EASY APPLE CHARLOTTE
Apple Charlotte is a British dessert that is made with apples and white bread and baked in a molded pan. This recipe is easier to make and tastes just as delicious, if not better. And you don't need the molded pan! Serve warm with a scoop of vanilla ice cream or at room temperature with a sprinkle of powdered sugar.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 6.5-inch springform pan with nonstick cooking spray and line with parchment paper. Spray parchment paper with nonstick cooking spray.
- Toss apples with lime juice and set aside. Mix flour, cinnamon, ginger, and salt in a bowl and set aside.
- Combine eggs with brown sugar, white sugar, and vanilla extract in a second bowl and beat with an electric mixer until creamy. Add dry ingredients and mix until just combined. Pour about 1/3 of the batter into the prepared pan. Add apples and top with remaining batter.
- Bake in the preheated oven until a toothpick inserted in center comes out clean, 50 to 60 minutes. Transfer to a wire rack and cool for 15 minutes.
- Run a knife around the springform pan, release springform, and flip apple Charlotte onto a plate. Immediately flip the cake onto a serving platter.

- Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

CHARLENE'S APPLE CAKE
My brother got this from a lady he worked with many years ago. This cake makes a great breakfast coffee cake, or it can be used as a dessert.

Steps:
- Preheat oven to 350 degrees; grease a 9x13 pan& set aside.
- In a large bowl, beat eggs& oil until well blended; add sugar slowly, beating at medium speed; add vanilla.
- Sift together the flour, baking powder, baking soda, salt, cinnamon& nutmeg.
- Add dry ingredients to egg/oil mixture, combining well.
- Add nuts& apples.
- Pour batter into prepared pan; bake 45-60 minutes, or until cake tests done with a wooden pick or sharp knife in center.
- Cool in pan on a wire rack.
- Note: Mixture can be baked in two 8x8 square pans or two 9x5 loaf pans as well.
- For the 8x8, bake approximately 45 minutes; 9x5 may take a little longer.
- If using one of these sizes, cool baked cake in pan 10-15 minutes before removing to a wire rack to cool.
