EASY MASALA CHAI RECIPE

Easy Masala Chai Recipe image

A delicious and easy dairy-free chai recipe made with whole spices. It's spicy, comforting, naturally sweetened, and made in just 1 pot with 8 ingredients!

Provided by Minimalist Baker

Categories     Beverage

Time 25m

Number Of Ingredients 9

1 whole cinnamon stick
6-8 green cardamom pods
1 tsp whole black peppercorns
3-4 whole cloves
2 ½ cups water
2 Tbsp grated ginger ((for less intense ginger flavor, slice instead of grating))
3 Tbsp loose leaf black tea ((or ~3-4 black tea bags // use decaf as needed))
2 cups dairy-free milk
Sweetener such as stevia, organic cane sugar, or maple syrup to taste

Steps:

  • Add cinnamon stick, cardamom pods, peppercorns, and cloves to the bowl of a mortar (or cutting board) and use pestle (or heavy pan) to slightly crush the spices. You aren't pulverizing into a powder, just slightly crushing into small pieces (see photo).
  • To a medium saucepan add crushed spices, water, and grated (or sliced) ginger and bring to a boil over high heat. (Note: For a less gingery chai, reduce amount of ginger and slice rather than grating). Then reduce heat slightly to medium/medium-low and maintain a simmer for 15 minutes or until it reduces by about one-third.
  • Add tea (loose leaf or bags) and dairy-free milk of choice (we love light canned coconut) and lower heat to low. Cover and continue cooking for 5 minutes to allow the flavors to meld. Then turn off heat and let steep for 5 minutes more (covered) or longer for deeper flavor.
  • Add sweetener of choice to taste (we prefer stevia or maple syrup, but sugar is more traditional). Strain through a fine mesh strainer before serving.
  • Keep strained, cooled leftovers covered in the fridge up to 3-4 days. Reheat on the stovetop or in a milk frother. Not freezer friendly.

AUTHENTIC HOMEMADE INDIAN CHAI

Authentic Homemade Indian Chai image

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

Provided by Jennifer Pallian BSc, RD

Categories     Drinks

Time 6m

Number Of Ingredients 8

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)

small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

HOMEMADE CHAI

This chai recipe-inspired by versions in India-combines black tea, spices, and milk. The savory notes from black pepper and cardamom in this version give it a wonderful aromatic complexity.

  • Lightly crush cardamom pods, whole cloves, star anise and peppercorns, and place in a small pot with 1 cup of water. Add ginger, cinnamon and black tea. I like to muddle the ginger a bit right in the pot.
  • Bring to a boil and turn the off heat (don’t continue to boil the tea, it may get bitter) and let it steep at least 10 minutes…. or for several hours. The longer, the more flavor!
  • Stir in your choice of sweetener, taste, adding more sweetener to taste. If it tastes bitter, you need more sweetener. Strain into a chai glass or mug.

  • Place the chai tea spice mixture in a saucepan or pot, addthe tea leaves and ginger and heat and toast over medium heat, stirring constantly to keep the spices from burning. In this way you will allow the flavors and aromas to develop and contaminate themselves.
  • Add the water to the pot, and bring to a boil. Simmer, andat this point add the milk and sugar. Continue stirring, cooking for another 5 minutes over medium heat, so as not to burn the milk.
  • You can then turn off the heat, filter and pour into the cup. You will have got a perfect cup of chai tea.
  • The proportions can be varied at will, as well as the quantities of sugar: in India, for example, it is traditional for chai tea tobe very sweet, and for this reason a lot of sugar or honey is added.

  • Mix together the coarsely ground spices with the tea leaves of your choice and add in crushed up stevia leaves if desired.
  • Your chai tea is now ready for using. You can either spoon in around a tsp. of the mixture into teabags to have ready to use chai teabags for individual servings, or add the desired amount to a teapot.
