ST. MARTIN'S CHAMPAGNE BRIE SOUP



St. Martin's Champagne Brie Soup image

St. Martin's, and their sister restaurant, Arthurs Steak House are my two favorite, quiet, romantic, restaurants in Dallas. This Champagne Brie Soup is one of their signature items. It is like velvet. It is SO easy! St. Martin's is also nice enough to post the recipe on their web site! I wanted to be sure that I posted it and "advertised" it here too, so that even folks who do not live in Dallas can enjoy it!

Number Of Ingredients 6

2 cups dry champagne
2 cups white wine
1 tablespoon finely chopped shallot
2 chicken bouillon cubes
8 ounces brie cheese, with rind left on
1 1/2 quarts heavy cream

Steps:

  • 1. Sauté shallots and bouillon in wine.
  • 2. Add remaining wine and champagne and then add brie and heavy cream.
  • 3. Bring to a boil for an instant just until head forms then remove from heat and let stand for 5 minutes.
  • 4. Strain.
  • 5. Taste for adding salt if you want.

5 cups quartered strawberries
¼ cup white sugar
⅛ teaspoon salt
1 cup champagne

Steps:

  • Place the strawberries into a blender, and sprinkle with sugar and salt. Process until smooth. Cover, and chill for 2 hours. Stir in champagne just before serving.

8 ounces/250g raspberries
8 ounces/250g strawberries
1/2 cup/100g sugar
Juice of 1/2 lemon
1 pound/500g mixed soft fruits and berries, such as strawberries, raspberries, blackberries, blueberries
A handful fresh mint leaves, chopped
Creme fraiche, optional, for serving
1 bottle (750ml) cold Champagne

Steps:

  • Puree the raspberries and strawberries. Press through a sieve into a bowl. Add the sugar and lemon juice. Chill. To serve, stir the mixed fruit into the puree. Spoon into soup plates. Scatter the mint over the top. Set the creme fraiche on the table so everyone can add a dollop. Pass the bottle of Champagne and let everyone pour a glug into his bowl. Pour the rest of the bubbly into glasses.

10 ounces champagne
2 pints strawberries, washed,cleaned of stems,and halved
4 ounces water
8 ounces orange juice
1/2 cup sugar
1 cinnamon stick
1/4 teaspoon kosher salt
8 green peppercorns
2 tablespoons honey
1 tablespoon lemon juice

Steps:

  • Bring water, orange juice, sugar, cinnamon stick, salt, honey and green peppercorns to a simmer.
  • Let stand for one hour.
  • Strain mixture through a fine-meshed strainer and pour over the strawberries.
  • Put the strawberries in a blender.
  • Puree until mixture is smooth.
  • Stir in the lemon juice and champagne.
  • Serve chilled.

Champagne-Infused Blackberry Soup with Sour Cream Sorbet image

2 cups water
1/2 cup sugar
Juice from 1/2 lemon
3 cups blackberries
3 mint leaves
1/4 cup Champagne or sparkling wine
1 tablespoon sugar
1 cup water
1/2 tablespoon corn syrup
Juice from 1 lime
1/2 cup sour cream

Steps:

  • Soup: In a saucepan, bring water, sugar, blackberries and lemon juice to a boil over medium-high heat. Simmer for approximately 10 minutes, then add mint leaves. Remove from heat and let cool. Blend mixture together in a mixer or food processor, then strain through a sieve.
  • Sorbet: In a medium saucepan, bring sugar, water and corn syrup to a boil over medium-high heat. Let cool, then stir in lime juice and sour cream. Churn in an ice cream maker until proper consistency is achieved.
  • To serve: Divide blackberry soup into four equal parts and pour into separate bowls. Put 1 scoop of sorbet in the middle of each bowl and drizzle with champagne.

CHILLED FRUIT AND CHAMPAGNE SOUP

This is a very impressive course to add to a dinner party. It can be served after an entrée and before the main instead of a sorbet. It is a good idea to practise making this dish before serving it on a special occasion so you will know what fruit, bubbly, jugs and bowls create the best effect. It serves about 3-4 but that depends on the size of the bowls you use.

1 (440 g) can peaches or 1 (440 g) can apricots
1 (44 g) can plums or 1 (44 g) can cherries
1 (750 ml) bottle champagne, but cheap sweet bubbly wine is better or 1 (750 ml) bottle sparkling grape juice, for a non alcoholic version

Steps:

  • You need some plain, flat white soup or pasta bowls for this to work well.
  • Place a 440g can of red fruit (cherries, berries, plums) and a 440g can of orange fruit (peaches, apricots) in the fridge overnight. Process each can separately. Puree the fruit and the juice or syrup in a blender, use enough of the syrup or juice to puree the fruit easily, this will be between about half to all of it. Then pass through a sieve to a 1litre jug. Rinse the blender and sieve before doing the second can of fruit and putting it in a different jug.
  • Cover each jug with plastic wrap and put in the fridge until just before serving.
  • Add the champagne to each jug so they are have increased by half again once you have stirred the fruit and champagne together and the foam has been mixed inches This will only use about half of the bottle.
  • Hold a jug in each hand and pour both fruit mixes into a chilled bowl at the same time from opposite sides of the bowl. They should meet in the middle. Use a toothpick to make a small swirling pattern where the two colours meet.
  • If you have a helper in the kitchen to pour a third jug, you could add a third can of white fruit (apples or pears).
  • This is a very simple dish and once you have made it a couple of times you will feel able to experiment quite happily but remember to use cans of fruit rather than fresh as it saves a lot of hassle cooking the fruit and there is consistency in the amount of fruit in each can.
  • Beware that the combination of fruit and alcohol can affect people more noticeably that they would expect.
