JAMAICAN RED BEANS AND RICE RECIPE

Number Of Ingredients 11

1 tsp or canola oil coconut oil
1 garlic crushed clove
¼ cup minced onion
1 chopped scallion
1 sprig Fresh Thyme
15.5 oz (1 can) rinsed, drained can red kidney beans
2 cups uncooked long grain rice
to taste salt and fresh ground pepper
2¼ cups water
13.5 oz (1¾ cups) light coconut milk
1 whole, not chopped scotch bonnet hot pepper

Steps:

  • In a medium heavy saucepan, heat the oil over medium heat; add garlic, scallion, onion, and thyme.
  • Sauté for a few minutes, then add the rice, beans, and stir.
  • Add the coconut milk, water, salt, and fresh pepper, and place the whole scotch bonnet pepper in the pot.
  • Stir to combine and bring to a boil.
  • Remove and discard the hot pepper, and continue to cook the rice until almost all the liquid is absorbed and just skims the top.
  • Cover. Reduce the heat to low and simmer for 25 minutes.
  • Remove from heat and keep covered for 10 additional minutes to allow the steam to finish cooking the rice (do not lift the lid before that).
  • Serve hot.

I am dedicating this recipe to my wonderful Uncle Miller (Chef Miller here on Recipezaar) who sent me a packet of Vigo Completely seasoned and easy to prepare Red Beans and rice, and, a box of Sazo'n Goya seasoning mix amongst alot of other much wanted goodies and herbs and extracts. I received Uncle Miller's gift box late last night(and it was Diwali all over again in my house!);) Uncle Miller made me feel like the luckiest girl on this planet! My mom commented that this really is your uncle. I told her that even my uncles haven't given me so many presents as Uncle Miller did:) Uncle Miller, you have the sweetest most kind, most loving and wonderful heart in the world and the most thoughtful mind too! Uncle Miller, I want to thank you a gazillion times for so many wonderful presents you have sent me. THANK U ever soooooooooooooooooooo much!! I have made this rice for lunch today and everyone(including my picky bro who announced this was very aromatic and drew him to the table!) savoured each and every grain of this pulao(pilaf)! Red Kidney beans are amongst my first 3 favourite lentils(the other two being yellow lentils and green lentils) and rice is one of my favourite comfort foods:) I can't THANK U enough, really...just want you to know that I could give you a ((((hug)))) now and that I LOVE YOU...

1 (8 ounce) package vigo completely seasoned easy to prepare red beans and rice mix
1 package sazon goya with coriander and annatto (a goya seasoning mix)

Steps:

  • Put the contents of the package in a1 1/2 quart microwave casserole dish.
  • Add 3 3/4 cups of hot top water.
  • Stir well.
  • Cover.
  • Microwave on HIGH power level for 4 minutes 20 seconds.
  • Uncover.
  • Add the packet of Sazo'n Goya.
  • Stir well.
  • Cover.
  • Microwave on HIGH power level for 17 minutes 40 seconds.
  • Uncover.
  • Mix well.
  • Allow to stand, covered, for 5 minutes.
  • Serve hot.

Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
½ teaspoon cayenne pepper
1 teaspoon dried thyme
¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

4 cans (16 ounces each) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (14 ounces) smoked turkey sausage, sliced
3 celery ribs, chopped
1 large onion, chopped
1 cup chicken broth
1 medium green pepper, chopped
1 small sweet red pepper, chopped
6 garlic cloves, minced
1 bay leaf
1/2 teaspoon crushed red pepper flakes
2 green onions, chopped
Hot cooked rice

Steps:

  • In a 4- or 5-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low until vegetables are tender, 3-4 hours. , Stir before serving. Remove bay leaf. Serve with green onions and rice. Freeze option: Discard bay leaf and freeze cooled bean mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary. Serve as directed.
