Steps:
- Heat the oven to 220C/200C fan/gas 7. Rub the olive oil over the potatoes and put on the top shelf of the oven. Bake for 20 mins.
- Turn down the oven to 190C/170C fan/gas 5 and bake for 45 mins-1 hr until the skin is crisp and the flesh soft.
- Cut a cross on top of each potato, squeeze the sides, add the soured cream and your favourite toppings.

SCALLOPED POTATOES WITH DEHYDRATED POTATOES

- Preheat oven to 350°F/180°C.
- Pour potato slices in casserole dish.
- In small bowl, combine powdered milk, flour, cornstarch, onion, chives, salt, mustard powder and black pepper. Stir well.
- Gradually whisk in water and mix to ensure no lumps remain.
- Pour over potato slices.
- Cut butter in small pieces and distribute over top of potatoes and liquid.
- Place in oven and cook for 40 to 45 minutes.
- Remove from oven and let rest and set for 5-10 minutes before serving.

- Preheat the oven to 375 degrees F.
- In a large pot, add the potatoes and cover amply with cold water. Bring the water up to a boil and reduce to a simmer. Add a generous pinch of salt to the water and allow the potatoes to cook until tender when pierced with the tip of a knife, 15 to 20 minutes.
- Pour the water and potatoes into a colander placed in the sink to drain off all of the water. Return the same pot to the heat and add the milk. Bring the milk to a simmer and gingerly add the potatoes back into the pot. Season with salt. Whisk in the stick of butter. Whisk until all of the ingredients meld together. Taste for seasoning. Remove from the heat.
- Use the remaining 1 tablespoon butter to "grease" the sides and bottom of the baking dish. Add in the breadcrumbs and roll them around inside the dish so it creates a butter/breadcrumb topping.
- Using a whisk (or an electric mixer fitted with the whisk attachment), whip the heavy cream until fairly firm. Season with salt.
- With a rubber spatula, gently fold the whipped cream and about 1/2 cup Parmesan cheese into the mashed potatoes. Taste for seasoning. Transfer the potatoes to a baking dish and top with remaining Parmesan. Place in the center of the oven and bake, undisturbed, for 15 to 20 minutes. The top should be light brown from the cheese and the potatoes hot. Serve immediately.

- Place the potato wedges in a bowl of water, and refrigerate for at least 1 hour.
- Preheat oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray. Melt 1/2 cup of butter in a small saucepan over low heat; pour it into a shallow dish. Mix flour, salt, and pepper in a second shallow dish. Roll potato wedges in the seasoned flour, then dip into the butter. Arrange potato wedges on the baking sheet. Melt and add more butter for dipping as you go along (the flour makes it thick).
- Bake the wedges in the preheated oven until tender and golden brown, 35 to 40 minutes.

CHATEAU POTATOES

- Peel potatoes with turning knife. Cut into 8 sided shapes. In rimmed baking sheet, heat butter, oil and rosemary in a preheated 425-degree oven until butter starts to sizzle. - Add them to an oven-proof frying pan, along with the whole garlic cloves, butter and olive oil (if you don’t have an oven-proof frying pan, just transfer them to a baking dish before placing in the oven).
