CHOCOLATE-PRETZEL CEREAL TREATS



Chocolate-Pretzel Cereal Treats image

Use chocolate cereal for these marshmallow-bound treats and stir in crushed pretzels. Drizzle with chocolate and chill before serving.

Number Of Ingredients 8

6 tablespoons unsalted butter, plus more for buttering the pan
One 10-ounce bag mini marshmallows
1 teaspoon pure vanilla extract
Kosher salt
8 cups puffed chocolate cereal, such as Cocoa Puffs
2 cups crushed pretzels
2 ounces semisweet chocolate, chopped
1 teaspoon coconut oil

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil leaving a 2-inch overhang on the two short ends. Lightly coat the foil with butter.
  • Melt the butter in a large pot set over medium heat. Add the marshmallows and cook, stirring occasionally, until the marshmallows melt, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt and then the cereal and pretzels until well mixed. Transfer to the prepared baking dish and press into an even layer. Set aside at room temperature until cooled and firm, about 30 minutes.
  • Melt the chocolate and coconut oil together in a small microwave safe bowl for 30-second increments in the microwave, stirring, until smooth. Drizzle over the bars, cover and refrigerate until the chocolate hardens, about 15 minutes. Cut into bars.

1 1/4 cups freeze-dried strawberries, crushed
6 tablespoons unsalted butter
1 tablespoon honey
1 10-ounce bag mini marshmallows
1 teaspoon vanilla extract
Pinch of salt
8 cups crispy whole-grain rice cereal

Steps:

  • Lightly coat two 12-cup muffin pans and a rubber spatula with cooking spray. Sprinkle a few crushed freeze-dried strawberries into the bottom of each muffin cup; set aside.
  • Melt the butter in a large saucepan over medium heat. Add the honey, marshmallows, vanilla and salt; stir with the rubber spatula until completely melted. Add the cereal and the remaining crushed freeze-dried strawberries and stir until incorporated.
  • Divide the mixture between the prepared muffin pans, firmly packing it in; let set, about 20 minutes. Gently pry out of the pans. Store in an airtight container up to 3 days.

Standard crispy rice treats get a colorful makeover with the addition of dried fruit and fruit-flavored cereal.

4 tablespoons unsalted butter, plus more for greasing
One 10-ounce bag mini marshmallows
1 teaspoon pure vanilla extract
Kosher salt
3 cups puffed rice cereal, such as Rice Krispies
3 cups fruit-flavored cereal flakes, such as Fruity Pebbles
1/2 cup finely chopped dried fruit, such as apricots, cranberries or cherries

Steps:

  • Line an 8-by-8-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt 2 tablespoons of the butter in a large pot over medium heat. Add half of the marshmallows and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in 1/2 teaspoon of the vanilla and a small pinch of salt. Add the crispy rice cereal and stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer (use the bottom of a measuring cup to help).
  • Clean the pot out and repeat the process with the remaining butter, marshmallows, 1/2 teaspoon vanilla, fruit flavored cereal flakes, dried fruit and a small pinch of salt. Spoon the mixture directly on top of the puffed rice cereal and pat down into an even layer. Let sit at room temperature until firm, about 30 minutes.
  • Cut into 25 small squares. Store at room temperature in an airtight container for up to 3 days.

This version has no chocolate topping, but it would be easy to melt chocolate chips and spread them over the top. We have a nut allergy in our family and I omit the peanut butter and substitute 1/2 cup of butterscotch chips melted with the margarine instead.

Steps:

  • Spray a 13 x 9 inch pan on bottom and sides with non-stick cooking spray.
  • In a large bowl in microwave, melt margarine. Add marshmallows, stir to coat. Microwave on high 1 1/2 minutes or until smooth when stirred for 45 seconds. Stir in peanut butter.
  • Add cereal all at once and stir quickly to coat. With buttered spatula, press into prepared pan. Cool and cut into squares.

These cereal treats are like rice krispy treats but different and yet very tasty!... you can use any type of cereal you like and can add in dried fruit, chocolate chips, marshmallows, etc. I have made these with many different combinations (such as grape nuts, honey & Nutella and omitting the sugar because it is just sweet without, but play around with it and Just have fun with this recipe!

4 cups of your favorite cereal
1/2 cup corn syrup or 1/2 cup honey
1/2 cup peanut butter (like Nutella) or 1/2 cup chocolate hazelnut spread (like Nutella)
1/2 cup sugar, if using corn syrup (or if you want an added sweetness to your recipe)

Steps:

  • Line an 8 or 9-inch square baking pan with plastic wrap.
  • Pour cereal into a large bowl.
  • In medium saucepan, combine sugar & corn syrup.
  • Stir occasionally and bring to a boil over medium heat; boil 1 minute.
  • Remove from heat.
  • Stir in peanut butter until smooth.
  • Pour over cereal; stir to coat.
  • Press evenly into prepared pan.
  • Cool about 15 to 20 minutes Invert onto cutting board; remove plastic wrap. Cut into bars. (Or you can drop by the teaspoon on wax paper instead of placing into pan).
  • (For microwave directions, Prepare pan in step 1 as above.
  • In 2 quart microwavable bowl, combine sugar, corn syrup & peanut butter. Microwave on high, stirring twice, 3 1/2 to 4 minutes or until mixture is smooth and sugar has dissolved. Complete as in step 7 and on).
  • (You can also drizzle melted chocolate over cereal bars or make a flavored glaze and drizzle over bars, the possibilities are up to you! Have fun!).
  • For non Apian Vegetarians/Vegans do not use the honey. Ask before making if you are making this for a gift to be sure they consume honey.

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolks and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to the creamed mixture until mixture resembles coarse crumbs (do not overmix)., Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 12-14 minutes or until golden brown. Immediately sprinkle with marshmallows; bake 2-3 minutes longer or until marshmallows are puffed. Cool on a wire rack., For topping, in a large saucepan, combine the corn syrup, butter and peanut butter chips. Cook and stir over medium heat until chips are melted and mixture is smooth. Remove from the heat; stir in the vanilla, cereal, nuts and M&M's. Spread over crust. Cool before cutting.
