8 ounces cream cheese
1 cup mayonnaise
2 teaspoons curry powder
1 teaspoon salt
6 cups cooked chicken
8 ounces crushed pineapple
2/3 cup orange flavored dried sweetened cranberries
1 cup chopped chopped roasted salted almond

Steps:

  • Whisk together cream cheese and next 3 ingredients in a large bowl; stir in chicken, pineapple, and cranberries just until blended.
  • If desired, spoon mixture into a plastic wrap-lined 8-inch round cake pan; cover and chill at least 8 hours or up to 24 hours. Invert chicken salad onto a cake stand, and remove plastic wrap. Gently press chopped almonds onto sides of chicken salad.

1 cup mayonnaise

1 (8 ounce) can crushed pineapple
2/3 cup orange-flavored dried sweetened cranberries
1 cup chopped chopped roasted salted almond
fresh herb, blackberries, raspberries, sliced peaches

Steps:

  • 1. Whisk together cream cheese and next 3 ingredients in a large bowl; stir in chicken, pineapple, and cranberries just until blended.
  • 2. If desired, spoon mixture into a plastic wrap-lined 8-inch round cake pan; cover and chill at least 8 hours or up to 24 hours. Invert chicken salad onto a cake stand, and remove plastic wrap. Gently press chopped almonds onto sides of chicken salad. Garnish, if desired.

1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese

Steps:

  • Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
  • Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

Make sure to allow some space between each leg so that the heat can circulate well while baking - this will help crisp the skin.
