TEXAS CAVIAR
This is not the same as some of the other recipes for the same name. My family was reluctant to try this but loved it! Don't be intimidated by the laundry list of ingredients...they are mostly cans! Cooking time is refrigeration time. The recipe comes from a friend of the family. It needs 24 hours to marinate.

Steps:
- Combine vinegar, water, oil, sugar, salt and pepper in saucepan. Bring to a boil, stirring occasionally. Cool to room temperature.
- Drain beans, corn, peas, green chilies, and pimento. Combine with green peppers, celery, and onion in a bowl. Add marinade and mix well.
- Chill covered for 24 hours.
- Serve with tortilla chips.

CENTRAL MARKET'S TEXAS CAVIAR
I got this from the Central Market website! Really excited to try it sometime soon! (Central Market is an absolutely AMAZING place, kind of like Whole Foods but bigger and better...sadly only in Texas!)...cooking time includes 2-hour cooling period. and preparation time is just an estimate.

Steps:
- Pick through beans and remove any that are damaged or spoiled.
- Also, remove any remaining hulls.
- In a large saucepan bring water to boil and add peas and garlic.
- Cook until peas are tender.
- Rinse peas under cold water to stop cooking process.
- Drain thoroughly, remove garlic, and combine with green pepper, onion, oil, vinegar, pepper flakes and salt.
- Mix well.
- Cover and refrigerate for at least 2 hours (more is better).
- Transfer to a relish dish and serve with a slotted spoon to allow liquid to drain.

- Combine the black-eyed peas, red onions, parsley, vinegar, oil, garlic, tomatoes, bell peppers, jalapeno peppers and hot sauce in a bowl. Season with salt and pepper. Cover with plastic wrap and refrigerate at least 3 hours and up to 24 hours. Serve with tortilla chips.

- Mix all ingredients thoroughly in a large bowl. Chill in the refrigerator for 24 hours, stirring occasionally. Stir again before serving.

- Combine all ingredients except peas. Pour mixture over the peas and toss gently. Refrigerate overnight. Toss before serving. Can be held for up to a week.
BIG TEXAN TEXAS CAVIAR
Texas has some great steak houses. One of the most colorful in the state is Big Texan Steak Ranch in Amarillo. If you can completely eat a 72 oz. steak, along with a baked potato and shrimp cocktail, you get it free. Their recipe for Texas Caviar is also very good. Try making it sometime.

- In a large bowl, combine the peas, tomatoes, green pepper and onion. In a small bowl, whisk the dressing, lime juice, salt and pepper. Pour over black-eyed pea mixture and stir to coat. Cover and refrigerate for at least 1 hour. , Stir in avocado just before serving. Serve with chips.
