- In a large bowl, combine the first 12 ingredients. In a blender, cover and process tea mixture in batches until powdery. Store in an airtight container in a cool, dry place for up to 6 months., To prepare chai tea: Place 1/4 cup mix in a mug. Add hot milk; stir until combined.

- In a large bowl, combine milk powder, non-dairy creamer, vanilla flavored creamer, sugar and instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder.
- To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water.

- Preheat oven to 350 degrees F. Break the anise star pods, if using in lieu of the cardamom, in half. Then crumble the cinnamon sticks into smaller pieces. Next, place the anise star pods (or cardamom) and cinnamon into a large dish with the black peppercorns, fennel seeds, coriander seeds and cloves. Heat your spices in the oven for about 5 minutes until fragrant. Then remove the warm chai tea spices from the oven. Allow to cool. Crush the cooled spices as much as possible using the bottom of a glass or cup. In a large bowl, combine the tea, candied ginger and spices. Mix well. Fill two 6.75 oz. bags or mason jars with the tea, then label with brewing instructions.

CHAI TEA MIX GIFT IN A JAR
Watch out Starbucks, you'll be out of business in no time. The nutmeg and allspice is an added spice hit, use as desired. Also, I've been playing around with the amount of sugar, I like the sweetness with just 1/2 cup sugar, some suggest no sugar at all. If you don't care for the residue in the bottom of your cup, you can strain the mix with a fine sieve. Food for thought. Note 12-21-12 (I want to thank the gal that just reviewed The Chai Tea.... she used it in her K coffee machine by just running hot water into the cup, perfect temperature for the tea mix)

In a coffee grinder, blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder. To serve: Stir 2-3 heaping tablespoons Chai tea mixture into a mug of hot water or warmed skim milk. FOOTNOTE You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps. Follow the same procedure as above.
CHAI TEA GIFT MIX
What a nice (and EASY!) gift to give at the holidays or any time of the year! Uses dry ingredients (like powdered instant iced tea mix) that are easily found at the grocery store. I put my mix in a pretty glass container and tie with a ribbon with an instruction card attached. Each recipe makes about 4 servings.
