These gigantic sandwiches were invented a century ago at Sicilian Deli here in New Orleans. The spicy, tangy olive salad is what really sets this meat and cheese sandwich apart. A genuine muffuletta should be made on oven-fresh Italian bread topped with sesame seeds. Be sure and use the highest-quality ingredients available; it really makes a difference! Since you're going to all the trouble of making the olive salad, consider doubling the recipe so you'll have some extra waiting around for when you get another muffuletta craving -- it keeps for at least a month! Note: Use round bread loaves for real muffuletta.

1 cup pimento-stuffed green olives, crushed
½ cup drained kalamata olives, crushed
2 cloves garlic, minced
¼ cup roughly chopped pickled cauliflower florets
2 tablespoons drained capers
1 tablespoon chopped celery

½ cup pepperoncini, drained
¼ cup marinated cocktail onions
½ teaspoon celery seed
1 teaspoon dried oregano
1 teaspoon dried basil
¾ teaspoon ground black pepper
¼ cup red wine vinegar
½ cup olive oil
¼ cup canola oil
2 (1 pound) loaves Italian bread
8 ounces thinly sliced Genoa salami
8 ounces thinly sliced cooked ham
8 ounces sliced mortadella
8 ounces sliced mozzarella cheese
8 ounces sliced provolone cheese

Steps:

  • To Make Olive Salad: In a medium bowl, combine the green olives, kalamata olives, garlic, cauliflower, capers, celery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight.
  • To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella, mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters.
  • Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread.

This muffuletta sandwich recipe is made in the authentic New Orlean's style! Flavorful and delicious, your muffuletta can be prepared in minutes so you can enjoy it any time of day.

1 10″ round loaf Italian bread
1 cup Olive Salad
1/4 lb Capicola or deli ham (4-6 slices)
1/4 lb Genoa Salami (6-8 slices)
1/4 lb Mortadella (4-6 slices)
1/8 lb Sliced Mozzarella (3-4 thin slices)
1/8 lb Provolone (3-4 thin slices)

Steps:

  • Slice the round bread in half and open both sides on a flat surface.
  • Brush both inner sides of the bread with oil from the Olive Salad or extra virgin olive oil, go a little heavier on the bottom.
  • Begin layering thre ham, salami, and mortadella on the bottom half of the bread. Top with cheeses.
  • Next, add the olive salad from the center out and spread it, leaving about a half-inch around the edge. Place the top half of the bread over the olive mixture, and press down to let the bread absorb the olive salad juices.
  • Using a bread knife, slice into 4 to 6 wedges.
  • Optional: place the whole sandwich, before slicing, on a large baking sheet, and toast/warm-up in a 350F preheated oven for about 5 minutes.

1.5 cups green olives (pitted)
1.5 cups kalamata olives (pitted)
1 cup gardiniera
1 tbsp capers
3 cloves garlic (minced)
1/8 cup celery (thinly sliced)
1 tbsp italian parsley (finely chopped)
1 tbsp fresh oregano (finely chopped)
1 tsp red pepper flakes
1 tbsp green onions (thinly sliced)
1/4 cup roasted red peppers ((recipe below))
3 tbsp red wine vinegar
1.5 cups olive oil

Steps:

  • Chop all ingredients to your desired consistency.
  • Combine everything together into a bowl.
  • Cover and refrigerate for a week to allow the flavors to marinate together. Stir occasionally.
  • Remove from refrigerator a few hours before use to allow olive salad to return to its natural consistency.

1 round load Muffuletta Bread ( or Italian-style bread, 10-inch in diameter*)
Olive oil, (extra-virgin, or juice from Olive Salad)
2 ounces salami, (thinly sliced)
2 ounces Italian ham, (thinly sliced)
2 ounces Provolone cheese, (thinly sliced)
2 ounces Mortadella, ((4-6 slices) )
2/3 cup green olives, (pitted and coarsely-chopped)
2/3 cup Kalamata olives, (pitted and coarsely-chopped)
1/2 cup pimento, (chopped**)
3 cloves garlic, (minced)
1 anchovy (fillet, mashed)
1 tablespoon capers, (drained and rinsed)
1/2 cup parsley (leaves, finely-chopped)
1 teaspoon pepper, (freshly-ground)
1/2 cup olive oil, (extra-virgin)

Steps:

  • Either make or purchase your Muffuletta Bread.
  • Prepare the Olive Salad (see recipe below).
  • Cut bread in half crosswise (lengthwise) and scoop out about half of the soft dough from top and bottom pieces (this is to provide more room for the sandwich ingredients). Brush the inside bottom of loaf with olive oil or juice from the Olive Salad marinade.
  • Layer salami, Italian ham, Mortadella and Provolone cheese on the bottom piece.
  • Top with as much Olive Salad as will fit without spilling out. Add top of loaf and press down slightly.
  • Slice in quarters and serve. Always serve the prepared Muffuletta Sandwich at room temperature, never toasted.
  • Makes 1 to 4 servings (depending your the appetite).
  • In a medium-size bowl, combine all the ingredients and then allow the flavors to mingle for at least 1 hour prior to serving.
  • Store, covered, in the refrigerator until ready to use.

1 cup sliced marinated artichoke hearts
1/2 cup shredded carrot
1/2 cup shredded inner stalks celery
1/2 cup finely chopped pitted green olives
1/2 cup finely chopped roasted red peppers
1/2 cup seeded, finely chopped pickled Tuscan peperoncini
1/2 cup pitted chopped kalamata olives
1/2 cup sliced pickled cocktail onions
1/4 cup drained tiny capers in brine
2 tablespoons red-wine vinegar
3 anchovy fillets, chopped
2 teaspoons dried oregano
1/4 teaspoon peperoncino flakes

For the muffuletta
8- inch round muffuletta bread, split open
2 ounces provolone, sliced
2 ounces deli ham, sliced
2 ounces capicola, sliced
2 ounces mortadella, sliced
2 ounces low-moisture mozzarella, sliced
2 ounces Genoa salami, sliced

Steps:

  • To prepare either version of the olive salad, mix all the ingredients in a bowl. Cover, and refrigerate several hours or overnight, to let the flavors develop. This makes more salad than you need for one 8-inch sandwich. Extra olive salad will keep for a week or more and can be used in salads, sandwiches, etc.
  • Lay the bottom of the muffuletta bread on a work surface, cut side up. Layer half of the cheeses and meats on the bread, then spread with 1/2 cup of the olive salad. Top with the remaining meats and cheeses.Finish with another 1/2 cup olive salad. Place top of bread on olive salad, and press down. Cut into four wedges.

1 cup ripe olives, chopped
2 tablespoons capers, drained
3 anchovies, drained and chopped
1/2 cup olive oil

1/2 cup fresh parsley, chopped
2 garlic cloves, minced
1 teaspoon oregano leaves
1 round loaf Italian bread (8 to 10 inches round)
1/2 lb mortadella, thinly sliced
1/2 lb provolone cheese, thinly sliced
1/2 lb genoa salami, thinly sliced

Steps:

  • Combine the olives, capers, anchovies, olive oil, lemon juice, parsley, garlic, and oregano in a bowl.
  • Cover and chill for 2 to 4 hours.
  • To assemble the sandwich, split the loaf of bread in half horizontally.
  • Take some of the soft insides out of each side.
  • Brush the inside of the top and bottom shells with excess marinade from the bottom of the olive salad bowl.
  • Stir the relish to blend and then spoon half onto the bottom round of bread.
  • Arrange the mortadella slices over the olive salad.
  • Then layer the provolone and salami.
  • Mound the remaining olive salad over that and cover with the top shell.
  • Wrap the sandwich tightly with plastic wrap and chill for at least 1 hour.
  • Cut the sandwich into wedges to serve.

Muffuletta is an Italian sandwich on steroids! A classic New Orleans invention that consists of a wide and round bread, a marinated olive salad, cheese and charcuterie. Perfect to feed a crowd, this sandwich is the epitome of epic!

3 garlic cloves
1 cup extra-virgin olive oil
1 cup pitted Castelvetrano olives
1 cup pitted Kalamata olives
2/3 cup Giardiniera (Italian-style pickled vegetables)
1 shallot (minced)
1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
2 tablespoons sherry vinegar
Kosher salt and freshly ground pepper (to taste)
1 large Muffuletta bread
1/2 pound Genoa salami (sliced thin)
1/2 pound ham (sliced thin)
1/2 pound provolone cheese
1/2 pound fresh mozzarella
1/4 pound mortadella (sliced thin)
1/2 pound Prosciutto di Parma (sliced thin)
1/4 pound soppressata (hot or sweet)

Steps:

  • In a small bowl, combine the olive oil and minced garlic. Let it sit for at least 15 minutes.
  • Place the olives, giardiniera, shallot and oregano in your food processor. Pulse a few times until coarsely chopped.
  • Transfer the olive mixture to a bowl. Add half of the garlic oil and vinegar. Stir until throughly mixed.
  • Taste and season with salt and pepper as needed. For best results, cover with plastic and refrigerate overnight (or up to a week).
  • Split the bread in half and brush each cut side with the remaining garlic oil.
  • Heat a medium-sized skillet over medium heat, and toast the bread directly in the pan until crisp and golden brown, about 1-2 minutes per side.
  • Place the bottom part of the bread, cut side up, on a cutting board. Spread half of the olive salad, making sure to include the juices.
  • Layer all the Genoa salami, followed by all the ham. Then, layer the provolone cheese, mozzarella cheese, mortadella, prosciutto and soppressata. Finish with the remaining olive salad.
  • Close the sandwich and wrap it tightly - two or three times - with plastic wrap.
  • Place the muffuletta top side up on a cutting board and put something heavy (like a big book or a heavy pot) on top of it, to compress it. Let it rest for 1 hour. After 1 hour, turn the sandwich upside down and continue compressing for another hour.
  • Cut the sandwich into wedges and serve.
