-lined plate. 3. MAKE THE SOUP: In a large saucepot, heat the olive oil over medium heat. Add the onion, carrots and celery; saut� until tender, 5 to 6 minutes. Add the garlic and saut� until fragrant, about 1 minute. 4. Stir in the broth and bay leaf; bring to a simmer over medium-low heat. Simmer for 15 minutes. 5. Stir in the pasta and beans. Cook until the pasta is al dente, 6 to 8 minutes. Stir in the kale and the meatballs. Continue to simmer until the greens are wilted, about 5 minutes. 6. Stir in the Parmesan and season with salt and pepper; garnish with the pesto.

4 strips bacon, cut into 1/4-inch slices
1/4 medium onion, finely diced
Two 27-ounce cans pinto beans
2 serrano peppers, scored
1 medium tomato, finely diced
2 cloves garlic, minced
Salt and pepper
Salt and pepper
1/4 bunch fresh cilantro (don't use the stems and don't chop, just snip or pinch off the leaves)

Steps:

  • In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes. Then add the onions and cook until the bacon is cooked but not crisp and the onions are translucent, another couple of minutes. Do not drain the bacon grease because it gives the beans a good taste. Add the beans, peppers, tomatoes, garlic and 1 1/2 cups water, and cook for 10 to 15 minutes. Add some salt and pepper and the cilantro and remove from the heat.

Quick and easy chicken chili for the whole family. Serve plain or over rice. Top with tortilla strips, shredded cheese, sour cream, plain yogurt, and/or green onions. Could also be served over tortilla chips for a great nacho dish. Red pepper flakes, cayenne pepper, or chili seasoning mix can also be used to season.

1 tablespoon olive oil
½ onion, diced
1 (8 ounce) jar salsa
¼ cup water
1 pound rotisserie chicken, meat removed and diced
1 (15 ounce) can black beans, drained
1 teaspoon chili powder, or to taste

Steps:

  • Heat olive oil in a saucepan over medium heat; cook and stir onion in the hot oil until softened, 5 to 10 minutes. Add salsa and water to onion and bring to a boil. Reduce heat and simmer; add chicken, black beans, and chili powder and return to a simmer. Cover saucepan and simmer chili until chicken is heated through, about 10 minutes.

  • 1. Stir together the beans and salsa. Add water if desired to get your preferred consistency. Heat over medium heat for 10-15 minutes.
  • 2. Excellent topped with a dollop of sour cream and sliced green onions.
  • 3. This works well with 2 cans of beans, if you have more people. Feel free to add some chopped ham, sliced smoked sausage, or cooked bacon bits if you want meat in the soup.
