2 stalks celery
2 carrots
2 small onions
2 small potatoes
1 (10 1/2 ounce) can condensed vegetable broth
2 cups water
1/4 cup butter
1/4 cup flour
1 liter whipping cream
1 tablespoon mixed pepper seasoning
4 cups frozen scallops (or more if desired) or 4 cups frozen crab (or more if desired)

Steps:

  • Finely chop celery and peel and finely chop carrots, onions and potatoes.
  • Boil in veg broth and water until tender.
  • Melt butter, mix with flour and add paste to vegetables & broth.
  • Add whipping cream and pepper seasoning and bring to boil.
  • Add shrimp, scallops and crab. Bring to boil to heat seafood. Serve.

2 (14 ounce) cans condensed cream of potato soup
8 cups milk
1 (10 ounce) can clams, including juice
2 cups frozen scallops, thawed
1 cup frozen mixed vegetables (corn, peas and carrots)
2 cups frozen shrimp, pre-cooked type, thawed

Steps:

  • In a large pot heat soup, milk, clams (and juice) , scallops and vegetables over medium-high heat. Simmer until scallops are cooked through.
  • Add in the thawed cooked shrimp and simmer 5 minutes.
  • serve with crusty bread and a nice salad for a complete meal!

A delicious chowder made from tender white fish, scallops, shrimp, a hint of bacon, white wine and cream, melded together in fragrant fish stock and garnished with fresh dill. Special enough to serve for company, or to give your family a real treat. You can substitute clams for scallops, if you wish, and if you prefer not to add wine, use 4 cups of fish stock instead of 3.

1 tablespoon vegetable oil
2 tablespoons butter
2 slices bacon, chopped
1 large onion, chopped
1 clove garlic, crushed
1 leek, finely chopped
1 medium carrot, peeled and chopped (optional)
2 celery ribs, scraped and finely chopped
2 medium potatoes, peeled and chopped
1/3 cup plain flour
3 cups fish stock, heated
1 cup white wine
1 lb firm white fish fillet, boned and cut into ¾ inch cubes
8 ounces scallops, cleaned and halved
8 ounces fresh small shrimp, peeled and de-veined
1 cup heavy cream
1/3 cup fresh parsley, finely chopped
salt & freshly ground black pepper
fresh dill, to garnish

Steps:

  • In a large saucepan, heat the oil, then add the bacon and cook over low heat for 5 minutes.
  • Next add the onion, garlic, leek, carrot, celery and potato, and saute over medium heat for 5 minutes, stirring often.
  • Add the butter to the pan, and when melted, toss in the flour and cook for a minute, being careful it does not burn on the bottom of the pan.
  • Add the wine and fish stock and, whilst continually stirring, bring it to the boil, then decrease the heat and simmer uncovered for 5 to 10 minutes until carrots and potato are just tender.
  • Add the fish pieces and cook over medium heat for 5 minutes, stirring frequently.
  • Lastly, add the scallops, shrimps, cream, parsley.
  • Mix well, and heat for 5 minutes without boiling, or until scallops and shrimps are cooked and tender.
  • Season to taste with salt and pepper, and serve garnished with dill.

1/2 pound sliced bacon, diced
2 medium onions, chopped
6 cups cubed peeled potatoes
4 cups water
1 pound bay or sea scallops, quartered
1 pound lobster meat, cut into 1-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 pound cod, cut into 1-inch pieces
1 pound haddock, cut into 1-inch pieces
1/2 cup butter, melted
4 teaspoons salt
4 teaspoons minced fresh parsley
1/2 teaspoon curry powder
2 quarts whole milk
1 can (12 ounces) evaporated milk
Oyster crackers, optional

Steps:

  • In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through. 1 1/2 lbs fresh shrimp, unpeeled, medium size
vegetable oil cooking spray
1 teaspoon olive oil
1 cup chopped onion
1 cup chopped celery
1 cup red sweet bell pepper, diced
3 garlic cloves, minced
1/2 cup all-purpose flour
2 (10 1/2 ounce) cans chicken broth
1 1/2 cups water
3 cups red potatoes, peeled and diced
1 cup carrot, diced

  • Peel and devien shrimp. Set aside.
  • Coat a dutch oven with cooking spray; add oil, and place over medium high heat until hot. Add onion, celery, red pepper, and garlic. Cook until tender.
  • Add flour and cook, stirring contatnly, one minute. Gradually add in chicken broth, water and next 5 ingredients.
  • Bring to a boil; reduce heat, and simmer uncovered, stirring often for 20 minutes or until the potatoes are tender.
  • Stir in milk, corn and hot sauce. Return to a boil. Add shrimp and crabmeat; cook 5 minutes or until shrimp turn pink, stirring constantly.
  • Remove and discard bay leaves.

I know many of you out there frown upon the use of condensed soups. But try this.. it tastes like a restaurant quality soup without all the fuss. Use whatever seafood you like. Just use at least 1 1/2 pounds of it. You can even use chopped cooked chicken if you don't like seafood. Want a curry flavor? Just add some curry powder while cooking the onions and celery. You can turn this into a creamy curried vegetable soup by omitting the seafood and using more onions and celery with the addition of carrots and whatever other vegetables are your favorites. Leave out the curry powder for a satisfying creamy vegetable soup. Just try it.. you'll like it.

1/2 cup butter
1 stalk celery, minced
1 small onion, minced
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme

3 tablespoons flour (I use buttermilk baking mix) or 3 tablespoons baking mix (I use buttermilk baking mix)
3 1/2 cups milk (or more if you like a thinner soup More milk can be added as needed after soup is completed.)
2 (10 1/2 ounce) cans condensed cream of potato soup (undiluted)
1 1/2 lbs clams (whatever you want your soup to be I like to use shrimp, scallops and whole baby clams.) or 1 1/2 lbs crab (whatever you want your soup to be I like to use shrimp, scallops and whole baby clams.)
chopped fresh parsley (to garnish)

Steps:

  • Melt butter in 3-quart saucepan over low heat.
  • Saute' celery and onion until tender.
  • Add cayenne pepper, thyme, marjoram and flour or baking mix and stir until smooth.
  • Add milk and condensed soup and stir until piping hot.
  • Meanwhile clean and chop seafood as you like.
  • I usually halve the shrimp and then cut one half in half and leave the other half whole.
  • If using extra large scallops I usually quarter them.
  • When soup is piping hot add seafood and stir on medium heat until seafood is cooked through.
  • Serve in bowls topped with some fresh parsley along with some crusty bread or oyster crackers and a nice salad.

3 ounces salt fat pork, chopped fine
2 medium onions, diced
3 medium potatoes, peeled and diced
1 cup water
1/2 lb shrimp, halved, quartered if large
1/2 lb scallops, halved, quartered if large
1/2 lb lobster meat, cut into bite-size pieces
1/2 lb haddock fillet, cut into bite-size pieces
2 cups whole milk or 2 cups light cream
1 (370 ml) can evaporated milk
salt
pepper

Steps:

  • In a Dutch oven or large saucepan with a heavy bottom, gently fry the salt fat pork, to render out the fat. When pieces are crisp and golden brown, remove and reserve for garnish.
  • Drain off all but 2 tablespoons of the fat. Add onions and sauté until translucent. Add potatoes and water. Bring to boiling point, reduce heat and simmer until potatoes are tender.
  • Add seafood, milk or cream, and evaporated milk; simmer just below the boiling point (do not allow to boil) until seafood is cooked. Season with salt and pepper to taste, and serve hot. Sprinkle top with a few scruncheons (crisp pieces of rendered pork fat).
