Baked Quinoa with Charred Corn and Zucchini image

A simple Baked Quinoa with Charred Corn & Zucchini, topped with fresh tomato relish and an optional (but tasty) Smokey Yogurt Sauce

1 tablespoon olive oil
1 small onion, diced ( about 1 ½ cups)
2 small zucchini ( or sub summer squash) diced, about 3 cups
1 ear corn- lightly charred over gas burner ( sauteed is fine too)
2 garlic cloves- minced
½ jalapeno - finely chopped ( optional)
1 ½ cups water
1 teaspoon salt
1 teaspoon cumin
1 teaspoon chile powder
1 cup rinsed quinoa
½-1 cup cheese ( feta, goat, mozzarella balls, etc...)
1 pound cherry tomatoes, cut in half - or regular tomatoes, big diced
¼ cup chopped fresh Italian parsley
¼ cup sliced onion
1 tablespoon olive oil
1 tablespoon lemon or lime juice
generous pinch salt and pepper
½ cup plain yogurt, or sour cream
squeeze lime
pinch salt
½ teaspoon smoked paprika
Fresh Parsley or cilantro for garnish

Steps:

  • Preheat oven to 400F
  • In a 10 inch skillet, heat oil over medium-high heat. Add onion and zucchini and saute for 6 minutes, stirring often. Add jalapeño ( if using) and garlic, turn heat to medium and continue cooking until zucchini is tender about 4 more minutes.
  • Char the shucked corn (still on the cob) placing it directly over a gas burner, using tongs to rotate until blackened in spots. (Alternately, cut corn off the cob and add to skillet and saute with zucchini.)
  • Add charred corn to zucchini. Add water, salt and spices. Stir, bring to a boil, then add quinoa. Stir once. Top with cheese, cover with lid or foil and place in the oven for 35-40 minutes. For the last 5 minutes, remove the lid, and let the cheese get a little melty and golden.
  • While baking, make the Tomato salad: Place everything in a medium bowl and toss to combine.
  • Make Smoked Paprika Yogurt (mix ingredients together in a small bowl). Alternatively, you could simply serve with a dollop of plain yogurt or sour cream (or leave it off and keep it vegan)

Charred Corn and Pepperoncini Relish with Basil image

Yield Makes about 1 1/2 cups

Number Of Ingredients 9

1/4 cup cider vinegar
1 1/2 teaspoons sugar
1/4 cup finely diced sweet onion
4 pepperoncini, cored and finely chopped
Kosher salt
3 ears of corn
1 tablespoon of vegetable oil, plus more for brushing
Freshly ground pepper
1/4 cup finely chopped basil

Steps:

  • Light a grill and preheat for at least 10 minutes or preheat a grill pan.
  • In a large bowl, whisk the vinegar with the sugar until dissolved. Add the onion, pepperoncini and a pinch of salt and let stand while you grill the corn.
  • Brush the corn with vegetable oil and season with salt and pepper, then grill over moderately high heat, turning frequently until tender and blistered in spots. Let cool slightly, then, using a serrated knife, cut the kernels off the cobs.
  • Add the corn and the 1 tablespoon of oil to the onions and toss; season with salt and pepper. Let the relish stand for at least 15 minutes, stirring occasionally, to let the flavors meld. Add the basil just before serving.

3/4 cup olive oil
4 cups fresh corn kernels (5 to 6 ears)
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
2 avocados, peeled and seeded
4 poblano chiles, roasted, peeled and seeded (see Note)
4 scallions, white and light green parts only, thinly sliced on the diagonal
1/2 cup red wine vinegar

Steps:

  • Saute the corn with the salt and pepper, about 5 minutes. Transfer to a large mixing bowl and set aside to cool.
  • Cut the avocados, bell pepper and roasted poblanos into 1/4 inch dice. Add to the sauted corn along with the scallions, vinegar and remaining 1/4 cup olive oil. Mix well and let sit 20 to 30 minutes to blend the flavors.
  • Serve at room temperature. Corn relish can be stored, tightly covered, in the refrigerator up to 1 day. To make 2 to 3 days in advance, mix all the ingredients except the avocado and store in the refrigerator. Add the avocado shortly before serving.

I loved how this all came together. The first taste was of sweet and tangy corn, but the sweetness slowly fades, giving way to the heat from the jalapeno and an earthiness from the chili powder and cumin. The "relish" can double as a dip for tortilla chips, salad topping, or taco condiment-it'll add excellent flavor to whatever it touches.

3 ears of corn, husked
1 tablespoon unsalted butter
1 jalapeño
1 medium red pepper
6 green onions
1/4 cup finely chopped fresh cilantro
1 teaspoon lime zest
1/2 teaspoon sugar
1/2 teaspoon chili powder
1/4 teaspoon cumin
Kosher salt
Freshly ground black pepper

Steps:

  • Light one chimney full of charcoal. While the charcoal is lighting, lightly butter each ear of corn, then season with salt and pepper. Wrap each ear in aluminum foil.
  • When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place the corn, red pepper, and jalapeño on the grill and cover. Grill red pepper and jalapeño until they start to blister, but not blacken, on each side. Grill corn until it's lightly charred all over. Remove pepper, jalapeño, and corn to a cutting board as they are done.
  • Brush green onions lightly with oil and place on the grill. Cook until softened and lightly browned on both sides. Remove to cutting board.
  • In a medium bowl, cut kernels off each ear of corn. Seed jalapeño and red pepper, then dice and add into bowl with corn. Thinly slice green onions and add into bowl with corn and peppers along with cilantro, lime juice, lime zest, sugar, chili powder, and cumin. Stir to combine. Season with salt and pepper to taste. Serve immediately or store in an airtight container in the refrigerator.

4 ears corn, shucked
1 English cucumber, diced
1 small red bell pepper, diced
Kosher salt
2 cups apple cider vinegar
1/2 cup sugar
1 tablespoon mustard seeds
1/2 teaspoon ground turmeric
3 scallions, sliced

Steps:

  • Preheat a grill to high. Grill the corn, turning, until charred all over, about 8 minutes; let cool slightly, then cut off the kernels.
  • Toss the cucumber and bell pepper with 2 teaspoons salt in a colander. Let drain 30 minutes, then pat dry with paper towels.
  • Bring the vinegar, sugar, mustard seeds, turmeric and 1 tablespoon salt to a boil in a large skillet. Reduce the heat and simmer until the liquid is reduced to about 1 cup, 8 to 10 minutes. Add the cucumber and bell pepper; simmer until slightly softened, 3 minutes. Stir in the corn and scallions; let cool. Refrigerate until ready to serve.

  • In a large pot over medium-high heat, heat 3″ of vegetable oil. When warm, place in a tortilla and use kitchen tongs to press it down in the center, so that the edges float upward in a taco shell shape. Fry until bubbly and crisp, about 30 seconds.
