Chanterelle mushrooms are going to take your taste buds on a ride! This recipe takes these sought-after mushrooms to the next level in under 30 minutes.

4 tbsp salted butter
3 garlic cloves
1 lb chanterelle mushrooms
2 cups heavy whipping cream
1 cup parmesan cheese

Steps:

  • Slice chanterelle mushrooms into bite-size pieces.
  • Preheat a skillet with butter and pressed garlic, cook on medium-low for 2 minutes.
  • Add sliced mushrooms to the skillet and sautee them for about 7 minutes on medium heat.
  • Add heavy cream and parmesan cheese, stir to combine all together. Simmer on low heat for about 5 minutes.
  • Add your favorite pasta (about 8oz) to the chanterelle mushroom sauce.

They have a sweet, peach-like flavor that is enhanced by red wine and a wonderful complement to meat. This is a hearty side dish to accompany your favorite grilled meat like a flatiron steak or other favorite red meat.

3 tablespoons olive oil
2 cloves crushed garlic
1 pound fresh wild chanterelle mushrooms, cleaned and quartered
1 teaspoon butter
1 pinch kosher salt and freshly ground black pepper to taste
½ cup port

Steps:

  • Heat olive oil in a cast iron skillet over medium heat until sizzling but not smoking. Stir in garlic. Add chanterelles and butter. Reduce heat to medium-low and cook, stirring frequently, until most of the excess liquid evaporates, about 10 minutes. Season with salt and pepper.
  • Increase heat to high and carefully pour port into the skillet; stir until reduced, about 2 minutes. Serve steaming hot.
