4 whole cloves
2 whole peppercorns
4 tea bags
4 teaspoons sugar
1/4 teaspoon ground ginger
1 cinnamon stick (3 inches)
2-1/2 cups boiling water
2 cups 2% milk

Steps:

  • Place cloves and peppercorns in a large bowl; with the end of a wooden spoon handle, crush spices until aromas are released., Add the tea bags, sugar, ginger, cinnamon stick and boiling water. Cover and steep for 6 minutes. Meanwhile, in a small saucepan, heat the milk., Strain tea, discarding spices and tea bags. Stir in hot milk. Pour into mugs.

My husband and I love chai tea and decided to try making chai tea ice cream. We used Indian black tea and masala spices, but decided to add some of our own spices to increase the intensity of the flavor.

3 cups whole milk, or more to taste
3 cups heavy whipping cream
3 cups white sugar
4 cinnamon sticks
4 tablespoons Indian-style plain black tea
3 tablespoons garam masala (Indian spice blend)
10 black peppercorns
6 cardamom pods
2 whole star anise pods
1 teaspoon ground nutmeg
1 tablespoon vanilla extract
1 cup chopped semisweet chocolate

Steps:

  • Mix whole milk, whipping cream, sugar, cinnamon sticks, tea, garam masala, peppercorns, cardamom pods, anise pods, and nutmeg together in a saucepan; bring to a simmer and cook for 20 minutes. Strain mixture through a colander into a large bowl. Add up to 1 cup more milk to cut spice level and sweetness to your liking.
  • Pour milk mixture into an ice cream maker and churn according to the manufacturer's instructions.
  • Stir chocolate into the churned milk mixture and freeze, stirring occasionally, until soft and creamy, 4 to 5 hours.

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

After the tea is brewed, it's mixed with sweetened condensed milk and evaporated milk to make it creamy, rich, and sweet. 1 tablespoon Thai black tea
1 cup of hot boiling water
2 teaspoons sweetened condensed milk
2 teaspoons evaporated milk (plus some more to sprinkle on top)
2 teaspoons sugar
1 cup of crushed ice

Steps:

  • First step is to boil water, I'm just using a pot, but you could use a water boiler or microwave
  • Take your tea sock and add about 1 tablespoon of black Thai tea. It's then easiest to put your tea sock into a bowl or big cup in order to steep the tea.
  • Pour 1 cup of boiling water into the tea sock, and push it in and out to steep the tea and extract all that flavr. Steep the tea for a few minutes until it turns nice and dark in color.
  • Taking a new cup, pour in 1 glass of hot tea
  • Add 2 teaspoons of sugar, 2 teaspoons of sweetened condensed milk, and give it a nice stir
  • Then add 2 teaspoons of evaporated milk, and continue to stir the tea until everything is fully mixed in
  • Optional - A good Thai iced tea should have a little froth or some bubbles on top, so take 2 pitchers, and pour the tea from one to the other, with a bit of elevation. You could do this in a different way too, but it's pretty fun!
  • Take a cup and fill it all the way to the top with crushed ice
  • Gentry pour your hot tea mixture over the cup of ice
  • To give your Thai iced tea a final creamy touch, drizzle on some more evaporated milk onto the top of your cup
  • Add a straw, and you're ready to start slurping it down!

There's just no need to buy a chai mix when you can make it so easily at home, especially if you can buy your spices loose and use them right away so they don't lose flavor. Here, we make a homemade chai, then mix it with sweetened condensed milk for a rich, creamy summer drink that is similar to Thai iced tea.

2 tablespoons black peppercorns
6 green cardamom pods, lightly crushed
3 star anise
2 cinnamon sticks
8 black tea bags
3/4 cup sweetened condensed milk
1/4 cup milk

Steps:

  • Bring the peppercorns, cardamom pods, star anise, cinnamon sticks, and 4 cups cold water to a boil in a medium saucepan over medium-high heat. Reduce the heat and simmer for 10 minutes. Turn off the heat, add the tea bags and let steep 5 minutes. Discard the tea bags, strain the tea mixture into a large measuring cup and discard the spices. Let the tea mixture cool at room temperature for at least 10 minutes, then chill completely in the refrigerator, about 1 hour.
  • To serve, fill 4 tall glasses with ice. Divide the chilled tea mixture among them. Whisk the sweetened condensed milk and milk together in a small bowl or large measuring cup until smooth, then pour 1/4 cup into each glass. Stir and serve immediately.

Most iced chai lacks that burst of spice flavor that you taste in hot chai. This recipe overcomes that challenge in two ways, and gives you a spicy cup.

32 green cardamom pods
1 tsp. black peppercorns
3 cups milk or plant-based milk
1 tsp. ground ginger
2 Tbsp. CTC Assam tea (such as Wagh Bakri, Red Label, Tea India, or 24 Mantra Organic)
3 Tbsp. plus 1 tsp. (or more) granulated sugar or jaggery
1 lb. ice (about 3½ cups)
Special equipment
A mortar and pestle

Steps:

  • Coarsely crush cardamom pods with a mortar and pestle, then partially grind seeds. Transfer to a plate. Grind peppercorns with mortar and pestle until about medium-coarse; transfer to same plate.
  • Rinse a medium pot (about 9" diameter) with water (this helps keep the milk from scorching). Combine milk, cardamom pods and seeds, pepper, and ginger in pot and bring to a rolling boil over medium heat, scraping sides and bottom of pot occasionally with a heatproof rubber spatula. When foam starts to rise, cook 20 seconds, scraping spices from sides of pot (some plant-based milks won't foam; simply cook 30 seconds from boiling). Reduce heat to low to allow foam to die down, then increase heat to medium-low and simmer, scraping bottom and sides of pot occasionally and adjusting heat as need to keep foam from rising, until milk is light tan in color from spices, about 2 minutes.
  • Stir in tea and simmer, scraping pot occasionally and adjusting heat as needed, until milk is deep tan and reduced by one third, about 4 minutes. Strain through a fine-mesh sieve into a large measuring glass, pressing on solids with spatula. (Soak pot in hot water immediately to help with cleaning.) You should have 2 cups chai concentrate; return chai to pot and simmer another minute to reduce further if needed. Add sugar and stir until dissolved.
  • Place ice in a large heatproof bowl with a spout or a large heatproof pitcher. Immediately pour hot chai over ice. Stir until ice is almost completely melted (larger cubes may take longer), about 2 minutes. Taste chai and add up to 2 Tbsp. cold water or 1 Tbsp. simple syrup (dissolve 2-4 tsp. sugar in 2 tsp. warm water) if needed. Serve in glasses filled with fresh ice if desired.
  • Do ahead: Chai can be made 3 days ahead. Transfer to an airtight container; cover and chill.

  • 1. Boil the water and steep tea bags with cardamom for 5 minutes. Strain out tea bags and let cool. Put ice into 4 glasses, and add tea. Leave about a quarter of the glass empty. To each glass add, 1 tbs sugar, 1 tsp cinnamon and 1/4 cup of milk.
  • 2. Now before you tell me I should have used Chai tea bags, let me say that true chai tea is made from black teas with aromatic spices added to it. There are different variations of the spices used, and this is just one of many recipes. I hope you enjoy it.
