Shrimp Cakes with Scallion Dip image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 13

1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1 scallion, roughly chopped
1 small clove garlic, grated
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 pound medium shrimp, peeled and deveined
1 cup panko breadcrumbs
1 large egg, lightly beaten
1/2 teaspoon grated lemon zest
3 tablespoons vegetable oil, plus more for forming
1 5-ounce package mixed greens (about 6 cups)
4 radishes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F. Puree the mayonnaise, parsley, scallion, garlic, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor; transfer to a bowl.
  • Add half of the shrimp to the food processor and pulse until a thick paste forms. Add the remaining shrimp, 1/2 cup panko, 2 tablespoons of the prepared dressing, the egg and lemon zest. Pulse until combined but still chunky. With oiled hands, shape the mixture into eight 1/2-inch-thick patties. Transfer to a baking sheet; freeze 5 minutes.
  • Put the remaining 1/2 cup panko on a plate. Heat the vegetable oil in a large nonstick ovenproof skillet over medium heat. Coat the patties on both sides with the panko; cook until golden, 2 minutes per side. Transfer the skillet to the oven and bake until the patties are cooked through, 5 to 7 minutes.
  • Meanwhile, toss the greens, radishes, 2 tablespoons of the dressing and the remaining 1 tablespoon lemon juice; season with salt and pepper. Serve the shrimp cakes with the salad and remaining dressing.

Time 25m

Number Of Ingredients 16

1.5 Pounds colossal tiger shrimps (De-shelled, de-veined)
1 cup roughly chopped parsley
1/4 cup Mayonnaise
1.5 tbsp Dijon Mustard Paste
1/2 tbsp Paprika
1 tsp Onion Powder
1 tbsp Minced Garlic
2 medium eggs
1/2 cup Parmesan (or more)
1/2 cup oats flour (or more)
1/4 cup Extra Virgin Olive Oil (For pan frying the patties)
Salt (to taste)
1/2 cup mayonnaise

  • Add chopped parsley, mayo, dijon mustard paste, salt, paprika powder, eggs, chopped garlic, onion powder & Oats flour and give everything a good mix.
  • Finally, add the parmesan cheese and mix everything well. If you feel the batter is too slimy add a bit more oats flour to bind it well.
  • Heat your favorite skillet over medium low flame, brush oil or drizzle oil.
  • In the meantime form patty shapes with a scoop of shrimp batter with the help of your palm (you may grease your palms for ease) or scoop out each patty with the help of a cookie scoop. Gently drop them on the hot pan & press them gently to flatten or give a patty shape.
  • Flip sides, cook until golden over medium low or medium heat.
  • When the patty is fully cooked give that char look and add more crispiness by searing them over medium high heat for a couple of mins (both sides).
  • Serve hot!
  • In a clean bowl take mayo and add mustard paste, paprika, salt & chopped garlic. Mix well. Aioli is ready. Serve with the shrimp patties.

Provided by Chamorita Momma

Categories     Seafood Appetizers

Time 20m

Number Of Ingredients 12

2 eggs, beaten
1 (10 oz) can(s) evaporated milk
2 c all purpose flour
2 tsp baking powder
1 1/2 tsp salt
1/2 - 1 tsp black pepper
1 1/2 - 2 tsp garlic powder
1 1/2 - 2 tsp onion powder
1/2 tsp accent flavor enhancer
2 lb raw, peeled and deveined shrimp, coarsely chopped
1 (10 oz) pkg frozen mixed vegetables, thawed
4 c vegetable oil, for deep frying

Steps:

  • 1. In a mixing bowl, beat the eggs with the evaporated milk. 2. Add the flour, baking powder, and the seasonings. Mix until smooth. 3. Add the shrimp and mixed vegetables, combining well. 4. Heat oil in a 12-inch skillet to medium heat. 5. Drop batter by tablespoonfuls and fry until golden brown. 6. I usually fry 1 or 2 patties and taste them to make sure seasoning is just right. Adjust seasoning if needed. 7. Using a bamboo skewer, pierce the center of patty to make sure that skewer comes out clean. A little bit of dough will be on the skewer but as long as it's not runny and still wet looking, it should be done. 8. Drain on paper towels. 9. Serve at room temperature.
