EASY APPLE CHARLOTTE



Easy Apple Charlotte image

Apple Charlotte is a British dessert that is made with apples and white bread and baked in a molded pan. This recipe is easier to make and tastes just as delicious, if not better. And you don't need the molded pan! Serve warm with a scoop of vanilla ice cream or at room temperature with a sprinkle of powdered sugar.

nonstick cooking spray
3 cups peeled and diced apples
1 lime, juiced
¾ cup all-purpose flour
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon salt
2 large eggs
½ cup brown sugar
¼ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 6.5-inch springform pan with nonstick cooking spray and line with parchment paper. Spray parchment paper with nonstick cooking spray.
  • Toss apples with lime juice and set aside. Mix flour, cinnamon, ginger, and salt in a bowl and set aside.
  • Combine eggs with brown sugar, white sugar, and vanilla extract in a second bowl and beat with an electric mixer until creamy. Add dry ingredients and mix until just combined. Pour about 1/3 of the batter into the prepared pan. Add apples and top with remaining batter.
  • Bake in the preheated oven until a toothpick inserted in center comes out clean, 50 to 60 minutes. Transfer to a wire rack and cool for 15 minutes.
  • Run a knife around the springform pan, release springform, and flip apple Charlotte onto a plate. Immediately flip the cake onto a serving platter.

1-3/4 cups sugar
1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

My brother got this from a lady he worked with many years ago. This cake makes a great breakfast coffee cake, or it can be used as a dessert.

3 eggs
2 cups sugar
3/4 cup oil
2 teaspoons vanilla
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup chopped walnuts or 1 cup pecans
3 cups peeled chopped tart apples (such as Granny Smith)

Steps:

  • Preheat oven to 350 degrees; grease a 9x13 pan& set aside.
  • In a large bowl, beat eggs& oil until well blended; add sugar slowly, beating at medium speed; add vanilla.
  • Sift together the flour, baking powder, baking soda, salt, cinnamon& nutmeg.
  • Add dry ingredients to egg/oil mixture, combining well.
  • Add nuts& apples.
  • Pour batter into prepared pan; bake 45-60 minutes, or until cake tests done with a wooden pick or sharp knife in center.
  • Cool in pan on a wire rack.
  • Note: Mixture can be baked in two 8x8 square pans or two 9x5 loaf pans as well.
  • For the 8x8, bake approximately 45 minutes; 9x5 may take a little longer.
  • If using one of these sizes, cool baked cake in pan 10-15 minutes before removing to a wire rack to cool.
